2 large eggs, lightly beaten
1 tablespoon water
2 cups panko bread crumbs
¼ cup grated Parmigiano-Reggiano cheese
2 eggplants, peeled and sliced into 1/2-inch rounds
1 (16 ounce) container ricotta cheese
½ cup chopped fresh basil
1 large egg, lightly beaten
¼ cup grated Parmigiano-Reggiano cheese
1 ½ teaspoons minced garlic
½ teaspoon crushed red pepper
¼ teaspoon salt
1 (24 ounce) jar marinara sauce
1 yellow bell pepper, diced
1 green bell pepper, diced
¼ teaspoon salt
8 ounces thinly sliced mozzarella cheese
¾ cup finely grated Fontina cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat 2 baking sheets and a 9x13-inch baking dish with cooking spray.
  • Stir together 2 eggs and water in a shallow dish. Combine panko and Parmigiano-Reggiano cheese in a second shallow dish. Dip eggplant slices in egg mixture and dredge in panko mixture, pressing gently to adhere and shaking off excess. Place on prepared baking sheets.
  • Bake in the preheated oven until golden, turning once and rotating baking sheets after 15 minutes, about 30 minutes total.
  • Combine ricotta cheese, basil, 1 egg, Parmigiano-Reggiano, garlic, red pepper, and salt in a bowl to make filling.
  • Spoon 1/2 cup marinara sauce into the prepared baking dish. Layer 1/2 the eggplant slices over sauce and sprinkle with 1/8 teaspoon salt. Top with 3/4 cup marinara sauce. Spread 1/2 the ricotta mixture on top; add 1/2 the yellow and green bell peppers and top with 1/3 the mozzarella cheese and 1/4 the Fontina cheese. Repeat layers, ending with 1 cup marinara sauce. Cover tightly with aluminum foil coated with cooking spray.
  • Bake in the preheated oven for 35 minutes.
  • Remove aluminum foil; top with remaining mozzarella cheese and Fontina cheese. Continue baking until sauce is bubbly and cheese melts, about 10 minutes more. Cool 10 minutes before serving.

This is a relatively simple vegetarian lasagna that has a sweet taste, and has a fabulous flavour. It's a great dish, totally delicious and even kids who are a little unsure of vegetables are won over by this.

900 g eggplants (about 3)
coarse cooking salt
1 large brown onion, chopped finely
4 garlic cloves, crushed
3 large tomatoes, chopped coarsely
2 tablespoons tomato paste
1/4 cup shredded fresh basil leaf
1 tablespoon low-fat margarine
2 medium leeks, chopped finely
2 tablespoons sugar
4 sheets fresh lasagna noodles
1 cup grated low-fat cheddar cheese

Steps:

  • Cut eggplants lengthways into 1 cm slices; place slices on colander, sprinkle with salt,stand 30 minutes. Rinse slices under cold water, drain on absorbent paper. Cook eggplant in batches, in heated oil large pan until softened and browned both sides.
  • Cook onion and half the garlic in the same pan, stirring, until onion softens.
  • Stir in tomato, paste and basil; simmer, uncovered, about 20 minutes, or until thickened slightly. Blend or process tomato mixture until just combined.
  • Heat margarine in same pan, add leek and remaining garlic; cook, stirring, until leek is soft. Add sugar; cook, stirring, about 5 minutes or until leek is browned lightly, remove from heat.
  • Cut 1 lasagne sheet to cover base of oiled deep 19cm square ovenproof dish; place in position.
  • Top with 1/4 of the eggplant, 1/4 of the leek mixture,1/4 of the tomato mixture and 1/4 of the cheese.
  • Repeat layers 3 times, ending with cheese. Bake, uncovered, in moderately hot oven 50 minutes.
  • Can be made ahead to this stage. Cover, refrigerate until required. Reheat in moderate oven about 50 minutes.

