BARCELONA POTATOES

Steps:
- Spicy Dipping Sauce:
- In a small bowl mix together all of the ingredients until well combined. Set aside.
- Peel and cut the potatoes into 1/2-inch cubes. Add the potatoes and salt to a large pot of cold water over medium heat. Bring to a boil, then add the potatoes and cook for 5 minutes. Remove from the heat and drain in a colander. Let sit out on the counter for 20 minutes to allow to thoroughly dry.
- Heat the oil in a high sided skillet over medium-high heat to about 350 degrees F. Fry the potatoes until golden brown on all sides. (Reserve 1 cup potatoes for Round 2 Spanish Tortilla recipe.) Transfer the potatoes to a serving bowl and serve with the spicy dipping sauce.
BARBARA'S CHEESE POTATOES
Steps:
- In a large casserole dish combine everything except for the corn flakes and 1/2 stick butter.
- Bake at 350°F for 45 minutes.
- Combine crushed corn flakes and 1/2 stick (1/4 cup) melted butter. Sprinkle on top and bake 10 more minutes.

BARBARA'S ROSEMARY RED POTATOES
The simplest, most elegant side dish ever. This the best way to impress company without any extra effort. My family and guest loves these potatoes when I fix them. You can substitute 1 teaspoon dried rosemary for the fresh. ENJOY

Steps:
- Preheat oven to 375°F.
- In a small sauce pan or in microwave, melt butter.
- Stir oil into the butter,before pouring mixture into GLASS baking dish.
- Place the potatoes into the GLASS baking dish, and stir until coated.
- Sprinkle with rosemary, salt and pepper.
- Cover the baking dish with aluminum foil.
- Bake for 30 minutes or until potatoes are tender.
- Stir occasionally to ensure even cooking.

Baked cheese dish makes a great appetizer for "get togethers" or parties. Especially nice for Christmas and New Years!

- Preheat oven to 350 degrees.
- Mix cheddar and monterrey jack cheese.
- Stir in eggs and mix well.
- Stir in jalapenos.
- Bake for 30-35 minutes, or until lightly browned.
- Cool and cut in squares.

BARBARA'S POTATO DUMPLINGS

Steps:
- For croutons, melt butter in a small skillet brown bread cubes. Set aside. In a saucepan, boil potatoes in water to cover until tender. Cool rice potatoes and place in a large bowl. Add flour, baking powder, salt and nutmeg. Stir in eggs beat until mixture holds its shape. With lightly floured hands, shape about 2 tablespoons dough into a ball, placing a few croutons in center of each ball. Repeat with remaining dough and croutons. Refrigerate for 1 hour. Drop dumplings into boiling salted water (2 teaspoons salt to 1 quart water). Simmer, uncovered, for 10 minutes. Drain. BARBARA'S SCALLOPED POTATOES AND HAM
I got this recipe out of the "Fix it and Forget it" cookbook. I never would have thought to use cheddar cheese soup but trust me, it works! This is such an easy way to use up leftover ham. This recipe is easily halved if needed.

BARBARA'S PANKO CRUSTED CHICKEN WITH POTATOES CHEESE AND ONIONS
I made this on a whim. I hope you enjoy it as much as we did. Make sure the potatoes and onions are sliced thin or they may not be cooked to your liking. Enjoy :) Prep time does not include refrigeration time.

Steps:
- Rinse chicken breasts and set aside.
- Combine sour cream and onion mix as indicated on package.
- Combine 1 cup sour cream/onion mixture with 1 cup milk; stir until mixed well.
- Pour mixture in a large zipper top baggie; add chicken.
- Refrigerate overnight or at least 4 hours.
- Take chicken out of refrigerator at least 1/2 hour before preparing recipe.
- Preheat oven to 350 degrees Fahrenheit.
- Slice potatoes and onion.
- Place potatoes and onion in a medium sized bowl; toss with olive oil, salt, pepper, and shredded cheese.
- Place the potato mixture in a large baking dish.
- Put the Panko bread crumbs in a shallow bowl.
- Take the chicken out of the sour cream mixture, wiping off the excess as you go.
- Press into Panko bread crumbs until fully coated on both sides.
- Place on top of the potato/onion mixture.
- Bake for 1 hour at 350 degrees Fahrenheit.

This recipe is from my mother-in-law Barbara. It is a staple at all our family holiday get-togethers. I prefer the cubed hash browns, but either way it is really great.

- Thaw hash browns for at least one hour.
- Heat half& half, butter and cheeses over low heat until melted.
- Pour over potatoes and mix lightly.
- Pour into greased oblong baking dish, let stand 1 hour.
- Bake at 350 degrees 1 hour or until browned and bubbly.
