The best ice cream flavor ever (IMO), now made dairy-free, refined-sugar free and full of nourishing healthy fats and whole foods! Homemade ice cream is actually SO easy: let me prove it!

Number Of Ingredients 8

1 cup raw cashews
1 can full fat coconut milk
1/2 cup maple syrup
1 cup organic frozen spinach
1 1/2 teaspoons vanilla extract
1/4 teaspoon sea salt
3/4 teaspoon peppermint extract
2/3 cup semi-sweet chocolate chips, roughly chopped ((sub chopped chocolate of choice))

Steps:

  • Freeze the bowl of your ice cream maker at least 24 hours in advance.
  • Add cashews to a bowl and cover with hot tap water (not boiling). Allow to sit at room temperature for 30 minutes, then drain and rinse thoroughly.
  • Combine cashews, as well as all remaining ingredients except chocolate chips, in a high-powered blender. Refrigerate blender for 30 minutes.
  • Plug in ice cream base. Moving quickly, remove frozen bowl and place it on the base, then pour in your ice cream mixture. Churn according to manufacturer directions.
  • While ice cream is churning, line a loaf tin with parchment paper. When ice cream is ready, scoop it into loaf tin and quickly/carefully stir in chocolate*. Cover with saran wrap and freeze for at least 8 hours before serving. I like to let it sit on the counter at room temperature 20 minutes before trying to scoop. *Alternatively, if easier, add ice cream to a bowl then stir in chocolate chips, then empty mixture into loaf tin. I just like to avoid as many dirty dishes as possible!

½ cup milk
1 cup soft bread crumbs
1 ½ pounds ground beef
1 ¼ teaspoons salt
ground black pepper to taste
1 egg, slightly beaten
3 tablespoons steak sauce, (e.g. Heinz 57)
1 onion, chopped
½ cup diced green bell pepper
¼ cup steak sauce, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8 1/2 x 4 1/2 inch loaf pan.
  • Combine milk and soft bread crumbs in a small bowl and allow to soften, about 5 minutes.
  • In a mixing bowl, combine the ground beef, salt, pepper, egg, 3 tablespoons steak sauce, chopped onion, and green bell pepper. Add bread crumb mixture, and mix with your hands until all ingredients are combined.
  • Pat the the mixture into the prepared loaf pan. Brush the top with additional steak sauce.
  • Bake in the preheated oven for 1 hour or until done. Allow to stand 5 minutes before slicing.

Classic combo, mint choc chip goes luxury with fresh leaves, big dark chocolate chunks and vanilla seeds

140g dark chocolate
400ml full-fat milk
300ml double cream
1 vanilla pod , split
75g/2½oz fresh mint leaves with stalks
4 large egg yolks
140g caster sugar
ice-cream cones , to serve (optional)

Steps:

  • Put the chocolate in a plastic bag, seal and freeze for at least 30 mins. Bash the frozen chocolate with a rolling pin until it shatters into small chunks inside the bag.
  • Pour the milk and cream into a medium heavy-based pan, then add the vanilla pod, scraping the seeds into the mixture. Heat the creamy milk, stirring occasionally, until almost boiling. Add the mint leaves and stalks, cover with a lid, and leave for 15 mins.
  • Strain the liquid, pressing the mint with a spatula to extract maximum flavour. Discard the leaves and stalks, and scoop out the vanilla pod.
  • Whisk the egg yolks and caster sugar until thick and pale - about 5 mins if you are using an electric whisk. Return the minty cream to a clean pan and bring back to almost boiling.
  • Pour half the hot liquid onto the egg and sugar mixture, whisking to combine everything before adding the remaining liquid. Return the custard to the rinsed-out pan and cook over a low heat, stirring all the time, until lightly thickened - about 3-4 mins. Take care it doesn't get too hot or it may curdle. Strain the custard into a bowl and leave to cool, stirring occasionally to prevent a skin forming. Chill the custard until really cold - it's a good idea to leave it overnight.
  • Churn the custard in an ice-cream machine until frozen. Add the chocolate pieces just before it sets. If you don't have a machine, pour the custard into a chilled container and freeze for 2-3 hrs until the sides become icy. Whisk thoroughly to break up any crystals, then add the chocolate and freeze until solid. Leave to soften in the fridge for 20-30 mins, then serve in bowls or cones.