1 teaspoon olive oil for brushing
2 eggs
2 tablespoons water
1 cup grated Parmesan cheese
1 cup Italian-seasoned breadcrumbs
salt and ground black pepper to taste
2 large eggplants, peeled and sliced into 1/2-inch rounds
2 tablespoons olive oil
1 pound ground beef
48 ounces chunky tomato sauce (such as Prego®)
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Oil 2 baking sheets and a 9x13-inch baking dish with 1 teaspoon olive oil.
  • Whisk eggs and water together in a shallow dish. Combine Parmesan cheese, bread crumbs, salt, and ground black pepper in a separate shallow dish.
  • Dip eggplant slices into egg mixture, then press each gently into bread crumb mixture. Gently tap off any excess crumbs. Arrange slices on the prepared baking sheets.
  • Bake eggplant slices in the preheated oven until tops are golden brown, 20 to 25 minutes. Flip eggplant and bake an additional 20 to 25 minutes.
  • Remove eggplant from the oven and increase temperature to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons olive oil in a skillet over medium-high heat and stir in ground beef. Season beef with salt and ground black pepper. Cook and stir until beef is browned and crumbly, about 10 minutes. Drain excess grease. Stir tomato sauce into ground beef; bring to a simmer and set sauce aside.
  • Place 1/3 of the eggplant slices on bottom of the dish. Pour 1/3 of tomato sauce with ground beef on top of eggplant layer. Sprinkle 1/3 of mozzarella cheese on top of sauce layer. Repeat 2 more times, finishing with a layer of mozzarella cheese.
  • Bake in the preheated oven until cheese is melted and sauce is bubbling, 10 to 15 minutes. Cool for 5 minutes before slicing.

I selected this lasagna because of it's ease to fix, satisfying to almost anyone, and I know that is nutritionally good. This dish can be divided into portions and frozen for later on. I serve a simple salad on the side along with garlic bread.

2 eggplants, sliced thin
3/4 cup flour
salt and pepper
cooking spray (olive oil would be ideal)
1 (8 ounce) can tomato sauce
2 (15 ounce) cans tomatoes, drained and chopped
1 tablespoon finely chopped oregano
1 -2 tablespoon basil
2 garlic cloves, crushed or 1 -2 teaspoon garlic powder
1 (8 -16 ounce) container ricotta cheese
2 -3 teaspoons chives
1 beaten egg
1/2 cup mozzarella cheese (grated or chopped)

Steps:

  • Preheat oven 350 degrees fahrenheit.
  • Mix salt, pepper and flour in a dish.
  • Dip eggplant slices into flour mixture.
  • Cover bottom of a fry pan with cooking oil spray.
  • Fry slices of eggplant until light brown on both sides over low-medium heat careful not to burn them.
  • When ready, remove from pan on paper towels to drain and set aside.
  • In a bowl combine the tomato sauce, tomatoes, oregano, basil, and garlic.
  • In another bowl combine ricotta cheese, chives, and the beaten egg.
  • Spoon one third of the tomato mixture into the bottom of a lasagne or casserole dish.
  • Place a layer of eggplant and cover with part of the grated cheese (about half).
  • Add a layer of ricotta cheese.
  • Continue alternating layers of ricotta cheese mixture, eggplant, and grated cheese.
  • Bake for aproximately 45 minutes to an hour.
  • Let cool for ease of slicing.
  • After dish is cool, portions can be sliced and frozen.
  • When ready, place frozen lasagne in a dish and bake in microwave covered with a paper towel till hot (maybe 4-5 minutes).
  • It can also be baked in a preheated oven at 350 degrees fahrenheit for aproximately 20 minutes or more.

  • Preheat oven to 400°F. Cut eggplant into 12, (3/8-in.-thick) slices. Arrange eggplant on a wire rack set in a rimmed baking sheet. Bake in preheated oven until slightly dried out, about 15 minutes. Set aside. Bake in 2 batches, if necessary.
  • Heat a large skillet over medium-high. Add beef to skillet; cook, stirring occasionally to break up chunks, until well browned, 7 to 8 minutes. Add onion, bell pepper, garlic, salt, black pepper, and crushed red pepper; cook, stirring occasionally, until tender, about 4 minutes. Stir in marinara. Reduce heat to medium; cook, stirring occasionally for 10 minutes. Remove from heat.
  • Spread 1/2 cup meat sauce in bottom of a greased 13- x 9-inch glass baking dish. Arrange 3 pieces of eggplant in a single layer over sauce. Top with 3/4 cup meat sauce, 1/2 cup ricotta mixture, and 4 ounces of shredded mozzarella. Repeat layers 3 more times. Top with fresh mozzarella pieces, and sprinkle with thyme. Cover with aluminum foil, and bake at 400°F for 45 minutes. Remove foil, and bake until top is browned, another 30 to 35 minutes. Remove from oven, and let stand 15 minutes before cutting.
