CREAMY BANANA CREPES

My husband and I enjoy taking turns fixing weekend breakfasts. These crepes are frequently on our menus. The sweet-and-sour banana filling is delicious. You'll want to serve them for lunch, dinner and dessert!

3/4 cup water
3/4 cup 2% milk
2 tablespoons butter, melted
1/2 teaspoon vanilla extract

BANANA FILLING:
3 tablespoons butter
3 tablespoons brown sugar
3 medium firm bananas, cut into 1/4-inch slices
SOUR CREAM FILLING:
1 cup sour cream
2 tablespoons confectioners' sugar
1/2 cup slivered almonds, toasted

Steps:

  • In a small bowl, combine whisk eggs, water, milk, butter and vanilla. In another bowl, mix flour, sugar and salt; add to egg mixture and mix well. Refrigerate, covered, 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat. Stir batter. Fill a 1/4-cup measure three-fourths full with batter; pour into center of pan. Quickly lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn crepe over and cook until bottom is cooked, 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing pan as needed. When cool, stack crepes between pieces of waxed paper or paper towels., In a small skillet, heat butter and brown sugar over medium heat until sugar is dissolved. Add bananas; toss to coat. Remove from the heat; keep warm., In a small bowl, combine sour cream and confectioners' sugar. Spread over one half of crepes. Top with banana filling and almonds; fold over filling. If desired, sprinkle with additional confectioners' sugar and almonds.

¼ cup confectioners' sugar
2 eggs
1 cup milk
3 tablespoons butter, melted

Steps:

  • Sift flour and powdered sugar into a mixing bowl. Add eggs, milk, butter, vanilla, and salt; beat until smooth.
  • Heat a lightly greased 6 inch skillet. Add about 3 tablespoons batter. Tilt skillet so that batter spreads to almost cover the bottom of skillet. Cook until lightly browned; turn and brown the other side. Repeat process with remaining batter, grease skillet as needed.
  • Melt 1/4 cup butter in a large skillet. Stir in brown sugar, 1/4 teaspoon cinnamon and nutmeg. Stir in cream and cook until slightly thickened. Add half the bananas at a time to skillet; cook for 2 to 3 minutes, spooning sauce over them. Remove from heat.

1 pkg. frozen chopped spinach, thawed & squeezed dry
1 c. ricotta cheese
1/2 c. grated parm. cheese
1 1/4 c. shredded Gruyere cheese
tomato sauce

Steps:

  • Preheat oven to 425. Arrange eggplant slices on nonstick baking sheets in single layer. Spray both sides of eggplant slices w/ cooking spray. Bake eggplant 10 mins.; turn and bake 5-10 mins. or till tender. Cool. Reduce oven temp. to 350. Combine spinach, ricotta and parm. cheese; mix well. Spray 13 x 9 baking pan w/ cooking spray. Spread spinach mixture evenly on eggplant slices; roll up slices. Place rolls, seam-side down, in prepared pan. Cover dish w/ foil; bake 25 mins. Remove foil; sprinkle rolls w/ Gruyere cheese. Bake, uncovered, 5 mins. or till cheese is melted. Serve w/ tomato sauce.

Our classic crepe is versatile enough to go sweet or savory, just omit the vanilla if going the savory route. The rest time here is key; the flour absorbs the milk as it sits giving you a more tender crepe and golden color.

2 cups milk, at room temperature
4 large eggs, at room temperature
1 1/4 cup all-purpose flour (see Cook's Note)
2 tablespoons sugar
2 teaspoons pure vanilla extract
1 1/2 teaspoons kosher salt
1 tablespoon unsalted butter, melted
Vegetable oil, for the pan

Steps:

