- Preheat the oven to 375 degrees F. Line a sheet pan with foil, then coat the foil with cooking spray.
- Lay one sheet of puff pastry on the foil. If you're using a second sheet of pastry to cut out decorations, you can make your decorations at this time.
- Cut a thin slice off the top of the brie. Spread the jam over the brie, then arrange the raspberries and chopped pecans on top.
- Wrap the puff pastry around the brie, then pinch the edges to seal shut. Add pastry decorations, if you're using them.
- Brush the egg all over the pastry. Bake for 20 minutes or until pastry is golden brown.

- Preheat your oven to 350 degrees Fahrenheit.
- Use a baked brie cooking vessel or any other oven-safe dish. We picked up this mini cast iron skillet and we just love how it comes with a wooden trivet. It works perfect for baked brie.
- Top your whole brie cheese wheel with a few pecans. The oven will help to toast the pecans as you're cooking brie.
- Put the brie in the oven.
- Peel your apple with a vegetable peeler and then chop into small pieces.
- Meanwhile, add the apples, chopped pecans, maple syrup, cinnamon, and brown sugar in a skillet. Cool for a few minutes until the apples soften and the brown sugar turns into a syrupy consistency.

- Preheat oven to 350 degrees.
- Shave off the top rind of the Brie (it is easiest to do this after it has been in the freezer for about 20 minutes). If the Brie came in a wooden box, return it to the original container. If not, create a makeshift "box" out of a few layers of aluminum foil, leaving the top of the Brie exposed.
- Place the cheese on a rimmed baking sheet. Bake until warm and gooey, 15 to 20 minutes. Remove from the oven and allow to cool for 20 minutes before serving. Carefully transfer to a serving platter; you do not want the rind to puncture, if possible.
- While the Brie is cooling, make the praline sauce. Melt the butter in a saucepan over medium heat. Add the brown sugar, maple syrup, and pecans. Cook, stirring constantly, until all of the ingredients are well combined, 3 to 5 minutes. Stir in coarsely ground black pepper and remove from heat. Allow the mixture to cool for 5 to 10 minutes, until it has thickened up just a bit. Dollop the warm sauce over the baked cheese. (There may be extra praline sauce.) Serve with assorted crackers.
