3 cups white wine vinegar
1/4 cup chopped fresh dill
1/4 cup sugar
2 tablespoons kosher salt
1 teaspoon coriander seeds
1 teaspoon mustard seeds
2 kirby cucumbers, sliced 1/4-inch thick
2 cups freshly squeezed orange juice
1/2 cup freshly squeezed lime juice
2 tablespoons clover honey
1 tablespoon white wine vinegar
Kosher salt and freshly ground black pepper
1 1/2 pounds pork tenderloin, trimmed
Kosher salt and freshly ground black pepper
1/4 cup steak rub, such as Bobby Flay's Steak Rub
3 tablespoons canola oil
3/4 cup mayonnaise
2 heaping tablespoons whole-grain mustard
2 teaspoons finely chopped fresh oregano
2 cloves garlic, chopped to a paste
Kosher salt and freshly ground black pepper
1 cup canola oil
8 thin slices Serrano ham
4 Cuban buns, split
16 thin slices Swiss cheese
1 stick (8 tablespoons) unsalted butter, softened

Steps:

  • For the pickles: Combine the vinegar, dill, sugar, salt, coriander and mustard in a medium saucepan. Bring to a boil over high heat and cook until the sugar and salt are dissolved. Remove from the heat and let cool for 15 minutes. Put the cucumbers in a medium bowl, pour the pickling liquid over, cover the bowl and refrigerate for at least 30 minutes and up to 24 hours.
  • For the sour orange glaze: Combine the orange juice and lime juice in a small nonreactive saucepan over high heat and cook until reduced to 1/2 cup, about 20 minutes. Whisk in the honey and vinegar and season with salt and pepper. Let cool slightly.
  • For the pork: Preheat the oven to 425 degrees F. Season the pork with salt and pepper and rub with the steak rub. Let sit for 15 minutes at room temperature.
  • Heat the oil over high heat in a cast-iron pan or oven-proof skillet until it begins to shimmer. Add the pork and cook until a crust has formed on all sides, about 2 minutes per side. Brush liberally with the sour orange glaze and transfer the pan to the oven. Brush with the glaze every few minutes, and cook until an instant-read thermometer inserted into the center of the pork registers 145 degrees F, about 10 minutes. Remove the pork to a cutting board and let rest for 10 minutes before slicing. Slice the pork thinly.
  • For the garlic mayonnaise: Combine the mayonnaise, mustard, oregano, garlic, salt and pepper to taste in a small bowl. Whisk together and let sit at room temperature for at least 15 minutes to allow the flavors to meld.
  • For the serrano ham: Heat the oil in a small saucepan until it reaches 350 degrees F. Add the ham one slice at a time and cook until crisp, about 30 seconds. Drain on a plate lined with paper towels.
  • To serve: Spread the top and bottom of each bun with the garlic mayonnaise and top each piece with 2 slices of cheese. Put some pickles on the bottom piece of bun. Top with 4 to 5 slices of the pork and 2 slices of the fried ham. Combine the tops and bottoms to make the sandwiches.
  • Brush the outsides of the buns with the butter. Heat a cast-iron pan over low heat. Put 2 sandwiches in at a time, top-sides down, and press with a brick wrapped in foil, or put foil over the top of the sandwiches and weigh them down with another heavy cast-iron pan. Cook until the bread is crispy, then flip over and continue cooking until the bottom is crispy and the cheese has melted, 6 to 8 minutes total. Slice in half and eat.

SPANISH "CUBAN" SANDWICHES

Bobby's Spanish Spice Rubbed Pork Butt with Sherry Vinegar-Honey Glaze is a perfect match for this sandwich, but any pulled or sliced pork will work in a pinch.

1/2 cup mayonnaise
4 Cuban rolls or 1 loaf Cuban bread, halved
8 ounces Manchego cheese, thinly sliced
8 ounces Serrano ham, thinly sliced
4 cups pulled Spanish Spice Rubbed Pork Butt
2 cups baby arugula
1/4 cup Dijon mustard
1/2 cup Piquillo Pepper Butter, recipe follows
Piquillo Pepper Butter:
2 sticks unsalted butter, slightly softened
4 piquillo peppers, patted dry and chopped
4 cloves garlic, chopped
2 teaspoons chopped fresh thyme
1 teaspoon Spanish paprika
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Prepare a grill for direct and indirect grilling over medium heat. Heat the plancha, or a cast-iron griddle, over the direct heat.
  • Spread the mayonnaise on the bottom of the rolls. Top with half the Manchego and ham. Then, top with the Spanish Spice Rubbed Pork Butt and arugula. Top with the remaining half the Manchego and ham. Spread the mustard on the top half of the rolls. Place the tops on the sandwich and brush with the Piquillo Pepper Butter.
  • Place the sandwiches butter-side down on the griddle. Place the bricks on top of the sandwiches and cook until the bread is crisp and golden brown, about 5 minutes. Watch carefully: if the bread browns too quickly, move the plancha to indirect heat and cover the grill to melt the Manchego. Flip the sandwiches over and place the bricks back on top. Continue cooking until the bottom of the sandwiches are crisp and the Manchego is melted, about 3 minutes.
  • Blend the butter, piquillo peppers, garlic, thyme, paprika, salt and pepper in a food processor until smooth. Scrape the butter into a bowl, cover and refrigerate for at least 1 hour and up to 24 hours before using. Soften the butter slightly before using.

