Steps:
- Rinse pollock, pat dry, sprinkle with lemon juice and rub with salt and pepper to taste. Cut bell pepper in half, remove seeds, rinse and cut into strips. Heat butter in a pan and sauté the bell pepper strips.
- Peel garlic and squeeze through a press into the pan. Pour in wine, season with salt and pepper and simmer over medium heat for 10 minutes. Blanch tomatoes in boiling water, rinse with cold water, peel and cut into slices.
- Grease a baking dish and layer in the tomato slices, overlapping slightly. Rinse dill, set aside a few stems and finely chop the rest. Mix chopped dill with sour cream and horseradish and season with salt and pepper.
- Distribute bell pepper strips on the tomato slices. Arrange pollock over the vegetables and top with sour cream mixture. Place in the oven and cook for 20 minutes at 200°C (approximately 400°F). Garnish with reserved dill before serving.

BAKED PANKO-CRUSTED FISH FILLETS

- Gather the ingredients. Heat the oven to 425 F.
- Line a rimmed baking sheet with aluminum foil or parchment paper and then spray it with nonstick cooking spray.
- Cut the fish fillets into 6-ounce portions.
- Sprinkle both sides of the fish pieces with salt and freshly ground black pepper.
- In a wide bowl, combine the panko breadcrumbs and parsley.
- Put the flour in another wide, shallow bowl.
- In a third bowl, whisk the eggs or egg substitute with the Cajun seasoning and mayonnaise.

- Preheat the oven to 190ºC/gas 5.
- Parboil the potatoes for 5 minutes in salted boiling water, drain and steam dry.
- Season the fish with sea salt and black pepper, then wrap in ham.
- Place in a baking dish with the tomatoes and potatoes. Season again and drizzle with oil.

BREADED POLLOCK FILLETS FOR 2
This is a nice baked fish. I enjoy making this with garlic mashed potatoes :-) (prep time does not include time to thaw frozen fillets)

Steps:
- If your fillets are frozen, thaw in advance.
- When your fillets are ready to prepare, preheat your oven to 350F degrees and lightly grease a shallow pan.
- Melt your butter, and set aside.
- Take a large plate (NOT PAPER) and pour breadcrumbs on to plate.
- Add spices to breadcrumbs and mix through with your fingers.
- Add butter to breadcrumbs and mix through with fingers again.
- Melt the other 1/2 teaspoon butter.
- Take melted butter (allow to cool a little so you do not burn your fingers!!!) and lightly spread over the fillet and then roll fillet in breadcrumbs.
- Pat breadcrumbs into both sides of the fillet over and over again until nicely coated.
- Put fillets on pan and bake for 20 minutes, or until fish flakes nicely.
- Enjoy alone or with your favorite sauces!
