This is a wonderful little cake you can use with either fruit or ice cream. It's also great by itself. I love it because I always have the ingredients on hand for a fast dessert.

1 1/2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla extract

Steps:

  • In a mixing bowl, combine flour, sugar, baking powder and salt. Add milk, oil, egg and vanilla; beat for 1 minute. Pour into greased 9-in square baking pan.
  • Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack
  • Serve with fruit or ice cream if desired.

This decadent dessert gets a little kick from coffee, which naturally enhances the cake's rich, chocolate flavor.

1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon white or cider vinegar
1/2 teaspoon vanilla
1 cup cold strong brewed coffee or cold water
Ice cream or whipped cream, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and side of 9-inch round pan or 8-inch square pan with shortening; lightly flour.
  • In medium bowl, mix flour, sugar, cocoa, baking soda and salt. In small bowl, stir oil, vinegar and vanilla until well mixed. Vigorously stir oil mixture and coffee into flour mixture about 1 minute or until well blended. Immediately pour into pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Serve warm or cool with ice cream.

1 c sugar
2/3 c milk
1/3 c canola oil
1 egg
1 tsp vanilla extract
1 1/2 c all purpose flour
2 tsp baking powder
1/2 tsp salt
BUTTERCREAM ICING
1/4 c butter (softened)
1/4 c shortening
3 c confectioners' sugar
1/2 tsp vanilla extract
1 - 2 Tbsp milk (1 to 2 depending on consistency that the icing is taking)

Steps:

  • 2. In a large bowl, beat the sugar, milk, oil, egg, and vanilla until well blended.
  • 3. Combine the flour, baking powder, and salt.
  • 4. Gradually add to sugar mixture until blended.
  • 5. Pour into a greased 9 -in square baking pan. Bake at 350 degrees for 30 - 35 minutes or until a toothpick inserted near the center comes out clean.
  • 6. Cool on a wire rack. Serve with fruit or ice cream if desired. Can make about 8 - 9 servings.

9 slices pineapple in juice (from 20-oz can), drained
9 maraschino cherries without stems, if desired
1 1/3 cups Gold Medal™ all-purpose flour
1 cup granulated sugar
1/3 cup shortening
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg

Steps:

  • Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
  • In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  • Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm. Store cake loosely covered.

1 1/2 cups flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup soft shortening
2/3 cup milk
1 teaspoon flavoring
1 egg

Steps:

  • First put dry ingredients into mixing bowl. Then add shortening and half of the milk. Mix until blended but not too much. Then add remaining milk, egg, and the flavoring. Mix until just smooth. It will come together nicely. Pour into greased and floured pan (I like to use Professional Pan Coating recipe number 78579. Nothing sticks when you use that to coat your pans!) Bake in 350 degree oven.