  • Add the milk, eggs, flour, sugar, vanilla and salt to a blender. Puree on high speed until completely smooth and slightly thickened and creamy, about 1 minute. Add the melted butter and puree until incorporated, 30 seconds more. Let the batter rest in the blender carafe for at least 1 hour at room temperature or refrigerate up to 24 hours. The longer you allow the batter to rest and hydrate, the lighter and softer the texture of the crepes will be; overnight is ideal.
  • Before cooking, re-blend the batter at high speed for 30 seconds. This will reincorporate the ingredients, a vital step in getting an even golden color on the crepes. Wipe 1/2 teaspoon of oil on a large crepe pan or a 10-inch nonstick skillet with a paper towel. You don't want to see any drops of oil in the pan, just coat with the thinnest layer. Heat the pan over medium heat until hot.
  • Ladle 1/4 cup batter into the pan. Working quickly off the heat, swirl and shake the pan to evenly coat the bottom with the batter. Return to the heat and cook the crepe, reducing the heat if it's browning too quickly, until the edges are light golden, about 2 minutes. Slide a spatula underneath to loosen the crepe and carefully flip it over. Cook on the other side until a few brown spots appear, 15 to 30 seconds. Transfer to a plate. Repeat with the remaining batter, wiping pan with oil each time. Stack the crepes on the plate as you go (you should have about 15 total). Let the crepes cool for 10 minutes before serving or filling.
  • For fillings, we suggest Nutella and bananas or peanut butter and jelly for sweet crepes. Ham and cheese makes a great filling for savory crepes.

These are delicious dessert or breakfast crepes with banana flavor within the crepe itself. They are really good with Recipe #209347. I like to use a paper towel with a little butter on it to swipe the pan before adding the batter. This recipe works best with a non-stick pan or a crepe maker. 1 1/4 cups milk
3 tablespoons oil
1/2 teaspoon vanilla
1 very ripe banana

Steps:

  • Place ingredients in blender or food processor container in the order listed.
  • Cover and blend on high 20 to 30 seconds. Scrape sides of container. Blend a few more seconds.
  • PAN PREPARATION: If using a non-stick spray shortening, spray pan before heating. Before cooking the first crepe put 1/2 teaspoons butter into pan. If the pan is well seasoned it should not be necessary to add more butter for each crepe.
  • PAN TEMPERATURE: Crepe pan is at the correct temperature when the batter sizzles slightly when poured into the pan, and a crepe will cook on one side in approximately 1 minute. (On my stovetop I set to medium-low). Crepes should be pale in color, not dark brown.
  • TO COOK CREPES: Two or three tablespoons of batter is usually enough to cover the bottom of a 6 to 7 inch crepe pan. ( I use a 10 inch pan with scant 1/4 cup batter). If necessary adjust the amount needed for the pan you are using.
  • Pour in the batter and quickly tilt the pan so the batter covers the bottom entirely. If you put in more than just a thin coating, pour the excess back into the bowl. This will leave a small flap on the crepe but it won't be noticed when the crepe is filled and folded. (Caution: If crepe pan is not hot enough, the whole crepe may fall back into the batter when you pour out the excess. It is important to have the pan at the correct temperature before starting to cook.).
  • WHEN TO TURN: The crepe is ready to turn when it begins to set and crisp around the edges. Loosen around the edge with a long thin spatula or knife so you have a starting place to pick up the crepe with your fingers (or the spatula) then simply flip it over. Should it start to tear when picked up, it may not be cooked enough to turn. Cook a few seconds longer and try again.
  • Crepe is ready when the second side is set (not wet).
  • IF PAN STICKS IN ONE SPOT: Put more butter or oil in the pan and wipe with a paper towel. Once a crepe pan is seasoned, it should not be necessary to add more butter or oil for each crepe. It may be necessary to discard the first crepe or two until the pan is properly seasoned and the temperature is right.
  • AFTER THE CREPES ARE COOKED: Stack cooked crepes on a plate. They will be easier to separate if they are not placed squarely on top of each other. It is not necessary to put foil or waxed paper between each crepe.
  • PRESENTATION: Crepes can be filled and rolled or folded into quarters.

1 tablespoon coarse salt
1 cup all-purpose flour
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon garlic powder
½ teaspoon pepper
2 cups vegetable oil
2 ½ cups marinara sauce, divided
2 tablespoons fresh basil, minced, plus more for garnish
2 cups low-moisture mozzarella, shredded
1 cup shredded parmesan cheese
8 slices fresh mozzarella cheese

Steps:

  • Cut each eggplant into about ½-inch (1-cm) thick round slices.
  • Arrange the slices in a single layer on a baking sheet lined with paper towels.
  • Sprinkle the eggplant with half of the coarse salt. Flip the slices over and sprinkle with the rest of the salt.
  • Put another baking sheet on top of the eggplant and place something heavy, like a cast-iron skillet, on the top baking sheet to help release moisture from the eggplant. Let sit for 30 minutes.
  • Uncover the eggplant slices and pat dry with paper towels. Brush most of the salt from the eggplant with a paper towel, then transfer to a medium bowl. Set aside.

