These aren't your average tots! Loaded with cheese, they're yummy on their own or dipped in your favorite sauce. They freeze well for later use as well!

Steps:
- Bring a large pot of water to a boil. Add whole potatoes; boil until just soft, 15 to 20 minutes.
- Shred potatoes using a food processor. Transfer to a large bowl; allow to cool, about 10 minutes.
- Mix Cheddar cheese, fontina cheese, seasoned salt, garlic powder, and black pepper into potatoes until well combined. Shape 2 tablespoons of potato mixture at a time into thick disk shapes.
- Pour flour into a bowl. Whisk eggs together in a separate bowl. Pour panko into a separate bowl. Roll potato disks in flour, coat with egg, and roll in panko.
- Heat 2 inches oil in a heavy skillet to 350 degrees F (175 degrees C). Fry tots in batches until crispy and golden, about 4 minutes. Cool on a paper towel-lined tray, about 5 minutes. Season with salt.

SHEPHERD'S PIE WITH TATER TOT TOPPING
Steps:
- Preheat the oven to 425 degrees F. Butter a 9-by-13-inch casserole dish.
- Heat the olive oil and 2 tablespoons of the butter in a small saucepan over medium heat until the butter has melted.
- Shred the potatoes and add to a medium bowl. Pour the butter-oil mixture over the potatoes, add 1/2 teaspoon salt and 1/2 teaspoon pepper, and stir to combine. Set aside.
- In a large saute pan over medium heat, melt the remaining 4 tablespoons butter. Add the spring onions and garlic; stir, and cook until the onions are soft and translucent, 3 to 5 minutes. Add the ground beef and cook, stirring occasionally, until browned. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper and the chili powder.
- Add the tomatoes, beef broth and flour. Increase the heat to medium-high and bring the mixture to a boil, stirring occasionally. Reduce the heat and simmer until thickened, 6 to 8 minutes. Reduce the heat further and stir in the peas and Cheddar; cook until the cheese is melted. Transfer to the prepared casserole dish.
- Evenly cover the top of the casserole with the grated potato mixture and sprinkle with the Parmesan. Bake, uncovered, until crisp on top and bubbling, about 20 minutes. Let rest for 5 minutes before serving.
KITTENCAL'S CHEESY SHEPHERD'S PIE
This recipe is a regular in our house and is one of my family's favourite dinners --- I have listed some additions on bottom of the recipe that may be added to the ground beef mixture but that is only optional ---prep time does not include cooking the potatoes

- Set oven to 400 degrees F.
- Grease a 9 x 9-inch or an 11 x 7-inch square baking dish.
- For potato topping; combine half a can of cheddar cheese soup with hot mashed potatoes; set aside.
- In a fry pan brown ground beef with oregano, chopped onion and garlic; drain off fat, then stir in Worcestershire sauce, mushrooms, shredded cheddar cheese and Parmesan cheese.
- Meanwhile cook mixed veggies according to package directions; drain well then add to beef mixture along with the remaining half of cheese soup.
- Add in your choice of additions, then season with salt and pepper to taste; mix to combine and simmer uncovered for about 20-30 minutes over medium-low heat stirring occasionally.
- Spoon meat mixture into greased pan; spread the hot mashed potato mixture evenly over top.
- Bake for 25-30 minutes or until topping is light golden brown.
- Sprinkle 1/3 cup shredded cheddar cheese on top then allow to melt.

Steps:
- Cook potatoes and garlic in boiling water in large saucepan 20 min. or until potatoes are tender. Meanwhile, brown meat in large nonstick skillet. Stir in flour; cook and stir 1 min. Add mixed vegetables, broth and ketchup; cook 5 min., stirring frequently.
- Heat oven to 375°F. Drain potatoes; return to pan. Add sour cream; mash until potatoes are smooth and mixture is well blended. Stir in 1/4 cup cheese.
- Spoon meat mixture into 8-inch square baking dish; cover with potatoes.
- Bake 18 min. Top with remaining cheese; bake 2 min. or until melted.

Steps:
- In a blender add flour, butter, milk, garlic and first amount of oregano.
- Blend ingredients well about 30 seconds.
- Pour mixture into medium pot.
- Heat until thickened and bubbly (about 10 minutes) over medium-high heat stirring constantly.
- Remove from heat and stir in cheese until melted.
- In large pot put potatoes in with enough water to cover and bring to boil.
- Cook until potatoes are soft, about 15-20 minutes.
- Drain, mash well.
- Mash in half of cheese mixture until well mixed.
- Scramble fry beef until well browned, drain.
- Add veggies, Worcestershire sauce, oregano and Maggi and rest of cheese sauce.
- Cook for 5 minutes.
- Put meat mixture into 9x13-inch baking dish and spread evenly.
- Spread potatoes on top of meat mixture and "peak" (like meringue) with back of a spoon or fork.
- Dot potatoes with 2 tbsp of margarine and sprinkle with paprika.
- Bake in 350°F oven for 45 minutes.
- Let rest for 10-30 minutes so meat sets. Mixture will be hot still, it really holds the heat! :).

- Preheat the oven to 450 degrees F (230 degrees C). Arrange potato nuggets in a single layer on a 11x17-inch baking sheet.
- Bake in the preheated oven for 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Melt butter in a stockpot or braising pan over low heat. Add onion, celery, garlic, rosemary, thyme, salt, and pepper. Increase heat to medium-low and cook for 15 minutes, stirring occasionally. Reduce heat to low. Add peas and carrots and corn. Continue stirring occasionally.
- Heat a large skillet over medium heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain fat. Pour beef into the stockpot. Add Worcestershire sauce and mix well. Pour mixture into the prepared casserole dish and level the top. Spread potato nuggets on top.
- Bake in the preheated oven, rotating halfway, until heated through, about 30 minutes. Add cheese on top and bake until cheese melts, about 15 minutes more.

EASY CHEESY SHEPHERD'S PIE
Steps:
- Brown the ground beef and onion. Sprinkle the Oxo into the mixture. Add ketchup and BBQ sauce. Add salt and pepper. Stir to combine all ingredients. While this is browning, prepare both packages of the Butter and Herbs Instant Mashed potatoes - according to box instructions.
- Preheat the oven to Broil. Spread the meat mixture into a lasagna pan. Add the peas/carrots. Spread the instant mashed potatoes over the entire mixture. Spread the grated cheese on top of the mixture.
- Place under the broiler until cheese melts - about 5 minutes.

- NOTE: I prepare and bake this dish all in my cast iron pan. If you don't have a cast iron pan simply use a saute pan to make the meat mixture and transfer to a greased 9 by 9 or 10 by 10 pan (loaf or pie pan also works) and bake it in that.
- In a large cast iron pan (or medium skillet if you aren't using a cast iron pan), heat 2 tablespoons of olive oil on medium-high heat. Add the onions and saute for about 5 minutes or until they are translucent.
