4 ounces cream cheese, softened
1/4 cup minced fresh cilantro
2 to 3 tablespoons minced banana peppers
1 garlic clove, minced
1/2 pound thinly sliced cooked roast beef
HAM AND TURKEY ROLL-UPS:
12 ounces cream cheese, softened
1/2 cup shredded carrot
1/2 cup shredded zucchini
4 teaspoons dill weed
1/2 pound thinly sliced fully cooked ham
1/2 pound thinly sliced cooked turkey

Steps:

  • In a small bowl, combine the cream cheese, cilantro, peppers and garlic. Spread about 2 tablespoons on each slice of beef. Roll up tightly and wrap in plastic. , For ham and turkey rolls, in another bowl, combine the cream cheese, carrot, zucchini and dill. Spread about 2 tablespoons on each slice of ham and turkey. Roll up tightly; wrap in foil. Refrigerate overnight. , Slice the roll-ups into 1-1/2-in. pieces.

2 (1/4 ounce) packages active dry yeast
3 cups water, divided (110-115 degrees)
2 tablespoons sugar, divided
1/4 cup vegetable oil
1 tablespoon salt
8 -8 1/2 cups all-purpose flour

Steps:

  • In a mixing bowl, dissolve the yeast in 1/2 cup warm water add 1 T. sugar and then let stand about 5 minutes.
  • Add remaining water and sugar. Beat in oil, salt and 4 cups flour until smooth. Stir in enough flour to form a soft dough.
  • Turn onto a floured board. Knead until smooth and elastic for about 6-8 minutes.
  • Place in a greased bowl turning once to grease the top.
  • Cover and let rise 45 minutes.
  • Punch dough down. Turn onto a lightly floured board, divide into 18 pieces.
  • Shape into an oval.
  • Place 2 inches apart on a greased baking sheets.
  • With scissors cut a 1/4-inch slash across the top of each.
  • Cover and let rise 20 minutes.
  • Bake at 400° for 13-18 minutes until golden brown.
  • Remove to wire racks to cool.

2 1/2 cups 320 grams unbleached all-purpose flour
1/2 teaspoon instant yeast
3/4 to 1 cup warm water (about 100-105 F)
2 1/2 cups 320 grams unbleached all-purpose flour
2 teaspoon kosher salt or sea salt
1 Tablespoon sugar
1 teaspoon instant yeast
1 Tablespoon olive oil
3/4 to 1 cup warm water (100-105 F)
Semolina flour or cornmeal for dusting
1 egg beaten with 1 Tablespoon water for egg wash
1 cup hot water for steam pan

Steps:

  • To make the starter or biga, combine the flour and yeast in a medium bowl, slowly add the 3/4 cup water. Mix until a rough dough forms. If needed, add up to 1 cup of water. Transfer the dough to a lightly-floured surface and knead for a few minutes until it becomes smooth. Place the dough in a lightly oiled bowl, turn to coat, then cover and let stand at room temperature for about 3 hours.
  • Transfer to the refrigerator and let it chill overnight. In the morning, remove the biga from the refrigerator and let it stand at room temperature at least 1 hour before proceeding.
  • Mix the flour, salt, sugar and yeast thoroughly in a large mixing bowl.
  • Cut the biga into small pieces (10-12) and add them in, then, finally the 3/4 cup of the water with the 1 Tablespoon olive oil. Stir together until a dough starts to form. Knead on low with your stand mixer dough hook. Continue to knead the dough for about 5 to 7 minutes -- until a soft dough forms. If needed, add in some of the remaining water a little at a time. The dough should be smooth and elastic -- just barely sticky.
  • Place the dough in a lightly oiled bowl, turning once to coat, and cover. Let rise until doubled, about 2 hours.
  • Remove the dough to a lightly-floured surface. Cut it in 2 being careful not to deflate too much. Cut each piece into 3 equal parts. Shape each piece into a torpedo.
  • Place the shaped dough on a parchment covered making sheet that was sprinkled with cornmeal or semolina. Spray the shaped rolls lightly with oil, then tent lightly with plastic wrap to rise until they are puffy and almost doubled, about 1 hour.
  • Lightly brush each roll with egg wash then score the rolls with a sharp knife or lamé either on the diagonal or down the middle.
  • Place a metal baking pan on the lower rack of the oven for use as a steam pan and preheat the oven to 450 F/220 C. When the oven is preheated pour hot water into the metal baking pan and transfer the roll pan to the oven. Bake about 17-20 minutes, until the tops are a golden brown and the internal temperature measures 190 F.
  • Transfer to a wire rack to cool.
  • Alternate version: Italian Dinner Rolls
  • When you are ready to shape the dough measure out 2 oz. pieces and shape them into balls. We got 17 of them. Then follow the directions above until you are ready to bake. Brush an egg wash--1 egg white mixed with 1/2 cup cool tap water -- on the rolls. Score the top by snipping with scissors then proceed as the rolls above. Bake for 20 minutes or until nicely brown.

