CHEESECAKE PANCAKES
Make restaurant-inspired cream cheese pancakes at home and there's no limit to how many you can have.

Steps:
- Slice cream cheese lengthwise into four pieces. Place on ungreased cookie sheet; cover and freeze 8 hours or overnight.
- Brush griddle or skillet with vegetable oil, or spray with cooking spray; heat griddle to 375°F or heat skillet over medium heat.
- Cut cream cheese into bite-size pieces; set aside. In large bowl, stir Bisquick mix, graham cracker crumbs, sugar, milk and eggs with whisk or fork until blended. Stir in cream cheese.
- For each pancake, pour slightly less than 1/3 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown.
- In small bowl, mix strawberries and syrup; top pancakes with strawberry mixture.

- Heat oven to 350°F. Grease and flour 10-inch angel food (tube) cake pan, 12-cup fluted tube cake pan or 2 (9x5-inch) loaf pans. 2. Beat all ingredients except powdered sugar in large bowl on low speed 30 seconds, scraping bowl frequently. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan. 3. Bake 55 to 60 minutes or until toothpick inserted near center comes out clean. Cool 5 minutes; turn pan upside down onto wire rack or heatproof serving plate. Remove pan; cool cake completely. Sprinkle with powdered sugar. High Altitude (3500-6500 ft) Heat oven to 375°F. Do not use loaf pans. Decrease Bisquick mix to 2 1/2 cups and granulated sugar to 1 1/4 cups. Increase flour to 1 cup. Bake 45 to 50 minutes.
COTTAGE CHEESE PANCAKES - BISQUICK
So many other recipes I've found call for several ingredients or make a lot. I've always made my pancakes much more simply than that. I got this recipe when I was recovering from surgery - they're high-protein and quick and easy. Perfect for a quick breakfast when you don't feel well.

- Grease jelly roll pan. 15 1/2 x 10 1/2 x 1 inch.
- Sprinkle bacon and cheese evenly into bottom of pan.
- Beat remaining ingredients with wire whisk, until well blended.
- Pour over bacon and cheese, spread batter to edges.
- Bake 14 to 16 minutes until light golden brown.
- Cut into 6 pieces, serve immediately.

Steps:
- Prepare the cream cheese glaze by beating the cream cheese, confectioners' sugar, and 1 teaspoon vanilla extract in a bowl until smooth. Thin with 1 tablespoon milk or as needed to achieve a pourable consistency. Set aside.
- Whisk the flour, white sugar, baking powder, cocoa powder, and salt together in a bowl until evenly blended; set aside. Beat the eggs in a separate mixing bowl until smooth. Whisk in 1/4 cup milk with the buttermilk, 1 teaspoon vanilla extract, vinegar, and food coloring. Stir in the flour mixture until moistened. Drizzle in the melted butter, and stir until the butter has incorporated and small lumps of flour remain.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry. Flip, and cook until browned on the other side. Repeat with remaining batter. Drizzle with the cream cheese glaze to serve.
