Steps:
- Place the chocolate and butter in the top of a double boiler and melt until smooth. Cool slightly, until just warm to the touch.
- Preheat the oven to 350 degrees F. Butter the inside of a 9-inch springform pan.
- Place the egg whites in a medium bowl with the salt. Place the yolks in a slightly larger bowl with the granulated sugar. Using a handheld mixer, beat the whites on medium speed until stiff peaks form, about 2 minutes. Then beat the egg yolks on medium speed until light, pale and fluffy, about 1 1/2 minutes. Using a rubber spatula, stir the chocolate mixture, almond flour and vanilla into the yolks. In 2 batches, fold the whipped whites into the chocolate base. Pour the mixture into the prepared pan and bake until puffed and beginning to crack on top, about 40 minutes. Cool completely on a wire rack.
- When cool, run a thin knife around the edge of the pan to release the cake. Remove the outside ring and dust the top with confectioners' sugar.
CEBU TORTA MAMON CAKE RECIPE
Cebu Torta Mamon Cake Recipe - A "Torta Mamon" is a famous traditional Filipino muffin-like coffee cake popular in Cebu province. Cebuanos usually prepare this as a breakfast treat, a snack, or as a dessert.

- Line molds with paper liners, but if you don't have you, you can use wax paper and grease it lightly and set aside. Separate eggs and whisk egg yolks until smooth and set aside the egg whites for another recipe, such as Angel food cake, Meringue, Lengua de Gato, Sylvanas, and others.
- Preheat your oven at 350F.
- Boil the coconut juice and sugar over low heat for 5 minutes and add in the star anise to infuse in the syrup at the last minute, set aside to cool.
- In a bowl, sift over the flour, baking powder, and salt together until well mixed and set aside.
- In a mixing bowl, cream the butter until smooth and pale and add in the egg yolks and mix for a minute.
- Add the oil, coconut syrup, and condensed milk while continuously mixing.
- I don't want to waste the condensed milk left in the can, so I pour the fresh milk into the can and scrape all sides and stir, then add into the mixing bowl.
- Lastly, add the flour mixture and whisk until incorporated, but don't overbeat the batter.
- Pour the batter into the prepared molds, or divide the batter using an ice cream scoop to yield a dozen of Cebu Torta Mamon.
- Bake in a preheated oven at 350F for about 18-25 minutes or until a toothpick inserted comes out clean.
- Let it cool just enough you can handle it, then brush with margarine or butter lightly on top and sprinkle with caster or refined sugar on top and let it cool on a wire rack.

- Preheat an oven to 350 degrees F (175 degrees C).
- Stir the yucca, eggs, evaporated milk, sweetened condensed milk, and coconut milk together in a bowl until thoroughly combined; pour into a baking dish.
- Bake in the preheated oven for 1 hour. Switch the oven's broiler on and bake under the broiler until the top of the cake is browned, 2 to 3 minutes. Cool completely in refrigerator before serving.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
- Combine cake mix and pudding mix.
- In another bowl beat eggs, water, oil and rum until frothy. Add cake mix/pudding mixture and beat until well mixed. Spread pecans evenly over the bottom of the prepared pan and pour batter over pecans.
- Bake cake at 325 degrees F (165 degrees C) for 60 minutes or until a toothpick comes out dry when inserted in the center. Allow to cool in pan for 5 minutes and remove from pan. Place in serving dish immediately, right side up. (Pecans should be on the bottom)
- To Make Glaze: During the last 15 to 20 minutes of baking time, combine butter or margarine, water and sugar in a sauce pan and bring to boil over high heat. Reduce heat to medium and boil rapidly until it's very thick and syrupy stirring very frequently. The syrup must be reduced quite a bit and very thick otherwise it will make the cake mushy. Remove from heat and add rum. While cake is still hot, poke holes all over top of cake with a toothpick and spoon glaze over top of cake. Allow cake to sit at room temperature for one day then refrigerate.

- 3. Add flour alternately with milk then add vanilla.
- 4. Line muffin tins with muffin cups and bake for 20-25 min at 350 degrees (pre-heated oven)
- 5. Let the muffins cool completely and roll tops on sugar
- 6. Note: The tins I used are traditional muffin tins used for this recipe which can be purchased from Oriental stores.