Nonstick cooking spray, for the pan
1 quart chocolate ice cream, softened (or your favorite non-dairy ice cream!)
24 mint chocolate cookies, preferably Grasshoppers
One 7.25-ounce bottle chocolate shell ice cream sauce, store-bought, or 1 cup homemade
1/2 cup chopped mint chocolate candies, preferably Andes

Steps:

  • Spray a 24-count mini muffin pan with nonstick cooking spray. Place an approximately 20-inch-long piece of plastic wrap over the muffin pan, leaving about 4 inches of excess plastic hanging over the ends of the pan. Press the plastic into each cup of the pan, making sure the cups are completely lined with the plastic wrap.
  • Using a small ice cream scoop or tablespoon measure, scoop about 1 1/2 tablespoons ice cream into each muffin cup so they are filled to the top. Place a chocolate cookie on top of each ice cream-filled muffin cup and gently press down. Freeze until the ice cream hardens, about 3 hours.
  • Place a wire rack over a baking sheet. Line a second baking sheet with parchment paper.
  • Carefully remove the plastic wrap from the muffin pan to release the bonbons from the muffin cups. Place the bonbons cookie-side down on the baking sheet lined with the wire rack. Slowly pour some of the chocolate shell ice cream sauce over about 1 to 2 bonbons at a time to cover completely. Before the sauce hardens, sprinkle the top of the bonbon with the chopped mint candies. The sauce will harden in about 30 seconds, so continue to coat 1 to 2 bonbons at a time before topping them with the chopped candies, until all 24 are coated and topped.
  • Transfer the bonbons from the rack to the parchment-lined baking sheet with an offset spatula or butter knife. If needed, dip the offset spatula in hot water, then use it to remove the bonbons from rack. (The hot spatula will help prevent the chocolate shell from cracking when you remove them.) Store in a resealable container in the freezer until ready to serve, for up to one week.

1 cup granulated sugar
1/2 teaspoon sea salt

  • Whisk together the milk, cream, sugar, salt, vanilla extract and peppermint essential oil in a large mixing bowl until the sugar is completely dissolved.

2 1/4 cups heavy cream
1 1/4 cups whole milk
2 teaspoons peppermint extract
2 teaspoons pure vanilla extract
1/2 teaspoon kosher salt
3 to 4 drops green liquid food coloring, optional
1 cup lightly packed fresh mint leaves
4 large egg yolks
3/4 cup granulated sugar
4 ounces bittersweet chocolate, finely chopped (about 3/4 cup)

Steps:

  • Combine the heavy cream, milk, peppermint extract, vanilla, salt and food coloring if using in a medium pot over medium heat and cook just until small bubbles start forming around the edge of the pot, 7 to 9 minutes. Immediately remove from the heat, add the mint leaves and set aside to steep at room temperature for 30 minutes.
  • Meanwhile, whisk the egg yolks and sugar in a large, heatproof mixing bowl until ribbons form and the mixture is pale yellow, about 2 minutes. Strain the milk mixture into the egg yolk mixture through a fine-mesh sieve. Whisk until the egg yolks are completely incorporated.
  • Pour the mixture back into the same pot as the cream-milk mixture (do not wash the bowl). Cook over medium-low heat, stirring constantly, until the mixture is very creamy and thick enough to coat the back of a spoon and an instant-read thermometer registers between 170 and 180 degrees F, 6 to 8 minutes. Strain the mixture back into the bowl and cool at room temperature for 30 minutes. Cover tightly with plastic wrap and refrigerate until cold, at least 4 hours. (For faster chilling, set the bowl over another bowl of ice water and stir frequently until cold, changing the ice water as needed.)
  • Churn the mixture in an ice cream machine according to the manufacturer's instructions until it's the texture of soft serve, 20 to 30 minutes for most models. Add the chocolate, reserving 1/4 cup for garnish, and continue churning just until incorporated, 5 to 10 seconds. Quickly transfer the ice cream to a chilled 9-by-5-inch loaf pan (a metal one will help keep the chill). Sprinkle the reserved chocolate on top of the ice cream and freeze for at least 1 hour before serving.

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

1 tablespoon butter
¼ cup minced onion
2 cloves garlic, minced
1 ½ teaspoons salt
1 ½ teaspoons freshly ground black pepper
2 pounds extra-lean ground beef
3 slices bread, toasted and crumbled
7 buttery round crackers, crushed
1 egg, lightly beaten
3 ½ tablespoons sour cream
1 ½ tablespoons Worcestershire sauce
1 (15 ounce) can tomato sauce, divided
¼ cup milk
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
  • In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
  • Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
  • In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.
