These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

2 ¼ cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
¼ cup molasses
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  • In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

This is my late grandmother's recipe for soft ginger cookies - circa early 1900s (she was born in 1895). My dad's favorite cookie recipe ever and a Christmas staple!

Number Of Ingredients 10

1 cup sugar
1 cup shortening
1/4 teaspoon salt
1 cup molasses
1 cup sour milk (or add 1 tsp Baking Soda to reg milk)
3 eggs, beaten
4 cups sifted flour
1 teaspoon baking soda
1 teaspoon ginger
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees.
  • Cream sugar and shortening.
  • Add salt and molasses and mix well.
  • Add sour milk and 3 beaten eggs.
  • Add dry ingredients.
  • Mix well and drop on greased cookie sheet (i just use parchment paper on a regular cookie sheet.
  • Bake at 400 degrees for approx 7-10 minutes.
  • Please note the dough is not as firm as most cookie doughs are and you may question whether or not you added enough flour, but they turn out just fine. My husband likes to sprinkle sugar on top of the dough before baking but that is completely optional.

  • Preheat oven to 350 degrees F (175 degrees C). Sift together all-purpose flour and whole-wheat flour, ginger, baking soda, cinnamon, cloves, and salt.
  • Beat butter and 3/4 cup sugar with an electric mixer in a large bowl until smooth. Beat in egg, then stir in water and molasses. Gradually stir in flour mixture until just incorporated. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets; flatten slightly.
  • Bake in preheated oven until cookies are golden brown, 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

  • Preheat oven to 350.

2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon ground ginger

1 cup packed brown sugar
¾ cup unsalted butter
½ cup molasses
1 large egg
6 (1 inch) pieces candied ginger, minced
¼ cup white sugar, or as needed

Steps:

  • Whisk flour, baking powder, cinnamon, ginger, cloves, and salt together in a bowl.
  • Beat brown sugar and butter in a separate bowl with an electric mixer until creamy. Mix in molasses, egg, and candied ginger. Gradually mix in dry ingredients until combined. Chill dough in the refrigerator for 1 hour.
