PORK ROAST AND SAUERKRAUT
This boneless pork roast and sauerkraut recipe is perfect on a cool fall or winter's day. Just put the pork shoulder in the slow cooker and let it do its thing! You'll end up with juicy and tender pork with a bite of sauerkraut on every delicious forkful.

Steps:
- Place roast in the slow cooker. Add sauerkraut and brown sugar and mix to combine the three.
- Cover and cook on low for 3-4 hours or until internal temperature registers in the middle at 150 degrees. Transfer to a plate or platter and allow to sit for 10 minutes
- Cut roast into slices and serve with sauerkraut mix.
- Label a gallon size freezer bag. Add all ingredients, remove excess air and lay flat to freeze. To cook, follow instructions above.

- Place pork loin in crock pot. Sprinkle with caraway seeds and black pepper.
- Place diced apple (or applesauce) on top of pork.
- Pour sauerkraut and juice on top.
- Evenly sprinkle the brown sugar on top of the sauerkraut.
- Drizzle the top with melted butter.
- Cook on low for about 8 hours or until pork reaches internal temp of at least 160 degrees F.
- Stir the sauerkraut around a bit before serving.

- 1. Put crockpot on low... season your pork roast and put all sauerkraut on top and around roast.. even put some under roast.Juice and all.
- 2. put on around ten ,a.m... cook untill five or six for dinner..the meat will melt in your mouth. Take roast put on cutting board.. let it rest for five minutes.scoop all your saurkraut with a spoon whith holes.. You do not want the juice... Ohhh i can taste it now...lol
CROCK POT PULLED PORK WITH SAUERKRAUT
Surprisingly tasty and the result of a mistake that left me needing to come up with a dinner with super easy prep. Freezer to table. I grabbed my crockpot, took a pork tenderloin out of the freezer stuck it in the pot & free poured apple cider I had on hand over it. Put it on & went to work. Later in the day the meat was cooking well, but for our tastes, I knew I had to kick up the flavor. I only had a few minutes to spare. That's when I came up with the other 2 ingredients. Tossed them in & turned down the heat & went back to work. How simple is that! I don't think I spent 5 minutes altogether!

- Place the tenderloin in crockpot with the salt & peppercorns. Pour apple cider over. Turn to 300 degrees for 3 hours.
- Pour in brandy, add sauerkraut, test for salt, add more to taste, reduce heat to 200 degrees for another 3 to 4 hours.
- Remove lid if necessary to boil off extra liquid before shredding with 2 forks.
- Serve as a main dish, with beans or mashies or on a toasted roll with melted swiss cheese. Sooo good!

- Place pork roast in a large roasting pan. Season with salt and black pepper. Mix sauerkraut, water, onion, and apple together in a large bowl. Pour sauerkraut mixture over roast.
- Bake roast in the preheated oven until heated through, about 1 hour. Reduce oven temperature to 300 degrees F (150 degrees C). - Preheat oven to 325F, rack in the middle. Pat the pork dry and sprinkle the entire roast with salt, pepper and smoked paprika. Heat a large non-stick pan over medium-high heat and add in the olive oil. When the olive oil starts to simmer carefully place the pork roast in. Sear on all sides until golden brown – ~5-8 minutes per side.
- In a lidded 6qrt Dutch Oven place the sauerkraut all over the bottom. Sprinkle over the caraway seeds, onions, apples and brown sugar. Place the seared pork roast on top nestling it in the sauerkraut. If you’ve drained yours sauerkraut, add the water. If you did not you do not need the water. You want at least a cup of liquid in the pot.
- Cover tightly with a lid and bake for about 2 hours or until a meat thermometer reads between 145F-150F. While it’s cooking check the pot to ensure that it’s not drying out. If needed, add more water. I have never had to but I always add at least a cup of liquid. Remove from the oven once the thermometer reads 145F-150F. Carefully remove the roast from the pan and place on a cutting board covering loosely with foil.
