2 large zucchini (about 1-1/2 pounds)
1-1/2 teaspoons ground cumin
3/4 teaspoon salt, divided
1/2 teaspoon smoked paprika
1/2 teaspoon pepper
1/4 teaspoon garlic powder
4 tilapia fillets (6 ounces each)
2 teaspoons olive oil
2 garlic cloves, minced
1 cup pico de gallo

Steps:

  • Trim ends of zucchini. Using a spiralizer, cut zucchini into thin strands., Mix cumin, 1/2 teaspoon salt, smoked paprika, pepper and garlic powder; sprinkle generously onto both sides of tilapia. In a large nonstick skillet, heat oil over medium-high heat. In batches, cook tilapia until fish just begins to flake easily with a fork, 2-3 minutes per side. Remove from pan; keep warm., In same pan, cook zucchini with garlic over medium-high heat until slightly softened, 1-2 minutes, tossing constantly with tongs (do not overcook). Sprinkle with remaining salt. Serve with tilapia and pico de gallo.

Steps:

  • Coat the fish fillets with the spice mixture, and allow to sit at room temperature for no longer than 30 minutes.
  • Over high heat, add oil to skillet, and heat until hot.
  • Cook fillets for about 3 minutes per side, or until fish is opaque and can be flaked with a fork.
  • Remove from the pan.
  • Pour pan juices over them and squeeze lemon juice all over.

1 teaspoon salt
¼ cup olive oil
4 tilapia fillets

Steps:

  • Mix paprika, mango garlic seasoning, cayenne pepper, dried basil, dried thyme, minced garlic, garlic powder, onion powder, and salt together in a bowl.
  • Brush a light coating of olive oil on both sides of fillets. Dredge fillets in seasoning mixture.

3/4 cup grated parmesan cheese

4 tablespoons mayonnaise
4 tablespoons finely chopped green onions
1/2 teaspoon seasoning salt
1/2 teaspoon dried basil
Black pepper (preferably fresh ground) to taste
Few dashes hot pepper sauce (optional)

Steps:

  • 1.Preheat oven to 350 degrees Fahrenheit. 2.Place the fillets and zucchini in a buttered baking dish. 3.Brush the tops with juice. 4.Bake fish in preheated oven 20 to 30 minutes or until fish just starts to flake. 5.Meanwhile, combine the cheese, butter, mayonnaise, onions and seasonings in a bowl.
