This decadent gelatin salad is comprised of three luscious layers: ruby red raspberry gelatin spread with a rich cheese cake-like layer and topped with blueberry pie filling.

3 (6 ounce) packages raspberry flavored Jell-O® mix
3 ¼ cups boiling water
1 (.25 ounce) package unflavored gelatin
½ cup cold water
1 cup half-and-half
1 cup white sugar
1 teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
1 cup boiling water
1 (21 ounce) can blueberry pie filling

Steps:

  • In a medium bowl, dissolve 2 packages of the raspberry gelatin in 3 1/4 cups boiling water. Pour into a 9 by 13 inch pan and refrigerate until firm.
  • In a medium saucepan, whisk together unflavored gelatin and 1/2 cup cold water. Whisk in the half and half, sugar and vanilla and cook over medium heat until hot but not boiling. Remove from heat and stir in the softened cream cheese. Spread over the raspberry gelatin layer.
  • In a medium bowl, dissolve the remaining package of raspberry gelatin in 1 cup boiling water. Stir in the blueberry pie filling and pour over the cream cheese layer. Chill until serving.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Mix flour, 1/2 cup sugar, baking powder, and salt in a bowl; mash butter into the flour mixture until crumbly. Stir boiling water into the flour mixture to form a dough.
  • Dissolve cornstarch in cold water in a separate large bowl. Stir blueberries, raspberries, 3/4 cup sugar, and lemon juice into the cornstarch mixture; transfer to a cast-iron skillet and bring to a boil, stirring frequently. 1 quart balsamic vinegar
1/4 cup sugar
Lime peel cut in strips from 1 lime (green part only)
1 (3-inch) cinnamon stick

Steps:

  • In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.
  • Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.
  • Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beef.

1 cup cold whole milk
1/3 cup plus 1 tablespoon sugar
1 cup sour cream

2 cups raspberries
1/4 cup sugar
2 teaspoons fresh lemon juice
Pinch of salt
4 teaspoons unflavored gelatin powder
2 cups blueberries, plus more for sprinkling (about 1 pint)
1/4 cup sugar
Pinch of salt
1 teaspoon fresh lemon juice

Steps:

  • Line a 9-by-5-inch loaf pan with plastic wrap, leaving a 2-inch overhang on all sides.
  • Make the white layer: Sprinkle the gelatin over 1/2 cup milk in a medium bowl. Let stand 2 minutes. Heat the remaining 1/2 cup milk in a small saucepan over medium heat until steaming. Pour over the gelatin mixture and whisk until combined. Add the sugar and whisk until dissolved. Whisk in the sour cream, vanilla and salt until smooth. Pour the mixture into the prepared loaf pan, then lightly tap the pan on the counter to make an even layer. Refrigerate until set, 45 minutes to 1 hour.
  • Make the red layer: Combine the watermelon, raspberries, sugar, lemon juice and salt in a blender; process until smooth. Strain through a fine-mesh sieve into a bowl, pressing the puree through with the back of a spoon. Transfer 1 cup of the puree to another bowl and sprinkle with the gelatin; let stand 2 minutes. Heat 1 cup of the remaining puree in a saucepan over medium heat until steaming. Pour over the gelatin mixture and whisk until combined. Stir in the remaining puree; let cool.
  • Spoon the cooled puree over the white layer; loosely cover with the overhanging plastic wrap. Refrigerate until completely set, about 3 hours.
  • Make the sauce: Combine the blueberries, sugar, salt and 1/4 cup water in a saucepan over medium heat. Cook, stirring, until the berries burst, about 5 minutes. Transfer to a blender and add the lemon juice; puree until smooth. Let cool completely.
  • Unwrap the terrine; invert onto a platter. Slice and serve with the blueberry sauce and fresh blueberries.

  • Preheat the oven to 400 degrees F. Line a standard 12-cup muffin tin with paper liners.
  • To make the topping, in a medium bowl, mix together the topping ingredients until crumbly. Set aside.
  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • In a large bowl, beat the eggs with the melted butter. Add the buttermilk and lemon zest and whisk to combine. Add the dry ingredients to the wet and stir just to combine. (Batter will still be somewhat lumpy; do not overmix.) Gently fold in the blueberries and raspberries so the berries do not break open and pour into the prepared muffin tin. 2 cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon kosher salt
2 sticks unsalted butter
2 cups sugar
6 large eggs
1 teaspoon almond extract
½ cup Fisher® Sliced Almonds
The Lemon Curd:
2/3 cup sugar
3 large eggs
1 cup fresh lemon juice
1 tablespoon grated lemon zest
3/4 stick unsalted butter, cut into small pieces
For The Trifle:
3/4 cup seedless raspberry jam
2 packags (1/2 pint each) rasberries
1 cup heavy cream
1 cup Fisher® Sliced Almonds
2 pints blueberries