1/4 cup seasoned flour
olive oil
1/4 freshly grated parmesan cheese or 1/4 romano cheese
1 cup ricotta cheese
2 whole eggs
1 garlic clove

1 (10 ounce) package frozen spinach, defrosted and well drained
grated parmesan cheese or romano cheese
1 small carrot, scraped
1 stalk celery
1 small onion
1/4 medium green pepper

1/2 teaspoon basil, crushed
1/2 teaspoon oregano, crushed

Steps:

  • Cut eggplant lengthwise into thin slices.
  • Sprinkle each side lightly with salt.
  • Place in a colander weighted with a heavy plate and let stand one hour.
  • Dip each slice on both sides in seasoned flour.
  • Sauté lightly on both sides until golden.
  • Add oil as needed.
  • Keep warm.
  • Mean while grate parmesan or romano cheese in food processor with steel blade.
  • Combine with ricotta, eggs, garlic, salt and pepper.
  • Add spinach and blend.
  • Place several tablespoons of spinach mixture in center of crepe.
  • Roll up and place seam sides down in a 13x9 inch baking pan.
  • Top with tomato sauce.
  • Sprinkle with grated cheese and bake in a preheated 375°F oven for 15 minutes or until hot and bubbling.
  • To prepare tomato sauce for eggplant crepes: Place vegetables in a food processor with steel blade.
  • Process until finely chopped.
  • In large saucepan, sauté vegetables in olive oil with garlic, basil, oregano and thyme until tender.
  • Add remaining ingredients and simmer 20 minutes.
  • Transfer to food processor or blender and process until smooth.
  • Pour over eggplant crepes before heating in oven.
  • Makes 2+1/2 cups sauce.
  • Notes: When I'm in a hurry I will use one of the good home style Italian sauces with peppers and vegetables on the grocery shelf like Aunt Millie's or Classico, instead of making this sauce.

Here is a rather grand dish I created by combining the boorani of Afghanistan, with its layers of satiny eggplant, yogurt and tomato, and the street snacks that I grew up with in Delhi, laden with chickpeas and tamarind chutney. It is entirely vegetarian and can be served either as a main course or as a side dish with other Indian meat dishes or, indeed with a roast leg of lamb. Three sauces are required here, all of which may be made a day in advance. Only one of them, the tomato-chickpea sauce, will need reheating just before you serve. The others can be cold or at room temperature. I use 3 large eggplants and cut each of them, crosswise, into 5 thick slices. The slices are generally 1 1/4 inches or so thick, depending upon the size of the vegetable. They flatten a lot as they cook.

3 large eggplants (each about 1 pound and 2 ounces)
Peanut or corn oil, for deep frying
3 tablespoons peanut or corn oil
2 whole hot dried red chiles
1 teaspoon whole brown mustard seeds
3 cloves garlic, finely chopped
1 (28-ounce) can good-quality whole tomatoes, finely chopped, with the liquid
10 fresh curry leaves, if available (use basil as an alternative with a different flavor)
1 (15-ounce) can chickpeas, drained and rinsed or 12 ounces cooked and drained
3/4 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon ground turmeric
10 tablespoons plain yogurt
1/4 teaspoon salt
1/4 teaspoon ground cumin seeds
2 tablespoons thick tamarind paste
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon ground roasted cumin seeds
A little extra salt and freshly ground pepper, fresh mint or cilantro leaves, for garnishing

Steps:

