Cabbage and noodles, cooked with bacon, is comfort food supreme, great for a chilly day.

Number Of Ingredients 6

1 (8 ounce) package egg noodles
3 tablespoons butter
½ pound bacon
1 onion, chopped
1 small head cabbage, chopped
1 dash garlic salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the egg noodles; return to a boil. Cook, uncovered, stirring occasionally, until the noodles are cooked through, but still firm to the bite, about 5 minutes. Drain; return to the pot and stir in the butter.
  • Meanwhile, place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Place the onion into the skillet with the bacon grease, and cook and stir over medium heat until the onion begins to soften, about 2 minutes. Stir in the cabbage, and cook and stir until wilted, about 5 minutes. Chop the bacon, add it to the skillet, and cook until the cabbage is tender, about 10 minutes. Stir in the noodles, and continue cooking just until heated through.

A great side dish or a meal on its own. This is a Polish/Hungarian dish. Can use bacon but I cut back on that to make it meatless. Also can garnish with poppy seeds. Adding peas for color and nutrition. Bacon is a yummy addition for those that eat meat. Just brown drain most of the fat then add butter and oil and brown onions. Be sure to give the onions a nice brown color using a med high heat.

1 -1 1/2 lb cabbage, shredded (about 1/2 head)
16 ounces egg noodles, cooked according to directions on package
2 large onions, diced
salt and fresh cracked black pepper, lots and lots and I mean LOTS
1/4 cup salted butter
4 tablespoons olive oil
1 cup green peas, frozen

Steps:

  • Melt butter and olive oil in pan over med high heat.
  • Saute onions till golden brown, 5-10 minutes.
  • Add cabbage cook till soft, 15 minutes.
  • Mix in noodles and frozen peas; season with lots and lots of pepper and salt to taste. (Key here is lots of pepper.).
  • Cook 2 minutes and serve.

Cabbage and Noodles (Healthy Version) image

This is a healthier version of the classic Eastern European dish from "Skinny Chef" Jennifer Iserloh. It has cottage cheese for extra protein and is hearty winter fare!

1 lb spaghetti or 1 lb linguine
1/2 small head savoy cabbage, outer leaves removed and shredded (about 3 cups)
1/4 cup olive oil
2 tablespoons margarine
1 lemon, zested and juiced
1 tablespoon balsamic vinegar
1 cup low fat cottage cheese
1/4 cup parmesan cheese, grated
1 -2 teaspoon sugar
1/2 teaspoon salt, to taste

Steps:

  • Cook the pasta one minute less than the package directions indicate. Reserve one cup of the cooking water, drain the pasta, and set aside.
  • Heat the olive oil in a large, heavy skillet over medium heat. Add the margarine to the hot oil. When the margarine foams, add the cabbage and sprinkle with salt. Over medium heat, sauté the cabbage until it begins to soften, but does not brown (about 10-15 minutes). Add the lemon zest and vinegar, cooking an additional 2 minutes until the zest becomes fragrant.
  • Over low heat, fold in the pasta, a little of the pasta water, the cottage cheese, and lemon juice. Sprinkle with the sugar and season with salt to taste. Add additional pasta water if the mixture is too dry. Serve immediately.

I came up with this one because it's fast---no chopping cabbage. And it's colorful because of the carrots in the cole slaw mix. Cook time is for noodle boiling.

2 (12 ounce) bags pre-shredded coleslaw mix
16 ounces extra-wide egg noodles
1/2 cup butter
1 medium sweet onion, chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook egg noodles according to package directions; drain.
  • In a large skillet, melt butter and saute cole slaw mix, onion and garlic until tender. Mix in salt and pepper. Gently stir in cooked and drained noodles. Toss together.

  • To cut cabbage: Cut the cabbage in half. Cut each half in half again, so you have 4 quarters. Cut down at a diagonal to remove the core from each quarter. Slice each quarter into strips, about 1/3" each. (See how-to video below in recipe Notes.)
  • Heat large sauté pan over medium-high heat until very hot. Add fat, then cabbage and sea salt. Sauté for 5 minutes; then turn heat to low and cover for 5 minutes.
  • In a large mixing bowl: Sprinkle coconut aminos, herbs, sea salt and optional ginger/pepper over ground meat. Mix it into the meat; but don't over-mix. Form meatballs, whatever size you like. I prefer large meatballs (about 1"+ in diameter) because they remain moist inside and they're faster to make.
