I've never found a recipe I really liked for a savory, au jus-style pot roast without mushy veggies and a weird sweetness. So after some experimenting, this is the way I make it every time now. The tomato sauce disappears and will not make a tomato-flavored gravy. Quick and easy. The roast size and cut can vary, and it will still turn out great. Good for those who don't like onions, although they can be added if you like. I love to make homemade mashed potatoes and dill carrot slices for sides. Cook roast on top of sliced onion rings if desired.

1 (4 pound) boneless beef chuck roast
1 tablespoon Worcestershire sauce, or to taste
1 tablespoon Montreal-style steak seasoning
2 tablespoons olive oil
1 cube beef bouillon
1 cup hot strong black coffee
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano, or to taste
2 teaspoons Worcestershire sauce, or to taste

Steps:

  • Rub chuck roast with 1 tablespoon Worcestershire sauce and sprinkle on all sides with steak seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Sear the roast in the hot oil until browned, about 5 minutes per side. Transfer roast to a slow cooker.
  • Dissolve beef bouillon cube in the coffee and pour the mixture over the roast. Pour tomato sauce over meat and season with oregano; drizzle meat with 2 teaspoons Worcestershire sauce.
  • Set cooker to Low and cook until meat is tender, 8 to 10 hours.

This recipe is the best oven baked chuck roast recipe and is an updated version of a classic recipe for roasting beef chuck. For an easy recipe that you can cook once and turn into two or more different meals, this easy boneless chuck roast recipe is worthy of your attention.

2 cups low-sodium beef broth (divided)
3 pounds beef chuck roast
2 teaspoons dried celery flakes
Kosher salt and freshly ground black pepper
2 medium onions (each cut into 8 wedges)
2 tablespoons vegetable oil (approximately)
1/4 cup cold water
3 tablespoons corn starch
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 300°F.
  • Add 1 cup of the beef broth, the chuck roast and the celery flakes into the Dutch oven. Season the the roast with kosher salt and pepper. Arrange onion wedges on top of and around the roast.
  • Cover the Dutch oven and bake, turning once halfway through cooking, for 2-1/2 to 3 hours or your roast is fork-tender. Add more broth, if needed, during cooking.
  • In a large heavy bottom skillet over medium high heat, add the oil and heat until shimmering. Transfer the chuck roast to the skillet and sear, turning once, about 4 minute per side or until the roast is nicely browned, adding more oil as necessary. Transfer the roast to a cutting board.
  • Carve the roast into thick slices or chunks and transfer to a serving platter. Using a slotted spoon, remove the onions and arrange around the roast, if desired.
  • Skim fat from the juices in the Dutch oven. Add remaining beef broth and heat over medium heat until warm. Ladle mixture into a gravy boat and serve. Or, use the mixture to make the beef gravy below.

3 tablespoon(s) oil
2 pound(s) round or chuck steak or chuck roast
1 large onion, chopped
- salt and pepper to taste
1 - bay leaf
- vegetables as desired (carrots, onions, potatoes, bell pepper, beans,celery, etc.)

Steps:

  • Heat electric skillet to 350 degrees and brown steak in oil. Add onion to skillet. Sprinkle with salt and pepper. Reduce heat to 250 degrees. Add water to skillet so that bottom of skillet is covered about 1 inch deep. Add bay leaf, cover and simmer for 2 1/2 hours.
  • Add any vegetables you wish. Chunks of carrot, potatoes, celery, onion wedges, etc. Add additional water if needed. Cover and cook for 30-45 minutes until vegetables are tender. Serve with gravy made from skillet drippings.

1/4 cup cider vinegar

1/2 teaspoon beef bouillon granules
1/4 teaspoon garlic powder
1 boneless beef chuck roast (4 pounds), cut in half
1/4 cup cornstarch
6 tablespoons cold water
Dash salt and pepper

Steps:

  • Mix first 10 ingredients. Place roast in a 5-qt. slow cooker; top with sauce mixture. Cook, covered, on low until meat is tender, 5-6 hours., Remove roast from slow cooker; keep warm. Transfer cooking juices to a saucepan; skim fat. Mix cornstarch and cold water until smooth; stir into juices. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in salt and pepper. Serve with roast.
