1 unbaked piecrust
3 large eggs
2 c. whole milk
1 c. granulated sugar
2 tbsp. unbleached all-purpose flour
2 tsp. ground cinnamon
1/2 tsp. salt

Steps:

  • Preheat your oven to 350 degrees F.
  • In a medium bowl, whisk the eggs until they are light in color. Whisk in the milk.
  • In a small bowl, combine the sugar, the flour, the cinnamon, and the salt, then whisk the ingredients into the egg mixture. Pour the filling into the piecrust.
  • Place the pie in the oven, and bake it until the filling is set in the middle, about 40 minutes.

1 cup white sugar
1 cup packed brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt
3 eggs
1 egg yolk
2 cups milk
2 tablespoons unsalted butter
1 ½ teaspoons vanilla extract
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Combine the sugars, flour, cinnamon, cloves, and salt in a bowl. Add the eggs and yolk one at a time, and mix well. Stir in the milk, melted butter, and vanilla. Pour filling into the shell.
  • Bake at 350 degrees F (175 degrees C) for 40 to 45 minutes. When the side of the pan is tapped, the center should still wobble like gelatin. Cool on a rack.

2 cups milk
1/2 teaspoon crushed clove
3 large eggs
3 heaping tablespoons flour
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon cinnamon

Steps:

  • on the three large eggs, you will need to seperate and beat yolks and whites in seperate bowls.
  • Mix together sugar, flour, cloves and cinnamon.
  • Add butter, beaten egg yolks and milk.
  • In a seperate mixing bowl, beat 3 egg whites till peaks form.
  • Fold this into first mixture.
  • Pour into 2 unbaked pie shells and bake at 350* till set.
