CLASSIC HOT CHOCOLATE

Steps:
- Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
- Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.

- Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

- Combine sugar and cocoa in a medium-size saucepan; blend in hot water. Cook over medium heat, stirring constantly, until mixture boils. Allow mixture to boil 2 minutes, stirring constantly.
- Add milk and heat to serving temperature (do not boil). Remove from heat and add vanilla extract.

I got this out of the cookbook Honest Pretzels, by Mollie Katzen. It really IS the best hot cocoa ever. There is also a recipe for whipped cream, you might want to make it before the cocoa.

Steps:
- ***DO NOT TURN ON FIRE UNTIL IT SAYS SO***.
- Put 2 tablespoons chocolate chips plus 1/2 tsp sugar into a small saucepan.
- Pour the milk into a 2-cup measuring cup until it reaches the 1 1/2 cup line.
- Slowly pour the milk into the saucepan.
- Add vanilla extract.
- Put the pan on the stove and turn heat to medium.
- Stir slowly (important!) with a wooden spoon as the milk heats up. the chocolate chips will slowly begin to melt. (It takes about 5 minutes to reach the right temperature. keep stirring constantly and be patient, DO NOT LET IT BOIL!).
- It will be brown all the way through and the chips will be melted and milk hot when it is ready.
- When it's ready take the cocoa off the stove and slowly pour it into 1 or 2 mugs.
- Serve plain, or with a little whipped cream (recipe follows) or cinnamon on top.
- ***WHIPPED CREAM***.
- Get out large bowl and a whisk.
- Put the cream, vanilla, and powdered sugar in a bowl. Beat strongly but not too fast with a whisk. It's best to take turns with someone, so your arms won't get tired.
- When it gets nice and puffy but is still soft, it's ready.
- It can keep in a covered container in the refrigerator, it keeps up to 2 days. but the sooner you use it, the better.

- Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.
- Bring cocoa mixture to a simmer over medium-high heat, stirring constantly, about 2 minutes; stir milk and 1/2 cup half-and-half into water mixture. Cook and stir just until hot, about 2 minutes. Remove saucepan from heat; stir in remaining half-and-half and vanilla extract.

- Combine ingredients in large bowl.
- Working in two batches, pulse ingredients in food processor until chocolate is finely ground.
- Store in airtight container for up to 3 months.
- Too make hot cocoa, stir 1/3 cup of the mix into 1 cup of hot (not boiling) milk.
- Top with whipped cream or mini marshmallows and a little chocolate powder. I sometimes use cinnamon or nutmeg powder, instead. A little brandy and a crackling fire make for a real treat!

- In a saucepan over medium heat, pour in the whole milk and heavy cream. Add the white sugar, dark brown sugar, cocoa powder and vanilla extract.
- Heat the mixture until it warms to serving temperature, whisking frequently. The ideal serving temperature for warm drinks is 160-185 degrees. The mixture will hit this temperature range before simmering.
- If desired, rim the glasses with chocolate fudge, chopped pecans and cacao nibs and top with whipped cream or marshmallows. Pour into mugs and serve. Enjoy!
