Blade Chuck Roast
vegetable oil
smoked beef sausage
Cajun seasoning
onion
green bell pepper
celery
garlic
crushed tomatoes
beef broth
Worcestershire sauce
salt
chile powder
pepper
crushed red pepper
bay leaf
hot pepper sauce
white rice
green onions

Steps:

  • Heat 1 tablespoon oil in large stock pot or Dutch oven over medium high heat. Season beef Blade Chuck Roast pieces and beef sausage with Cajun seasoning. Brown beef pieces; set aside. Brown beef sausage; set aside.
  • Add remaining 1 tablespoon oil to same stock pot or Dutch oven. Add onion, bell pepper, celery and garlic; cook 7 to 10 minutes until vegetables are tender, stirring occasionally. Stir in tomatoes, broth, Worcestershire, salt, file powder, red pepper, black pepper and bay leaf. Add beef and sausage; bring to a boil. Reduce to a simmer; cover and cook 20 to 25 minutes, stirring occasionally. Discard bay leaf.
  • Stir in rice; bring to a boil. Reduce heat; simmer for 3 to 5 minutes or until liquid is absorbed and rice is heated through. Stir in hot sauce. Garnish with green onions and parsley, as desired.

6 ounces diced Andouille sausage
1 cup chopped onion
1 cup diced celery
1 bell pepper ((seeded, stemmed and chopped))
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
2 teaspoons Cajun seasoning
1-1/2 cups raw long grain rice
14.5 ounces canned diced tomatoes
2 teaspoons Louisiana hot sauce
2 teaspoons Worcestershire sauce
1 cup beef broth
1 cup chicken broth

Steps:

  • Preheat oven to 350F.
  • Brown beef with diced sausage, onion, celery, bell pepper, thyme, oregano, and Cajun seasoning. Drain excess grease.
  • Stir in the rice, canned tomatoes with their juice, hot sauce, Worcestershire sauce, and broths.
  • Cover with foil and bake for about 40-45 minutes or until rice is cooked.

3 cups raw rice
3 (10 1/4 ounce) cans franco american beef gravy
1 lb andouille sausages or 1 lb kielbasa
2 lbs ground beef
3/4 lb mild pork sausage (Jimmy Dean)
1 (11 ounce) can canned mushroom slices
1 (4 ounce) can canned mushroom slices
3 cans water
3 cups of chopped onions
3/4 cup shallot
3 teaspoons salt
3/4 teaspoon cayenne
3/4 teaspoon black pepper
parsley

Steps:

  • Brown ground meat and sausages.
  • Drain and lightly rinse.
  • Add vegetables and seasonings to pan and cook 10 minutes with meats.
  • Add gravy, water, and mushrooms.
  • Bring to a boil.
  • Simmer for 15 minutes.
  • Add rice, bring to boil for a few minutes.
  • Put in pan and cover with foil.
  • Bake in 350 for 45 minutes.

2 large green bell peppers (chopped)
3 tablespoons vegetable oil
1 cup onion (chopped)
1 clove garlic (minced)
1 lb ground beef (sirlion)
1 (16 ounce) can stewed tomatoes
1 (8 ounce) can tomato sauce
1/2 teaspoon chili powder
1/4 teaspoon paprika
1/2 teaspoon Worcestershire sauce
salt & pepper
4 drops Tabasco sauce
1 lb shrimp (peeled and cleaned)
2 cups cooked white rice

Steps:

  • Heat oil in skillet,saute onions,green bell peppers, and garlic until soft.
  • Add ground beef and cook to brown.
  • Drain off fat.
  • Add all remaining ingredients, except shrimp and rice.
  • Cover, heat to boiling, simmer on low heat for 25 min.
  • Add shrimp and white rice.
  • Stir until shrimp is pink.

  • To Freeze: Prepare recipe as directed. Line bottom and sides of a 13- x 9-inch baking dish with heavy-duty aluminum foil, allowing 2 to 3 inches to extend over sides; fill with jambalaya. Cover and freeze. To serve, remove foil, return casserole to original baking dish; cover and thaw in refrigerator 24 hours. Let stand at room temperature 30 minutes. Bake at 350° until thoroughly heated.
