PEANUT BUTTER BANANA BREAD

Steps:
- Heat oven to 350°F (325°F for dark or non-stick pans). Grease bottoms only of 2 (8x4-inch) loaf pans with shortening.
- In small microwavable bowl, microwave peanut butter and butter uncovered on High 30 to 45 seconds or until butter is melted. Stir until mixture is smooth.
- In large bowl, beat sugar and eggs with electric mixer on medium speed 1 minute or until blended. On low speed, add peanut butter mixture; beat well. In another bowl, mix flour, baking soda and salt. Add flour mixture alternately with sour cream to peanut butter mixture, beating on low speed until blended. Stir in bananas, chocolate chips and vanilla until blended. Divide batter between pans.
- Bake 1 hour 10 minutes to 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 2 hours.

- Preheat oven to 350. Grease bottom only of loaf pan, 9x5x3 inches.
- In large mixing bowl, combine all ingredients except Bisquick and nuts; stir until blended. Stir in Bisquick and nuts. Pour into prepared loaf pan.
- Bake banana bread for 50-60 minutes, or until toothpick in center comes out clean.
- Cool 10 minutes Loosen sides of loaf from pan and remove to wire rack to cool completely.

- Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
- Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.
BANANA NUT BREAD RECIPE

- Preheat oven to 350°F. Spray one large nonstick loaf pan with cooking spray or grease with butter and set aside. (I used this 9.25 x 5.25 -inch pan from Wilton.)
- In a medium mixing bowl, add the flour, baking soda, cinnamon and salt. Whisk together until combined.
- In a large mixing bowl, add the mashed bananas, sugar, butter, eggs, and vanilla extract. Whisk together until combined.
- Add the flour mixture into the banana mixture and stir with a mixing spoon until combined. Add the chopped walnuts and fold them into the batter.
- Pour the batter into the prepared loaf pan. For an added crunch, top with more chopped walnuts and turbinado sugar.
- Bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Remove from oven and let the banana bread cool for 10 minutes. Then remove the banana bread from the loaf pan and let cool on a plate or wire rack until completely cooled. Top with sweetened condensed milk glaze if desired.
- In a small mixing bowl, add confectioners' sugar and sweetened condensed milk. Whisk together until there are no more lumps and it's completely smooth. Pour on banana nut bread and enjoy!

- MASH bananas thoroughly. Measure exactly 3 cups prepared fruit into 6- or 8-quart saucepot.
- Add lemon juice and fruit protector; stir until well blended.
- STIR in pectin.
- Add butter to reduce foaming, if desired.
- Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
- ADD sugars; stir until well blended. Add walnuts and spices; mix well. Return to full rolling boil and boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Skim off any foam with metal spoon.
- LADLE immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly.
- Process 10 minutes in a hot water bath or use the inversion method. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).

- Preheat your oven at 400 degrees Fahrenheit.
- In a large bowl, combine all ingredients.
- Spray muffin tin with cooking spray. Fill each tin 2/3 full. Top with a cinnamon-sugar mixture before baking, if desired.
- Bake for 15 to 20 minutes at 400 degrees Fahrenheit. Do the toothpick test to check for doneness. If the toothpick comes out clean, take it out of the oven. If not, give it a few more minutes to bake.
