Here's what you need: sourdough bread, butter, garlic, cream cheese, shredded cheddar cheese, mozzarella cheese, milk, salt, pepper, egg yolks

1 loaf sourdough bread
⅓ cup butter, melted
3 teaspoons garlic, crushed, divided
180 g cream cheese
½ cup shredded cheddar cheese
½ cup mozzarella cheese
½ cup milk
¼ teaspoon salt
¼ teaspoon pepper
2 egg yolks, beaten

Steps:

  • Preheat the oven to 350°F (180°C).
  • Cut off the top of the bread. Use a bread knife to cut around the inside of the bread and scoop the center out.
  • Cut the center and top of the bread into bite-sized cubes.
  • Mix two teaspoons of crushed garlic into the melted butter. Brush the garlic butter on the bottom and the inside walls of the bread boat.
  • Dip all the bread cubes in the remaining garlic butter, set aside.
  • Combine the cream cheese, cheddar, mozzarella, milk, remaining teaspoon of crushed garlic, salt, and pepper in a medium bowl.
  • Pour the cheese mixture into the bread boat.
  • Brush the top of the cheese mixture with egg yolk.
  • Place the bread boat and the bread cubes on a baking sheet.
  • Bake for 15 minutes, remove the croutons, and continue baking the bread boat for another 15 minutes, or until the cheese is melted and a golden brown crust is formed.

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Steps:

  • In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
  • Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
  • Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

3 ½ teaspoons white sugar
2 teaspoons salt
1 tablespoon active dry yeast
4 cups all-purpose flour
½ cup margarine
1 cup milk
1 egg
1 egg yolk
2 pounds Muenster cheese, shredded
1 egg white, beaten
2 tablespoons whole blanched almonds

Steps:

  • Heat milk and butter or margarine over low heat until very warm.
  • Combine sugar, salt, yeast, and 1 cup of flour in a large bowl. Stir in hot milk mixture, and beat with mixer on medium speed for 2 minutes. Beat in 1 more cup of flour, and continue beating for 2 more minutes. With a wooden spoon, stir in enough flour (about 2 cups) to make a soft dough.
  • Knead the dough on a lightly floured surface for about 10 minutes, adding more flour as necessary. Cover dough with bowl, and let rest for 15 minutes.
  • Meanwhile, shred muenster cheese. Combine with 1 egg and 1 egg yolk.
  • On a lightly floured surface and with a floured rolling pin, roll dough into a 24 x 6 inch rectangle. Spoon the cheese mixture into a log shape lengthwise along the dough. Fold the dough over the cheese making a 1 inch overlap, and pinch seam to seal. In a greased 9 inch round cake pan, place roll, seam side down, to make a ring. Overlap the ends, and pinch to seal. Cover with a towel. Let rest 10 minutes.
  • Brush loaf with egg white, and garnish with blanched almonds, if desired. Bake at 350 degrees F (175 degrees C) for 1 hour, until loaf sounds hollow when tapped. Remove bread from pan immediately. Cool for 15 minutes before slicing into wedges.

8 ounces process cheese (Velveeta), cubed
2 cups sour cream
1 package (8 ounces) cream cheese, softened

1/2 cup chopped green onions
1 can (4 ounces) chopped green chilies
1 teaspoon Worcestershire sauce
2 tablespoons vegetable oil
1 tablespoon butter, melted
Assorted fresh vegetables

Steps:

  • Cut the top fourth off the loaf of bread; set top aside. Carefully hollow out bottom, leaving a 1/2-in. shell. Cube removed bread; set aside., In a large bowl, combine the process cheese, sour cream and cream cheese. Stir in the ham, green onions, chilies and Worcestershire sauce. Spoon into bread shell; replace top. Wrap tightly in heavy-duty foil and place on a baking sheet. 2 cups shredded sharp cheddar cheese

Coarse salt and freshly ground pepper
1 tablespoon safflower oil
8 ounces young Gouda, rind trimmed, coarsely grated

2 tablespoons cornstarch
1 clove garlic, halved
1 1/2 cups dry white wine, such as Sauvignon Blanc
1 tablespoon brandy
Freshly grated nutmeg
1 apple, cored and sliced
1 small bulb fennel, cored and cut into wedges
1/2 cup cornichons
1/2 loaf rustic bread, cut into 1-inch cubes

Steps:

  • Season beef with salt and pepper. Heat a heavy skillet over medium-high heat. Swirl in oil. In batches, add beef in a single layer. Cook, turning occasionally, until browned on all sides, about 3 minutes for medium-rare. Transfer to a plate; tent with parchment-lined foil.
  • Toss cheeses with cornstarch in a bowl until coated. Rub bottom and sides of a medium pot with garlic; discard garlic. Add wine and brandy; bring to a simmer over medium-high heat.
  • Reduce heat to medium. Stir in cheese mixture in batches, waiting for cheeses to melt before adding more. Cook, stirring, until melted and smooth, about 10 minutes. Season with nutmeg.
  • Transfer to a fondue pot set over a warmer. Serve with beef, apple, fennel, cornichons, and bread.

  • Bread. This is a classic vessel for cheese fondue. My favorite is a nice crusty baguette cut into big 1″ chunks.
  • Broccoli. The best way to eat your veggies… dipped in cheese! You can either blanch these VERY quickly before serving, or even if you run out of time you could serve them raw as the hot fondue will end up blanching them a little.
  • Salami. It’s like delicious melty charcuterie on a stick. You could either make nice slices like below, or cut it up into chunks. It doesn’t really matter because it’s hard enough to stay on the stick.
  • Baby Potatoes. Use halved fingerlings or Trader Joe’s “teeny tiny potatoes” cooked just long enough so they don’t fall apart in the cheese. When you check for doneness you’ll want the fork to still have quite a bit of give.
  • Roasted Balsamic Brussel Sprouts. This will make a convert of any brussel sprout skeptic. Cut them in half, sprinkle with salt, pepper, olive oil, and balsamic vinegar.
  • Pretzel Bites. These go especially well with the beer cheese fondue. You could either be ambitious and make them from scratch, or buy the frozen pretzels, bake them off, then cut them up.
  • Asparagus. Cut the woody bottoms off. Lay them out on a baking sheet. Sprinkle with salt, pepper, and a little bit of olive oil. Bake at 425° for 10-12 minutes.
  • Steak. One of my favorites is beef tenderloin cooked and diced into 1″ chunks, but really any steak will do.
  • Shrimp. A nice 15-20 peeled and deveined, tail on shrimp is perfect. Boil in a pot with Old Bay and lemons for just a few minutes until they’re pink. You can either bring them over warm, or let them get cold and they’re like shrimp cocktail.