3 1/2 - 4 cups bread flour/448-512 grams *see note
1 1/4 cups plus 2 tablespoon - 1 1/2 cups warm water (110-115F degrees) / 308-355 grams *see note
2 Tablespoon sugar
1 packet instant yeast (2 1/4 teaspoon of RedStar Platinum Yeast) / 7 grams
1 teaspoon kosher salt / 6 grams
4 Tablespoon cold butter, cubed *see note

Steps:

  • If using Active Dry Yeast (not the Instant I use) you have to proof the yeast first. Add the Active Dry Yeast, sugar, and 1/4 cup plus 2 Tablespoon of warm water in a bowl of a stand mixer.
  • Using a whisk or spoon, mix and set aside for 5-10 minutes or until the yeast has bubbled quite a bit.
  • In the bowl of a stand mixer fitted with the dough hook (this would be the same bowl your yeast mixture is in) add 2 cups of flour and the remaining cup of water. Start off on low. Mix for 4 minutes.
  • Go to Step 1 of Recipe Continuation and follow the rest of the recipe
  • In the bowl of a stand mixer fitted with the dough hook add in 2 cups of flour, water, sugar, and Instant Yeast. Start off on low. Mix for 4 minutes.
  • Go to Step 1 of Recipe Continuation and follow the rest of the recipe.
  • Add in the salt and 1 cup at a time of the remaining flour and mix for 5-6 minutes until the dough is slack (See note). At this point, your mixer should be at medium speed. If your dough, after 5-6 minutes is not slack add up to 1/4 more cup of water (taking you up to a full 1 1/2 cups used) but add one Tablespoon at a time. The additional water will fully depend on how humid your room is.
  • Add in the butter 1 Tablespoon at a time and mix until almost fully melded in before adding the next Tablespoon. In total, mix for 1-3 minutes or until the dough comes back together and the dough until it pulls completely away from the side and is smooth and shiny. Remove from bowl and transfer to a greased, covered bowl until doubled in size. ~1 hour.
  • Punch the dough down and place it on a very lightly floured board. Divide into 4-8 pieces and shape. I would advise using as little flour as possible when shaping these. The more flour you add, the tougher the hoagies will be. Transfer to a parchment-lined tray and cover with lightly sprayed plastic wrap. Allow to rise again until almost doubled. ~30-45 minutes. Do NOT overproof them otherwise they will fall flat.
  • Preheat the oven to 375 F. If you want to slash your bread, using a lame, make your slashes. If desired, brush with a coating of choice and bake for 16-23 minutes or until golden brown. To ensure doneness, test the internal bread temp. It should be at 200F.
  • Allow to cool before cutting with a quality bread knife ( Sani-Safe S162-8SC-PCP 8″ Scalloped Bread Knife with Polypropylene Handle Pan )

I think many people will be surprised at just how simple these homemade rolls are. Besides the super obvious reasons why these are better than the ones from the supermarket, you can make them the exact size and shape you want.

1 (.25 ounce) package active dry yeast
1 ½ cups warm water (100 to 110 degrees F)
1 ½ teaspoons fine salt
19 ounces bread flour

Steps:

  • Place yeast and warm water in the bowl of a stand mixer; whisk to mix. Add flour and salt.
  • Knead with dough hook until mixture forms a soft, sticky dough ball and easily pulls away from the sides and the hook, about 5 minutes. (If still too sticky, add a bit more flour and knead a few more seconds.) Transfer dough to a work surface and form into a smooth ball. Place dough back in the mixing bowl. Drizzle the dough and sides of bowl a few drops of vegetable oil. Spread a film of oil over the surface of the dough.
  • Cover the bowl and transfer to a warm, draft-free place until dough is doubled in size, 60 to 90 minutes.
  • Transfer dough to a floured work surface. Form into a rectangle shape and cut into 6 equal pieces. Using your cupped hand and the work surface, roll each section of dough into a smooth round ball. Cover with a clean, dry cloth and let rest 15 minutes.
  • Flatten dough balls into 6- or 7-inch long ovals. Starting with a long edge, roll the dough into a cylinder, applying extra pressure to the ends to form pointy tips for a classic French roll shape. Transfer to parchment-lined baking sheets (do not crowd them) and cover with clean dry towels until doubled, about 1 hour.
  • Preheat oven to 450 degrees F (230 degrees C). Place a pan of water on the bottom rack.
  • With a very sharp knife, score each roll about 1/4 inch deep along one side somewhere between the side and the top. Spritz loaves lightly with water from a spray bottle.
  • Bake in preheated oven about 20 minutes. Spritz loaves again and rotate pans for a more even bake. Bake until loaves are golden brown, about 10 more minutes. Transfer to a cooling rack; cool completely before cutting.

Sourdough sandwich rolls are a perfect, easy home-baked sandwich roll or hamburger bun. They rise fast with a combination of sourdough discard and instant yeast. You can have a batch of buns ready within 90 minutes!