  • To prepare the eggplant: Pour 3 quarts of water into a very large bowl or large pan. Add the salt and stir well.
  • Trim the eggplants, slicing off the very top and bottom, and then peel them. Cut them, crosswise, into about 5 slices each. Each slice should be about 1 1/4 to 1 1/2 inches thick. Put the slices into the salty water as you cut them. The slices will float. Upturn a plate on top of the slices and balance a weight (such as a clean glass jar filled with water) on top of the plate. Set aside for 3 to 10 hours.
  • Remove the slices from the water and pat them dry.
  • Pour about enough oil into a large pan to come to a depth of 3/4 inches, and set over medium heat. Allow time for the oil to get very hot, then put in as many eggplant slices as the pan will hold in a single layer and fry for 3 to 4 minutes on each side, or until reddish-gold. Remove to a large plate or tray lined with a double thickness of paper towels. Fry all the eggplant slices this way, adding more oil, if needed, and using as many plates or trays as you see fit. I like to change the paper towels at least once. I also pat the tops of the slices with more paper towel. The eggplants may now be set aside for 3 to 4 hours, if desired.
  • To make the Tomato-chickpea sauce: Either use 3 tablespoons from the frying oil or, if you prefer, fresh oil, and pour it into a large, lidded pan. Set the pan over medium-high heat, and, when the oil is very hot, put in the chiles and mustard seeds. As soon as the mustard seeds begin to pop, a matter of seconds, add the garlic. Stir quickly once, then put in the tomatoes, curry leaves, chickpeas, salt, cumin, coriander, and turmeric. Stir and bring to a simmer. Cover, reduce the heat to low, and simmer gently for 20 minutes. Remove the chiles before serving.
  • To make the yogurt sauce: Put the yogurt in a small bowl and beat lightly with a fork or small whisk until smooth. Stir in the salt and cumin. Cover and refrigerate, if not using within 2 hours.
  • To make the tamarind chutney: Combine the tamarind paste, sugar, salt, and cumin in a small cup. Mix well. Cover and refrigerate, if not using within 2 hours.
  • To prepare the dish: When ready to serve, preheat the oven to 325 degrees F. Spread out the eggplant slices in a single layer on a baking tray and dust very lightly with salt and black pepper. 2 large eggs
2 large egg whites
3/4 cup water
1/2 cup 2% milk
1 tablespoon canola oil
1 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 tablespoons butter
2 tablespoons brown sugar
4 medium bananas, peeled and sliced
1/3 cup Nutella

Steps:

  • In a large bowl, whisk the eggs, egg whites, water, milk and oil. Combine the flour, sugar and salt; add to egg mixture and mix well. Refrigerate for 1 hour., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 1/4 cup batter into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., In a large skillet, melt butter over medium-low heat. Stir in brown sugar until blended. Add bananas; cook for 2-3 minutes or until bananas are glazed and slightly softened, stirring gently. Remove from the heat., Spread Nutella over each crepe; top with bananas. Roll up and serve.

I must admit, I've never tried this. But the picture in the magazine (something at the doctor's office) looked absolutely delicious. My grandfather loved eggplant, but nobody else in the family did. I thought I'd at least give this a try in the summer when the eggplants and fresh spinach come in. I wish now I'd ripped out the picture for reference. So, if you give this a try, let me know how it turns out!

1 lb eggplant
oil
8 teaspoons dried basil
salt & pepper, to taste
1 (26 ounce) jar marinara sauce
6 ounces fresh Baby Spinach
1 tablespoon water
15 ounces ricotta cheese
1/2 cup Italian cheese blend, plus
8 tablespoons Italian cheese blend, divided

Steps:

  • Heat the broiler. Peel and cut the eggplant into eight 1/4-inch slices. Brush each slice with oil and sprinkle with 1 teaspoons basil, salt, and pepper. Broil 5 minutes.
  • Heat the oven to 400 degrees.
  • In a microwave-safe bowl, combine washed spinach and the water. Cook 3 minutes or until wilted. Rinse with very cold water and drain very well. Mix with ricotta cheese and the 1/2 cup Italian blend cheese.
  • Spread 1 cup of the marinara sauce in the bottom of a 9x13 baking dish. Roll 1/4 cup of mixture up jelly-roll style in each slice and place on top of the marinara. Pour on the remaining sauce and sprinkle with 1 tablespoons of the Italian cheese on each. Cover and bake 10 minutes. Remove cover and bake 3 minutes more to brown.
