STUFFED CABBAGE SOUP
I love this soup because it tastes just like stuffed cabbages without all the hard work of stuffing the cabbages. So simple and all in 1 large pot!

Steps:
- Heat oil in a large pot over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add coleslaw mix and onion; cook for 4 minutes. Add broth, tomatoes, water, brown sugar, lemon juice, and salt.
- Bring mixture to a boil, add rice, and reduce heat to medium-low. Cover and let simmer until rice is tender, about 45 minutes.

MOM'S CABBAGE SOUP
On rainy days, I often want comfort food-something to warm my belly and my soul! This very easy cabbage soup recipe is something my mother would make for me on days just like this. Her version has a ham hock, but you can use kielbasa instead, or go no-meat, the way I did.

- For the soup: Heat the olive oil in a stockpot over medium heat. Add the onion, celery, carrots and garlic and cook, stirring often, until the onions are translucent (not browned), about 8 minutes. Add salt, black pepper and crushed red pepper flakes to your desired preference. Then stir in the fresh tomatoes, canned tomatoes and vegetable stock and bring the entire mixture to a boil.
- Once boiling, stir in the cabbage and beans and keep it simmering, stirring occasionally, until the cabbage is tender, 35 to 40 minutes. Add more stock or water if you prefer more liquid and taste and season with more salt and pepper, if necessary. When finished, sprinkle over and stir in the parsley for color and flavor.
- Ladle the soup into bowls and serve with crostini or garlic bread, if desired.
- For the crostini: Preheat your oven to 350 degrees F.
- Place the bread slices on a baking sheet. Brush the tops with olive oil. You can also smear minced garlic over the top, if desired.
- Bake until crunchy and golden brown, 15 to 20 minutes. Take the crostini out of the oven, drizzle the tops with olive oil and sprinkle sea salt over the top.
UNSTUFFED CABBAGE ROLL SOUP
This recipe came about after a failed casserole recipe turned into an amazing soup! Who says failure is a bad thing? You could even make this vegetarian/vegan by changing the meat to a veg friendly option and using a veg broth. Hope you enjoy this too!

- Saute onion and garlic in a large skillet for about a minute. Add meat and cook, stirring often, until meat is no longer pink. Drain well and return to pan.
- Meanwhile, remove tough outer leaves from cabbage & remove core. Shred cabbage if not using a bag of shredded cabbage.
- Add cabbage into pan and saute with the meat just until the cabbage begins to soften.
- Add remaining ingredients and bring to a boil. Reduce heat and allow to simmer until rice is done. You can keep this on low for a long time if you like or even toss everything into a crock pot and keep on low.
- To serve, ladle into bowls and garnish with a dollop of sour cream if desired. Remember- whoever finds the bay leaf is the lucky one! Just do not eat it!

- Cook and stir ground beef in a Dutch oven over medium-high heat until browned and crumbly, 5 to 7 minutes. Use a slotted spoon to remove ground beef to a bowl. Drain and discard all but 2 tablespoon grease.
- Add onion, carrots, and celery to the Dutch oven and cook over medium heat until softened, 3 to 5 minutes. Stir in tomatoes, tomato paste, garlic, salt, and pepper until well blended. Add cooked beef, beef broth, and rice and bring to a soft boil.
- Stir in cabbage and bay leaf. Cover and simmer until cabbage is tender, 20 to 30 minutes.

SUPER EASY LAZY STUFFED CABBAGE CASSEROLE
Tastes like the real thing without all the work. Took the idea from recipe & comments from recipe # 72409 and made some changes and came up with this dish. It was a surprisingly good and a super easy one dish meal.

Steps:
- Preheat oven to 350.
- Spray 13 x 9 pan with Pam.
- Mix Tomato soup, 1/2 soup can of water and diced tomatoes together in a bowl until blended.
- Place a layer of chopped cabbage on bottom of pan (about 1/2).
- Put 1/2 of chopped onions over cabbage.
- Crumble 1/2 of raw Ground Sirloin over onions and cabbage.
- Season with Salt, Pepper and Garlic Powder.
- Sprinkle 1/2 of Uncooked rice over this layer.
- Pour 1/2 of Tomato mixture over this layer.
- Repeat layers, ending with Rice and tomato mixture on top.
- Cover with foil.
- Bake for 1 hour covered, uncover and bake until liquid is reduced to your personal taste.
- We like ours with some juice.
- Served with fresh baked bread and butter, great comfort food on a cold (for Florida) night.