⅓ cup (113g) sourdough starter (100% hydration)
1 cup (227g) milk (warmed to ~100F)
1 ½ tbsp (23g) butter (room temperature )
1 tbsp (11g) sugar
1 ½ tsp (9g) kosher salt
1 ½ tbsp (14g) instant yeast
2 ¾ cup (330g) all-purpose flour
1 egg (for egg wash)
1 tbsp cream or half & half (for egg wash)
sesame seeds (for sprinkling on top of rolls)
flaky sea salt (for sprinkling on top of rolls)

Steps:

  • Mix together the sourdough starter, milk, butter, sugar, salt, and yeast in the bowl of your stand mixer--or large bowl if you aren't using a mixer.Let this mixture sit for about 5 minutes until it starts to foam which means your yeast is working and has bloomed.
  • Add the flour and mix with the paddle attachment until the dough has come together in a rough shaggy mass.
  • At this point, you can switch to the dough hook and knead using the stand mixer for 5 minutes or until the dough comes together into a smooth ball. The dough will feel elastic and bouncy. Or knead by hand (this is what I like to do.) Pour the dough out onto your counter and knead for 10 minutes. I think it's fun to watch the dough change as I hand knead. It will be slightly tacky to start and that's ok. Just keep kneading until it morphs into a smooth, elastic ball.
  • Spray your bowl with non-stick spray and spray the top of the dough too. Cover with plastic wrap and let rise for 20 minutes in a warm area of the kitchen. I like to put mine in the microwave because it's pretty toasty in there. The dough should rise during this time. It won't quite double, but you'll notice the rise.
  • Remove the dough from the bowl and portion into 6, ~4.25 oz pieces. Roll these into a ball by cupping your hand over the dough and lightly rolling across the surface of the counter. Then press the dough down into about a 1-inch thick disc. This will give the rolls a good shape for sandwiches. Place discs onto a sheet pan lined with parchment paper (or sprayed with non-stick oil.)
  • Cover with plastic wrap and let the rolls rise for another 20 minutes. During this rise, preheat your oven to 350F.
  • Whisk together egg and cream. Uncover your rolls and brush each one with a good coating of egg wash. Sprinkle with sesame seeds and flaky salt.
  • Bake in the middle rack of the oven for 25 minutes until golden brown.
  • Cool for at least 15 minutes. These will last for about 5 days bagged in plastic.

1 tablespoon instant dry yeast
2 tablespoons sugar
1 teaspoon salt
3 tablespoons butter (softened)
1 large egg
3-4 cups all purpose flour

Steps:

  • In a large stand mixer, combine milk, yeast, sugar, salt, butter, egg and 3 cups flour. Knead on low until a smooth dough ball forms, adding more flour ¼ cup at a time to achieve desired texture. Your dough should be tacky, but not sticky.
  • Transfer dough to a lightly greased mixing bowl, cover with a towel, and let rise until double in size, about 1 hour.
  • Roll dough into a large rectangle, about 1/4 inch thick, and 24 inches wide. Cut the dough into 4 strips, about 6 inches wide on each.
  • Roll strip up. Continue rolling gently until ends and seams are pinched together (otherwise it'll unroll in the baking process).
  • Put rolls on a lightly greased jelly baking sheets. Let rise about 30 minutes.
  • Preheat oven to 375 degrees. Bake rolls for 12-15 minutes until lightly browned.

  • The Starter:
  • Mix the starter ingredients together until smooth, cover, and let rest at room temperature overnight.
  • Combine all of the dough ingredients and mix and knead them together -- by hand, mixer or bread machine, until you've made a soft, somewhat smooth dough; it should be cohesive, but the surface should still be a bit rough. Allow the dough to rise, covered, for 3 hours, gently deflating it and turning it over after 1 hour, and again after 2 hours.
  • Turn the dough out onto a lightly greased or floured work surface. Divide it into 12 pieces, shape the pieces into balls, and firm them up by rolling them under your lightly cupped fingers on an unfloured work surface. Place the rolls on a parchment-lined baking sheet, cover them, and let them rise for 1 1/2 to 2 hours, until they've doubled in size. Refrigerate them for several hours, or overnight.
  • Remove the rolls from the refrigerator, and brush them with a wash made of 1/2 cup water mixed with 1 tablespoon egg white (you won't use up all the wash). Slash a 1/4-inch deep cut across the top of each roll, and bake them in a preheated 425°F (220°C) oven for 20 to 25 minutes, until they're a deep golden brown. Remove them from the oven, and cool on a wire rack. For an extra-crisp crust, allow them to cool in the turned-off, door-propped-open oven.
  • Yield: 12 rolls.

  • Warm milk to around 110 degrees F. I like to do this by placing milk in a microwave safe bowl and microwaving it for 40-45 seconds. It should be like warm bath water.
