Best Ever Sausage with Peppers, Onions, and Beer! image

This is an excellent recipe I came up with one day. Serve with some nice Italian bread, and a bottle of your favorite beer.

Provided by Robert M. Catalano

Categories     100+ Everyday Cooking Recipes

Time 1h

Yield 6

Number Of Ingredients 12

3 tablespoons olive oil
3 pounds Italian sausage links
3 red bell peppers, sliced
2 green bell peppers, sliced
2 large red onions, sliced
3 cloves garlic, chopped
2 (12 fluid ounce) bottles beer
1 (6 ounce) can tomato paste
3 tablespoons chopped fresh oregano
3 tablespoons chopped fresh cilantro
2 tablespoons hot sauce
salt and pepper to taste

Steps:

  • Heat olive oil in a large heavy skillet over medium high heat. Cook sausage until browned on all sides. Remove sausage from pan, and set aside. Pour in 1 bottle of beer to deglaze the pan, scraping up any blackened bits from the bottom. Place the red peppers, green peppers, onions and garlic in the pan. Stir in the remaining beer and the tomato paste. Season with oregano, cilantro, hot sauce, salt and pepper. Cover, and simmer until onions and peppers are tender. Slice the sausages into bite size pieces, and add to the peppers. Cover, and simmer until sausage is cooked through.

BEER BRATS

Beer Brats image

Fans of Midwestern-style beer brats have strong opinions about the best way to prepare them. Some like to simmer the bratwurst in beer before browning them on the grill (as is the case here); some prefer grilling first, soaking in beer after. But everyone agrees that the brats should start out fresh and uncooked (rather than precooked, like hot dogs), then be served on a split, toasted roll with onions and plenty of mustard. Purists may shun adding the likes of ketchup, pickles and sauerkraut to the sandwich, but when you're the cook, you get to choose which condiments to put out - or set aside.

Provided by Melissa Clark

Categories     sausages, main course

Time 20m

Yield 6 servings

Number Of Ingredients 6

24 ounces lager or pilsner beer (2 cans or bottles)
2 medium onions, halved and sliced 1/4-inch thick
6 uncooked bratwurst sausages
6 bratwurst rolls or hoagie rolls, split
Spicy brown or yellow mustard, for serving
Pickles and ketchup, for serving (optional)

Steps:

  • Light a charcoal grill or heat a gas grill to high.
  • In a medium pot over high heat, bring beer and half the onions to a simmer (save remaining onions for serving). Add bratwurst to the pot, reduce heat to low, and simmer until they are just cooked through, about 10 minutes.
  • Transfer sausages to the grill, and grill until they're well browned on all sides, 2 to 5 minutes, turning often.
  • If you like, while the brats are grilling, let the beer and onions boil over high heat until the onions are very soft, 5 to 10 minutes. Drain and reserve onions for serving.
  • Grill the rolls, cut-side down, until golden, about 1 minute. Serve the brats sandwiched in the rolls and topped with onions (either raw or beer-braised, or both), along with any condiments you like.

BEER-BRAISED BRATWURSTS WITH ONION

Beer-Braised Bratwursts With Onion image

I found this recipe at http://www.chow.com/recipes/14145-beer-braised-bratwursts-with-onion I made these for a small summer cookout last year and they were a big hit, especially among beer lovers.

Provided by Queen Dana

Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 9

2 teaspoons mustard seeds (black or brown)
1 teaspoon caraway seed
1 tablespoon unsalted butter
12 bratwursts
2 medium white onions, sliced into 1/4-inch-thick rings
1 1/2 cups brown ale, such as Newcastle
12 hoagie rolls
1 cup sweet-hot mustard
2 tablespoons sweet-hot mustard

Steps:

  • Place mustard seeds and caraway seeds in a small resealable plastic bag and crush with a meat mallet or rolling pin.
  • Melt butter in a Dutch oven or a large, heavy-bottomed pot with a tightfitting lid over medium heat. When the foaming subsides, add 6 of the bratwursts and cook, turning, until browned on all sides, about 10 minutes. Remove to a plate and repeat with remaining bratwursts.
  • Reduce heat to low, add crushed seed mixture and onions, and season generously with salt and freshly ground black pepper. Cook, stirring occasionally, until onions have softened and are beginning to brown, about 30 minutes. Add reserved bratwursts and any accumulated juices, nestling the brats in the onions. Pour in beer and braise bratwursts, turning once, until they are completely cooked through, about 30 minutes. Season with salt and pepper to taste.
  • Toast hoagie rolls and spread about 1 1/2 tablespoons mustard on each. Place a bratwurst in each bun and cover with onions.

  • Prepare the grill for direct cooking over medium heat (350° to 450°F). If you're using a charcoal grill, keep a small part of the charcoal grate clear of briquettes as a safety zone of indirect heat.
  • In a large disposable foil pan arrange the onions in an even layer. Add the bratwurst and pour the beer mixture over the top. Place the pan over direct medium heat, close the lid, and bring the mixture to a simmer. Cook until the bratwurst are evenly colored and no longer look raw, about 20 minutes. If the liquid starts to boil, temporarily move the pan over indirect heat to prevent the bratwurst from splitting open. Add the sauerkraut and jalapeños to the pan, and simmer for 2 to 3 minutes more.
  • Brush the cooking grates clean. Transfer the bratwurst from the pan to the cooking grates and grill over direct medium heat, with the lid closed, until browned and fully cooked (160°F), 2 to 3 minutes, turning once.
