8 medium fresh peaches (about 2 lb), peeled, each cut into 6 wedges
1 cup fresh blueberries
1 tablespoon cornstarch
1/2 cup granulated sugar
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
Dash salt
1 cup Original Bisquick™ mix
1/4 teaspoon ground nutmeg
2 tablespoons milk
2 tablespoons butter or margarine, softened
2 tablespoons granulated sugar
2/3 cup chopped walnuts
2 teaspoons milk, if desired
1 tablespoon coarse sugar

Steps:

  • Heat oven to 400°F. In medium bowl, stir together fruit mixture ingredients; let stand 10 minutes to allow sugar to pull juices from peaches. Transfer to ungreased 8-inch square (2-quart) glass baking dish. Bake uncovered about 10 minutes or until fruit is bubbling. Remove from oven; stir. Bake 10 to 12 minutes longer or until bubbly around edges (fruit must be hot in middle so biscuit topping bakes completely).
  • Meanwhile, in medium bowl, stir all biscuit topping ingredients except 2 teaspoons milk and coarse sugar until firm dough forms.
  • Drop dough by 6 spoonfuls onto warm fruit mixture. Brush dough with 2 teaspoons milk. Sprinkle with coarse sugar.
  • Bake 25 to 30 minutes or until biscuits are deep golden brown and bottom of center biscuit is no longer doughy. Cool 10 minutes on cooling rack. Serve warm.

Quick & easy to put together for a last minute dessert. Served warm with Ice Cream it is comfort food desert at it's best. Got the recipe off a box of Bisquick years ago and tweaked it to my personal tastes.

1 cup Bisquick
1 cup milk
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/2 cup butter, melted
1 cup white sugar
1 (29 ounce) can peach pie filling
1/2 cup fresh blueberries, if using frozen, do not thaw
1 tablespoon cinnamon sugar

Steps:

  • Preheat oven to 375; 350 for glass.
  • While oven is preheating, put butter in 8 x 8 x 2 pan, place pan in oven to melt the butter. Keep close watch so that it doesn't burn.
  • Mix together Bisquick, Milk, Nutmeg and Cinnamon.
  • Remove pan with melted butter from oven, pour batter over melted butter. Stir Lightly just to mix all together.
  • Pour Peach Pie filling evenly over batter mixture and then sprinkle Blueberries over top of Peach Pie Filling, DO NOT STIR!
  • Sprinkle Cinnamon Sugar over the top of everything, if you need more than one TBSP it is ok, but be careful that the cinnamon doesn't overwhelm the taste the fruit.
  • Bake for 45-55 minutes or until golden brown.

Blueberry cobbler is delicious bubbling oozing blueberry syrup covered with crispy baked crust. This blueberry cobbler is an awesome dessert recipe which satisfies sweet craving really well.

3 tablespoon butter (softened (substitute with vegan butter))
1/4 cup brown sugar
1/4 teaspoon vanilla
3 tablespoon all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cups blueberries (thawed if frozen)
1/2 teaspoon lemon juice

Steps:

  • Preheat oven at 375 degree Fahrenheit for 15 minutes. In a mixing bowl combine the softened butter, sugar and vanilla and blend together until well combined. I used brown sugar in this recipe, you can replace it with castor sugar. Then add in the flour, baking powder and salt. Mix everything using a whisk to form a crumbly dough as shown in picture below.
  • Lightly grease an oven safe pan and fill with the berries and drizzle lemon juice all over berries.
  • Then sprinkle the crumble and top it all over the berries. Bake at 375°F for 32-35 minutes, until the berries begin to bubble and the crumble top changes colour to golden brown. To check if it is cooked, insert a knife into the topping and it should come out clean of flour mixture and you will only see blueberry syrup on knife.
  • Let blueberry cobbler cool down to become warm and it is ready to serve. If you are an ice cream lover then you can serve it with any ice cream of your choice. If making it vegan you can serve it with coconut whipped cream or any dairy free ice cream. Enjoy!

4 cups canned sliced peaches with juice
1 cup frozen blueberries
¾ cup all-purpose flour
½ cup white sugar
1 teaspoon baking powder
½ cup butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x9-inch glass baking dish.
