These quick hors d'oeuvres may be mini, but their bacon and tomato flavor is full size. I serve them at parties, brunches and picnics, and they're always a hit...even my kids love them. -Kellie Remmen, Detroit Lakes, Minnesota

Yield 20 appetizers.

Number Of Ingredients 6

20 cherry tomatoes
1 pound sliced bacon, cooked and crumbled
1/2 cup mayonnaise
1/3 cup chopped green onions
3 tablespoons grated Parmesan cheese
2 tablespoons snipped fresh parsley

Steps:

  • Cut a thin slice off each tomato top. Scoop out and discard pulp. Invert the tomatoes on a paper towel to drain. , In a small bowl, combine the remaining ingredients. Spoon into tomatoes. Refrigerate for several hours.

The basic classic: bacon, lettuce, and tomato -- nothing fancy, just delicious. (I personally use fake vegetarian bacon these days, and it's still really good!)

4 slices bacon
2 leaves lettuce
2 slices tomato
2 slices bread, toasted
1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

3 slices crisp cooked bacon, chopped
1/4 cup diced tomato
1/2 cup finely chopped lettuce
1/2 cup finely chopped Baby Spinach
1 1/2 tablespoons fat-free mayonnaise
1 pinch salt
1/4 teaspoon black pepper
1 large cucumber
minced parsley or green onion

Steps:

  • Combine bacon, tomato, lettuce and spinach with mayonnaise. Season with pepper; set aside.
  • Peel cucumber. Trim off ends and slice in half lengthwise. Use spoon to scoop out seeds; discard seeds. Divide BLT mixture between cucumber halves, mounding in hollowed areas. Sprinkle with minced parsley, if desired. Cut into 2-inch pieces.
  • Note: Make these snacks when cucumbers are plentiful and large enough to easliy hollow out with a spoon. You may make these up to 12 hours ahead of time and chill until serving.
