BERRY KOMBUCHA "FAUXITO" MOCKTAIL



Berry Kombucha

With sweet-tart berries, notes of floral hibiscus and Mojito influences of mint and lime, this bubbly kombucha-based mocktail is a refreshing summer sipper. It uses unrefined Demerara sugar rather than white for its richness and molasses-like finish, sure to quench your thirst as the weather warms up.

fresh blackberries and raspberries, plus additional for garnish
10 fresh mint leaves
2 teaspoons packed demerara sugar
2 tablespoons fresh lime juice
1/4 cup coconut water, not from concentrate
1/2 cup pc organics raspberry hibiscus kombucha
1 cup ice cube
1 sprig of fresh mint, for garnish

Steps:

  • Place blackberries and raspberries in highball glass. Add five mint leaves and sugar; muddle with muddler or handle of wooden spoon until mint is bruised and fragrant and berries are mashed.
  • Pour in lime juice, coconut water and kombucha. Stir in ice cubes and remaining five mint leaves.
  • Garnish with additional berries and mint sprig.

1 sprig fresh mint
3 slices lime
1 tablespoon agave nectar, or honey
ice
6 oz soda, or seltzer water

Steps:

  • Add mint leaves and lime to a tall glass.
  • Using a muddler or a spoon, mash the lime and mint well.
  • Add sweetener, ice, and soda water. Stir to combine.
  • Garnish with lime and mint. Enjoy!