Steps:

  • Preheat oven to 350°F. Spread all of the almonds (1½ cups) onto a cookie sheet and bake for 4 to 5 minutes or until the nuts just begin to brown and become aromatic. Remove from oven and let cool. Line the bottoms of two 9-inch cake pans with parchment or waxed paper and spray with nonstick cooking spray.
  • Prepare the cake batter: Combine the flour, baking powder and salt in a medium bowl; set aside. Beat the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 5 to 8 minutes or until smooth. Add the eggs, one at a time, scraping between additions. Stir in the flour mix, almond extract and ½ cup of the toasted almonds until just blended. Do not over mix.
  • Bake the cake: Fill each of the prepared pans with half of the batter. Place the pans in the center of the oven. Bake until the center is firm or when the tip of a small knife emerges clean when it pierces the center of each cake, 30 to 35 minutes. Remove from the oven and cool.
  • Make the lemon curd: While the cake is baking, whisk the sugar, eggs, lemon juice and zest together in a microwave-safe bowl. Add the butter. Microwave for 4 to 6 minutes, stirring every minute until the mixture thickens. Cover the bowl with plastic wrap and poke a few holes into the wrap with the tip of a knife to allow steam to escape. Refrigerate until completely cooled.
  • Prepare the cakes, fruit and almonds: Slice the rounded tops of the cakes to flatten them. Carefully slice the cakes in half, horizontally, through the middle to create 4 layers. Stir the raspberry jam with 1 tablespoon of water to loosen the texture and toss gently with the raspberries. Whip the cream to medium peaks.
  • Assemble the trifle: Place one cake round in the bottom of the trifle bowl, trimming the edges if necessary to fit. Spread about 1/3 of the lemon curd over the cake. Cover with about ½ cup of whipped cream and sprinkle with ¼ cup of the toasted almonds, ¼ of the raspberry mixture and 1 cup of blueberries. Repeat the same process for two more layers. For the last layer, spread the cake with the remaining whipped cream, berries and nuts.

Steps:

  • Preheat oven to 350°F.
  • Grease a 9-inch square, metal baking pan.
  • Sift flour, baking powder and baking soda into a bowl.
  • In a medium sized bowl, cream butter and sugar.
  • Beat in eggs and orange rind.
  • Beat in half of the flour mixture.
  • Beat in all the milk, and then the remaining flour mixture.

¾ teaspoon salt
⅔ cup shortening
6 tablespoons cold water, or more as needed
1 egg white
1 tablespoon water
¾ cup white sugar
¼ cup cornstarch
2 tablespoons grated lemon peel
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon
3 cups fresh blueberries
1 cup fresh raspberries
1 tablespoon water
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine flour and salt in a bowl. Mash shortening into the flour mixture with a pastry cutter or fork until the mixture is crumbly. Gradually add cold water as needed, tossing with a fork until dough forms a ball. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Turn dough out onto a flat work surface dusted with flour. Divide dough in half and form each half into a ball. My friend Marilyn shared this wonderful gelatin salad with me years ago. I make it every holiday season. It's delish!

1 (16 ounce) canned blueberries, with juice
1 (8 1/2 ounce) can crushed pineapple with juice
1 (3 ounce) package black cherry gelatin
1 (3 ounce) package raspberry gelatin powder
2 cups boiling water
1 (8 ounce) package cream cheese
1/2 cup sugar
1 pint sour cream
1/2 teaspoon vanilla
1/2 cup pecans, chopped

Steps:

  • Drain blueberries and pineapple; reserving juice. Dissolve gelatin in boiling water. Add 1 cup pineapple and blueberry juice. Stir in drained fruit and pour into 2 quart dish (9 x 13 works well). Refrigerate to congeal.
  • Topping:.
  • Soften cream cheese and fold in sugar, sour cream, vanilla, and pecans. Spread over congealed salad.
  • Prep time does not include time for salad to congeal.

2 tablespoons lemon juice
2 teaspoons Dijon mustard
1 dash hot pepper sauce
1 dash salt
2 cups boneless skinless chicken breasts, cooked, cubed
1/2 cup celery, chopped
1 cup fresh blueberries
2 tablespoons fresh tarragon, minced
2 cups lettuce or 2 cups spinach leaves

Steps:

  • Mix together mayonnaise, sour cream, lemon juice, mustard, hot pepper sauce and salt.
  • Stir in chicken, celery and blueberries.
  • Add tarragon and toss lightly. Arrange lettuce leaves on serving plates.
  • Spoon salad over lettuce leaves.
