BARBECUE BEEF CUPS
This is a quick and easy recipe given to me by a friend. My family loves it.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
- In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
- Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
- Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

- Preheat oven to 325 degrees F (160 degrees).
- Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan.
- Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound.
- Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.

SMOKED BBQ BRISKET

- Mix together the spices in a small bowl. Rub the entire brisket with the spice mixture, place on a baking sheet, cover and let stand in the refrigerator for at least 1 hour or up to 6 hours.
- Prepare the smoker according to manufacturer's directions. Place the brisket in the smoker, fat side down, and smoke for 4 to 5 hours or until extremely tender. Baste with the mop every 30 minutes.
- Place all ingredients in a medium saucepan, season with salt and pepper and cook over medium heat for 15 minutes. Remove from the heat and let cool slightly.
OVEN BARBECUED BEEF BRISKET

- Preheat oven to 300 degrees.
- Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.

BARBEQUE BEEF IN BISCUIT BASKETS
This is a real kid pleaser! What kids don't like barbeque? The biscuit baskets make these fun and the filling absolutely melts in your mouth.

- Heat the olive oil in a large pot. Brown the beef and onions together in the oil. Add the barbeque sauce, basil, salt and pepper. Turn down to a simmer and let cook for 1 hour (can cook for longer if necessary, just keep on low heat). Preheat oven to 350 degrees. Open biscuits can and place individual biscuits on a large microwave safe plate. Heat biscuits for 40 seconds on 50% power. This makes them soft for easy shaping. Spray large muffin tin (bakery sized muffins) or custard cups with non-stick cooking spray. With your hands flatten out each biscuit and press into each muffin cup or custard cup (if you use large muffin tin you will need 2 custard cups as the canned biscuits come in groups of 8). Cook the biscuit baskets in oven for 15 minutes. When you remove from the oven use the back of an ice cream scoop to press the biscuit basket into the tin to flatten out as much as possible. Divide up the barbeque beef between all the biscuit baskets. Sprinkle a little cheese on top of each. Cook in 350 degree oven for 10-15 minutes until cheese is melted.

- In a small saucepan, combine the first nine ingredients; cook and stir over medium heat 3-4 minutes or until brown sugar is dissolved. - Fry bacon until browned and crispy, render out as much fat as possible. Remove the crispy bacon and set aside for later use. Keep the bacon fat which will be used to make the gravy.
- Make the bacon gravy in the same pan that you fried the bacon. Add flour to the pan and stir until flour forms thick paste. Cook for about a minute without burning the flour.
- Slowly stir in the chicken stock. Keep stirring until you have a smooth consistency. Simmer until the sauce thickens. Keep warm and set aside.
- Flatten biscuit dough and cut into strips. Deep fry (oil at 350°F (175°C)) until brown and crispy. Drain on paper towels, and place on baking sheet. Repeat with remaining biscuit dough.
- Layer the fried biscuit dough on the baking sheet. Sprinkle the cooked breakfast sausage, fried bacon, shredded cheddar and top with eggs. Pepper to taste.
- Broil for 5 - 10 minutes or until the shredded cheddar has melted.
- Remove from oven, sprinkle on the chopped chives and drizzle on the bacon gravy.
- Enjoy!
