This easy coleslaw is the best recipe that I've tried! It's a combination of shredded cabbage and carrot mix, tossed in a flavorful, creamy dressing. It's super tasty, quick to make, and it pairs well with so many different meals! A great side dish for a barbecue or picnic!

1/2 cup mayonnaise
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon onion powder
1/2 teaspoon sea salt
dash black pepper (optional)
5 cups finely shredded green cabbage
2 cups finely shredded red/purple cabbage
1 cup finely shredded carrots

Steps:

  • In a medium bowl, whisk together dressing ingredients and set aside.
  • To prepare cabbage, cut the head of cabbage in half and cut off the center core. To shred the cabbage and carrots you can thinly slice them with a knife or better use a cheese grater, mandoline or food processor.
  • Combine the veggies in a large mixing bowl. Pour the dressing over the slaw a little at a time and toss to fully combine. You don't have to use all of the dressing.
  • Cover and refrigerate 1 to 2 hours to let the flavors meld together, before serving.

  • Drain zucchini by pressing between layers of paper towels. Place in a large bowl and combine with cabbage, carrot, onions and radishes. In a small bowl, combine remaining ingredients. Pour over vegetables and toss well. Cover and chill at least 1 hour.

2 bags of coleslaw mix or two heads of green cabbage
1/2 c relish
1 tsp celery seed
1/2 c mayonnaise
1/3 c mustard
1/2 c sugar

Steps:

  • 1. Pour the two bags of coleslaw mix in a large bowl (or shred 2 heads of green cabbage)
  • 2. Mix all the ingredients together and let chill overnight. (you might think that there is no way that all the ingredients will cover all the cabbage but it will! Keep mixing)
  • 3. The next day you will notice that the slaw has shrunk down quite a bit, but that's normal. Just mix again and serve!

½ cup mayonnaise
3 TBS honey
1 TBS lemon juice
1 TBS apple cider vinegar
¼ tsp pepper
¼ tsp salt
¼ tsp celery seeds

Steps:

  • In a small bowl, whisk together mayonnaise, honey, lemon juice, vinegar, salt pepper until the mixture is combined and there are no lumps.
  • Add celery seeds and whisk to combine.
  • Place half of the coleslaw mixture in a large mixing bowl.
  • Pour half of the dressing over the coleslaw in the bowl.
  • Add the rest of the coleslaw mixture and pour the rest of the dressing over it.
  • Stir until combined.
  • Transfer to a serving dish, cover with a lid or plastic wrap and chill for at least 1 hour.
