BLUE CHEESE BAKED SALMON
A friend mentioned baking salmon with blue cheese at dinner one night. Salmon? Blue Cheese? Sounded YUM to me! I couldn't find an actual recipe here so I came up with my own.

Steps:
- 1. Preheat oven to 375 degrees.
- 2. Place salmon fillets in pan.
- 3. Lightly season both sides with salt and pepper.
- 4. Spoon 1 -2 tablespoons of blue cheese dressing over the top of the salmon. Put enough to cover the top of the fillet.
- 5. Bake for 25 minutes (or until the fish flakes easily) in oven.
- 6. Option using blue cheese crumbles: Bake for 20 minutes, spread the blue cheese crumbles on top and bake another 5 minutes.

BLACKENED SALMON WITH BLUE CHEESE SAUCE

- Preheat oven to 400 degrees F.
- In a small bowl, combine the Italian seasoning, black pepper, paprika, salt, and cayenne. Season each piece of fish with the rub.
- Heat a large skillet over medium-high heat and add the butter and oil. Once the butter has melted, add the fish and cook about 2 minutes per side.
- Transfer the whole pan to the oven and cook for another 4 to 6 minutes.
- For the sauce:
- Place the white wine into a medium saucepan and reduce by half. Add the heavy cream and allow to reduce. Add the blue cheese and whisk until smooth. Serve on top of the salmon.
SLOW-COOKER CREAMY BLUE CHEESE SALMON CASSEROLE
There's no need to heat up the kitchen for this casserole. It takes only 10 minutes to get the scrumptious complete meal started in the slow cooker.

- Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix potatoes, beans, corn, soup, water and pepper.
- Cover; cook on Low heat setting 6 to 7 hours (or on High heat setting 3 hours to 3 hours 30 minutes).
- In 1-cup measuring cup, mix half-and-half and flour with whisk until well blended. Stir into potato mixture in slow cooker. Stir in salmon. If using Low heat setting, increase to High. Cover; cook 15 to 20 minutes longer or until salmon flakes easily with fork. Stir in cheese and chives.

This is such a simple recipe, and it is so delicious! Salmon is baked with garlic and dill, and topped with Cheddar cheese and green onions.

- Preheat oven to 450 degrees F (230 degrees C).
- Place the salmon on a large piece of foil, and season with garlic, dill, salt, and pepper. Seal foil around the salmon. Place on a baking sheet.
- Bake 20 minutes in the preheated oven. Top with Cheddar cheese and green onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.

- Preheat the oven to 450°. Lay the salmon skin side down on a large rimmed baking sheet. Season the salmon with salt and white pepper and dot with the butter. Roast the salmon in the upper third of the oven for 8 minutes, until just starting to brown on top. Remove the salmon from the oven and preheat the broiler. Set the rack 6 inches from the heat.
- In a medium bowl, using a fork, blend the cheese with the dill, shallot, wine and lemon juice. Dot the mixture evenly over the salmon fillet and broil for 10 to 12 minutes, until the salmon is golden brown on top and just cooked through. Transfer the salmon to a very large platter and serve hot with brown bread and butter.

- Skin the salmon fillets. Make an incision in the middle of each one along the length, halfway through its thickness. Cut or form batons from the cheese to fit into the incision in the salmon and press it in.
- Prepare a double layered length of kitchen foil about twice as long as the salmon fillet. Dot some butter in the middle and place a fillet on top of it. Drizzle with a bit of honey, then raise the sides of the foil around the salmon so it sits there like in a boat.
- Close up the edges and fold over along the whole length to seal it well but leave some space inside around the fillet. Do the same with the other fillet for individual papillotes.
