ANGEL BISCUITS
These heavenly Angel Biscuits are lighter than air with a fluffy, soft interior that melts in your mouth. This angel biscuit recipe is a cross between dinner rolls and buttermilk biscuits - so easy to make! Truly the perfect side dish for breakfast or dinner!

Steps:
- In a large bowl, whisk together flour, sugar, baking powder, salt, baking soda and yeast.
- Cut in the butter and shortening using a pastry knife or work it in with your hands just until pea sized pieces of butter remain.
- Add the buttermilk and stir just until combined.
- Transfer the dough to a well floured surface and pat it out into a square that's about 1 inch thick. Fold the square in half and pat it out again. Rotate the dough and fold in half again and pat out again until 1 inch thick.
- Use a 2 or 2 ¼ inch biscuit cutter, dipped in flour, to cut out the biscuits. Don't twist the biscuit cutter, just push down and pull up.
- Place biscuits on a parchment lined baking sheet or cast iron skillet and cover with plastic wrap or a light towel. Let rest for 30 to 60 minutes.
- Preheat oven to 425°F. Brush melted butter on the top of the biscuits and bake for 15 to 20 minutes or until golden brown and cooked through. Brush the hot biscuits with additional melted butter and serve immediately.

PERFECT HOMEMADE BISCUITS

- Preheat oven to 450 degrees.
- The secret to excellent biscuits is COLD BUTTER. Really cold. Many times the biscuit dough gets worked so much that the butter softens before the biscuits even go in the oven. Try cutting the butter into small pieces and stick back in the fridge pulling out only when ready to incorporate into the dough.
- Combine the dry ingredients in a large bowl.
- Use a pastry cutter to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
- Add in the milk and egg and mix just until the ingredients are combined. The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
- Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead 10-15 times. If the dough is super sticky just sprinkle on some additional flour.
- Pat the dough out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
- Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
- For extra yumminess, brush the tops of the biscuits with melted butter...

- Preheat oven to 450 degrees F (230 degrees C).
- In a large mixing bowl sift together flour, baking powder and salt. Cut in shortening with fork or pastry blender until mixture resembles coarse crumbs.
- Pour milk into flour mixture while stirring with a fork. Mix in milk until dough is soft, moist and pulls away from the side of the bowl.
- Turn dough out onto a lightly floured surface and toss with flour until no longer sticky. Roll dough out into a 1/2 inch thick sheet and cut with a floured biscuit or cookie cutter. Press together unused dough and repeat rolling and cutting procedure.
- Place biscuits on ungreased baking sheets and bake in preheated oven until golden brown, about 10 minutes.

MOM'S BAKING POWDER BISCUITS
This is the recipe my mom always made. I like to use the butter flavored shortening, but you can use regular. Amount of biscuits you get depends on how big around you make them and the thickness. My daughter likes me to make smaller ones.

- Preheat oven to 450 degrees F (230 degrees C).
- In a bowl mix the flour, baking powder and salt. Add the shortening and mix until in little pieces. Add milk a little at a time and mix until it forms a ball.
- Roll out on floured board to 1/4 inch to 1/2 inch thick. Cut out in desired size and dip in melted shortening. Place biscuits on an ungreased baking sheet.
- Bake at 450 degrees F (230 degrees C) for 12 to 15 minutes.
- Variation: For shortcakes add 2 tablespoons for sugar to the dough and roll dough out to 1/2 inch thick.

MOM'S HOMEMADE BISCUITS
My mom made these when I was growing up by just throwing everything into a bowl with no measuring. We liked them so much that we all needed the recipe so after several tries this is her recipe and they are great. Very delicate biscuit, do not roll with rolling pin just flour board and use hands to press dough out about 1 inch thick and then cut .

- Mix together flour, sugar and salt. Add baking powder and then cut in shortening with pastry blender until thoroughly incorporated.
- Add milk and mix only until a soft dough forms. Dough may be slightly sticky but that is normal.
- Generously flour counter or board and transfer dough on top dusting with a small amount of flour if dough is sticky. Pat dough out with hands till about 1 inch thick and cut with biscuit cutter or large glass dipped in flour. Place on baking sheet about 1 1/2 inch apart. Bake 425 degrees for 12 to 15 minutes or until golden brown.
- Note: Do not roll out with rolling pin as that will make for harder biscuits.

- Preheat oven to 450 degrees.
- For 9 thicker biscuits, grease a square 8" or 9" pan. For 12 biscuits, grease a 10x13 pan.
- Sift dry ingredients. Cut in shortening with pastry cutter or with a fork.
- When shortening is incorporated, add buttermilk and mix with a fork, being careful not to overmix.
- Sprinkle flour on dough board. Knead dough until smooth, no more than 8-10 times.
- For 12 biscuits, roll dough to about 5/8" thick. For 9 biscuits (8x8 pan) roll dough to about 1" thick.
- Place in pan and bake for about 15 minutes, or until done. You can brush with melted butter before cooking if you like.

I learned how to make these Biscuits from my Mom, who was taught my her Mom. I have never found any better. It is important to let your biscuits set before baking. It gives the Baking Powder time to activate and will rise better.

- Place flour, baking powder, salt, sugar into a med. mixing bowl. Stir slightly with fork.
- Add shortening and mix with pastry cutter, or I rub thru my hands, until shortening and flour mixture resemble small peas.
- Add just enough water to form a dough. To much water will make a tough biscuit.
- Lay the biscuit dough out on a floured surface. you can roll the dough to 3/4 inch or I just pat it out to the desired thickness. Cut with biscuit cutter. Place on a heavily greased baking sheet.
- Let Biscuits sit for 20 to 30 minutes before baking in a 375 degree oven for 20 minutes.
