Beer Cornbread Waffles Recipe image

A savory waffle with a hint of spiciness perfect for serving with chili, stew and BBQ.

Number Of Ingredients 10

1 1/2 cups all-purpose flour
1 1/2 cups yellow cornmeal
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon ground red pepper
1 cup milk or buttermilk
3 tablespoons vegetable oil
2 large eggs
1 cup beer*

Steps:

  • In a large bowl, whisk together flour, cornmeal, baking powder, sugar, salt and red pepper.
  • Separately whisk together milk, oil, and eggs until smooth. Stir mixture into dry ingredients to combine. Gradually stir in beer until just incorporated. Let batter sit for at least 5 minutes. The batter may be a bit lumpy, but that's okay.
  • Preheat waffle iron according to manufacturer's instructions. Working in batches, pour manufacturer's recommended amount of batter onto hot waffle iron and cook until done. Adjust cook time and/or temperature for desired doneness.
  • Serve topped with chili, beef stew, fried chicken or BBQ.

Here is a family favorite recipe that while it sounds strange is very tasty and has won over everyone who has tried it. It was born out of wartime in the Philippines we believe. Typically served for breakfast with butter or margarine. Not a sweet waffle. Best in a standard waffle iron (not Belgian).

1 ¼ cups milk
2 teaspoons cooking oil
1 ½ cups all-purpose flour
1 pinch salt
2 teaspoons baking powder
½ (12 ounce) can corned beef, broken into pieces

Steps:

  • Preheat waffle iron.
  • In a medium bowl, mix together the eggs, milk and oil. Combine the flour, salt and baking powder; stir into the milk mixture until it makes a smooth batter. Stir in corned beef.
  • Spoon batter onto your waffle iron, close the lid, and cook until the waffle iron stops steaming and waffles are golden. Serve hot with butter.

1 1/2 cups cornmeal
1 cup all-purpose flour

1/4 cup sugar (or 2 tbsp for savory waffles)
1/4 cup canola oil

Steps:

  • Preheat waffle iron.
  • Measure milk in large measuring cup, add vinegar and set aside to curdle.
  • In a large mixing bowl, mix cornmeal, flour, baking powder, salt and sugar.
  • Make well in center and add milk mixture and oil.
  • Mix until smooth.
  • Cook waffles according to waffle iron directions!

Cheese. Beer. Cornbread. Need I say more? (Oh - I guess I'll add two more words: "Unbelievably easy.")

1/2 cup 1 stick unsalted butter
2 cups all-purpose flour
1 cup cornmeal
3 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon smoked paprika
1 cup plus 1/2 cup shredded sharp cheddar cheese (divided)
One 12-ounce bottle good-quality beer (I use Blue Moon wheat beer for this recipe, and it's perfect)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Place the stick of butter in an 8-inch by 8-inch baking dish and place it in the preheating oven just until the butter melts.
  • Carefully remove the baking dish from the oven and remove six tablespoons of the melted butter. Set aside.
  • Swirl the pan to distribute the remaining two tablespoons of butter.
  • In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, dry mustard, and smoked paprika. Sprinkle in 1 cup of the cheddar cheese and whisk until blended.
  • Pour the beer over the flour mixture and stir until just blended. The dough will be wet, loose, and sticky.
  • Sprinkle the remaining 1/2 cup cheese over the top.
  • Pour the dough into the buttered 8-inch by 8-inch baking dish and spread evenly.
  • Pour the six tablespoons of melted butter over the top.
  • Bake for about 25 minutes until the middle is set and the top begins to turn golden brown.

sour cream, for serving
green onion, chopped, for serving

Steps:

  • Grease a waffle iron with melted butter or nonstick spray. Set the heat to medium.
  • In a large bowl, whisk together the melted butter, milk, vinegar, sugar, and egg. Add the flour, cornmeal, baking soda, baking powder, garlic powder, paprika, salt, and pepper and whisk to incorporate. Fold in the cheddar cheese with a rubber spatula.
  • Pour 1 scant cup (260 G) of batter onto the waffle iron and cook until golden brown, about 5 minutes. Repeat with the remaining batter.
