BLUEBERRY LIME QUICK BREAD
This Blueberry Lime Bread is a fun twist on the classic lemon blueberry flavors that everyone loves.

- Preheat oven to 375°F. Grease an 8x4-inch loaf pan and set aside.
- In a medium mixing bowl, whisk melted butter, sugar, lime juice, lime zest and eggs. In a separate bowl, mix together the flour, baking powder, and salt.
- Add the flour mixture to the butter mixture alternately with the Greek yogurt, stirring gently. Fold in the blueberries. Do not over mix.
- Pour into the prepared pan and bake for 20 minutes. At the 20 minute mark, turn the oven down to 350°F. Bake for an additional 30 to 40 minutes.
- Let cool in the pan for 10 minutes. Then remove to wire rack.

- Place the sugar, basil sprigs and 1 cup of water into a small saucepan over medium-high heat. Cook, stirring every so often, until the sugar has dissolved, about 5 minutes. Remove from the heat and let steep for 30 minutes.
- Discard the basil and pour the syrup into a pitcher. Stir in the lime juice and 4 cups of cold water. Add the blueberries and chill for at least 4 hours or until ready to serve.
- To serve, put some ice in a glass, pour over the limeade and garnish with basil leaves. To make into a cocktail, add ice to a rocks glass and top with 1 1/2 ounces gin. Top off with the limeade and garnish with basil.

- Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter and flour a 9- by 5- by 3-inch loaf pan. Set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a large bowl, beat the sugar, oil, eggs and vanilla until blended. Stir in the bananas and blueberries. Add the dry ingredients and stir just until blended.

I was inspired by this shop to blend sweet blueberries and tart lime for a new twist on classic blueberry jam.

- Combine the blueberries, sugar, lime zest, 3 tablespoons lime juice and the salt in a medium saucepan or Dutch oven. Toss well and let stand until the sugar dissolves and the blueberries begin to release their juices, about 15 minutes.
- Bring the mixture to a rapid simmer over medium-high heat. Reduce the heat to maintain a low simmer; cook, stirring often and skimming off any foam, until the blueberries are tender and the juices thicken, about 35 minutes. Add the remaining 1 tablespoon lime juice. Remove from the heat and let the jam cool to room temperature, stirring occasionally, about 1 hour.
- Transfer the jam to a jar or other airtight container. Refrigerate until cold and fully jelled, 3 to 4 hours. Store in the refrigerator for up to 2 weeks.

- Mix flour, baking soda, and salt together in a bowl.

- PREPARE THE FROSTING: Combine blueberries and lemon juice in a saucepan over medium heat. Cook, stirring them constantly and smashing them as you stir. In about 10 minutes you will have a dark blueberry reduction.

- Add in the powdered sugar one cup at a time on low speed. After the sugar is all mixed in, add in the cream and the salt and beat the frosting on high for 2 minutes more. The frosting will be nice and fluffy!
