- Cook macaroni according to package directions. Meanwhile, in a small bowl, combine the egg, cream and butter; set aside. Drain macaroni; transfer to another bowl. Add the Parmesan cheese, 1/2 cup mozzarella cheese, garlic, salt, pepper and reserved egg mixture to the macaroni; toss to coat. Stir in shrimp and spinach., Transfer to a 1-qt. baking dish coated with cooking spray. Sprinkle with remaining mozzarella cheese. Bake, uncovered, at 350° for 20-25 minutes or until shrimp turn pink and cheese is melted.

SHRIMP MACARONI AND CHEESE
Shrimp Macaroni and Cheese is gooey, rich, creamy comfort food kicked up a notch with Old Bay seasoned shrimp. This is a creamy, rich, and decadent seafood macaroni and cheese recipe for an 'over the top' experience.

Steps:
- Cut the processed cheese food into small cubes and set aside.
- Bring a large sauce pan of water to a boil. Sprinkle in a pinch of salt.
- Add the pasta and cook according to the package directions.
- At the same time, cut each shrimp into 2 or 3 bite sized pieces and sprinkle with the Old Bay seasoning. Click for Old Bay Seasoning.
- Heat a skillet over medium heat and add 1 tablespoon of butter.
- Cook the shrimp for about 2 minutes, stirring often until pink and opaque. Remove from the heat and set aside. Do not overcook as they will cook a bit more during baking.
- Drain the water off the pasta and return it to the cooking pot over low heat.
- Stir 1 tablespoon butter into the pasta until melted and turn off the heat.
- Preheat the oven to 350 degrees F (180 degrees C).
- Whisk together the egg and heavy cream.
- To the pasta, add the heavy cream mixture, 1 cup of shredded cheese, and the processed cheese food cubes (Velveeta cheese).
- Pour in the shrimp and butter from the skillet, scraping the pan to get all the butter.
- Mix it all together and season with the salt and pepper.
- Pour the pasta mixture, divided evenly, into two 20 oz oven safe baking dishes. Click for 20 oz oven safe baking dishes.
- Sprinkle the tops with the remaining 1/2 cup of shredded cheese.
- Bake for 30 - 35 minutes until heated through and bubbling around the edges.

- Preheat the oven to 350 degrees F. Coat a 3-quart baking dish with cooking spray.
- Cook the shrimp as directed on the package. Remove the shrimp tails and discard.
- Meanwhile, melt 6 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour until blended. Gradually whisk in the milk; bring to a simmer and cook for 3 minutes. Stir in the Gruyère until melted. Stir in the Cheddar, Swiss, salt, and pepper until blended.
- Remove from the heat. Stir in the shrimp, shrimp cooking liquids, and macaroni until combined. Spoon into the prepared baking dish. Top with the Parmigiano-Reggiano and breadcrumbs. Drizzle with the remaining 3 tablespoons melted butter.

- Pour 5 cups water into a saucepan. Cover and bring to a boil over high heat. Add macaroni and boil until tender yet firm to the bite, about 8 minutes.

- Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
- Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
- Add the macaroni and the reserved pasta water to the saucepan and stir to combine. (It will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) - Preheat oven to 400 degrees. In a large pot of boiling salted water, cook macaroni 2 minutes less than al dente. Drain; rinse with cold water. Set aside.
- While pasta is cooking, melt butter over medium in a large saucepan. Transfer 2 tablespoons melted butter to a medium bowl, and reserve. Add onion and garlic to pan; cook until softened, 3 to 5 minutes. Add flour; cook, stirring, 1 minute. Add milk; whisk until smooth.