2 teaspoons ground cumin
Canola oil
3 cups chicken stock
1 cup fresh orange juice
1/2 cup fresh lime juice
2 tablespoons aged sherry vinegar
1 head garlic, cloves removed and peeled
2 medium Spanish onions, peeled and coarsely chopped
2 bay leaves
Clover Honey
Handfull fresh oregano, stems with leaves
3 Kirby cucumbers, sliced into 1/8-inch thick slices
2 cups plus 2 tablespoons distilled white vinegar
3/4 cup packed coarsely chopped fresh dill
2-3 tablespoons sugar
2 garlic cloves, coarsely chopped
2 teaspoons kosher salt
3/4 teaspoon dill seeds
1/2 teaspoon whole mustard seeds
1/2 teaspoon coriander seeds
1 cup prepared mayonnaise
3 tablespoons Dijon mustard
5 cloves roasted garlic, pureed
Salt and freshly ground black pepper
8 to 10 Cuban breads, sliced 3/4 of way through
Roasted Garlic-Dijon Aioli
Shredded pork
Homemade Pickles
1 pound thinly sliced Swiss cheese
1 pound thinly sliced good-quality ham

Steps:

  • Pork: Preheat oven to 350 degrees F. Season the pork with salt, pepper and cumin. Heat a few tablespoons of oil in a large Dutch oven until it begins to shimmer. Add the pork and cook until golden brown on all sides.
  • Add the stock, juices, vinegar, garlic, onions, bay leaves and oregano, bring to a simmer, cover and transfer to the oven. Braise until fork tender (between 180 and 190 degrees F), about 1 1/2 hour to 2 hours. Remove from the oven, transfer pork to a platter and let rest 15 minutes before slicing or shredding.
  • Strain the braising liquid into a medium pan, bring to a boil and let reduced slightly, adding honey and salt and pepper if needed. Toss some of the braising liquid with the shredded pork to moisten.
  • Homemade Pickles: Put the sliced cucumber in a medium bowl (which has a fitted lid).
  • Combine 1 cup of water, the vinegar, dill, sugar, garlic, salt, dill, mustard and coriander seeds in a small saucepan over high heat and bring to a boil. Cook until the sugar and salt is dissolved. Remove from the heat and taste for tartness, add more sugar if too sour and let cool to room temperature.
  • Pour the cooled liquid over the cucumbers, cover and refrigerate for at least 4 hours and up to 48 hours, stirring the mixture at least once.
  • Roasted Garlic-Dijon Aioli: Whisk together mayonnaise, mustard and garlic and season with salt and pepper. Cover and refrigerate for at least 30 minutes before using to allow the flavors to meld.
  • For Sandwiches: Spread both cut sides of the bread with a tablespoon or so of aioli. Add the pork, a few slices ham, and a generous layer of pickles. Top with a few slices cheese.
  • Press the sandwiches in a hot panini grill until outside is toasty and cheese is melted.

RED BEEF CHILI

Bobby Flay brings his signature heat to this chili with layers of rich, spicy flavors. The onions and chiles are sauteed in reduced beer and chocolate, and maple syrup is stirred in at the end for sweetness. A dollop of toasted cumin crema on top adds a cool, creamy finish to this red-hot dish.

7 tablespoons canola or vegetable oil
4 pounds bottom round beef, cut into 1/2 -inch cubes
Kosher salt and freshly ground black pepper
2 tablespoons ground cumin
One 12-ounce bottle dark beer
1 large red onion, finely diced
4 cloves garlic, finely chopped
1 teaspoon seeded and chopped habanero
1 Thai bird chile, seeded and chopped
1/2 jalapeno, seeded and chopped
1/2 poblano, seeded and chopped
1 tablespoon ancho chile powder
1 tablespoon cascabel chile powder
1 tablespoon chipotle pepper puree
1 tablespoon pasilla chile powder
1 teaspoon New Mexican chile powder
5 cups homemade chicken stock, canned low-sodium broth or water
One 16-ounce can whole tomatoes, drained and pureed
2 tablespoons finely chopped semisweet chocolate
2 tablespoons maple syrup, or more as needed
1/2 tablespoon cumin seeds
1/2 cup Mexican crema or creme fraeche
Kosher salt and freshly ground black pepper

Steps:

  • Heat 2 tablespoons of the oil in a large Dutch oven over high heat. Sprinkle the beef with salt and pepper and add one-third of the meat to the pan and saute until browned on all sides. Repeat with the oil and meat, draining any excess liquid from the pan between the batches. Return the meat to the pan, sprinkle with the cumin and stir well. Deglaze the pan with the beer and bring to a boil. Cook until the beer is almost completely reduced. Remove the meat from the pan and set aside.
  • In the same pan, add the remaining 1 tablespoon oil to the same pan and then add the onions and cook on medium heat until soft. Add the garlic and cook for 2 minutes. Add the habanero, Thai bird, jalapeno and poblano peppers and cook until soft, about 5 minutes. Add the ancho chile pepper, cascabel chile powder, chipotle pepper puree, pasilla chile powder and New Mexican chile powder, and cook an additional 2 minutes. Add the chicken stock and tomatoes, bring to a boil and cook until slightly thickened, 15 to 20 minutes.
  • Puree with an immersion blender. Add the beef back to the pan, reduce the heat to medium, cover and simmer until the chili is thick and the beef is tender, about 1 hour 15 minutes. If the chili has too much liquid, continue to cook uncovered to thicken, about 15 minutes. Remove from the heat, add in the chocolate and maple syrup and stir until the chocolate is melted and combined and adjust seasonings. Serve with Toasted Cumin Crema.
  • Place the cumin in a small saute pan over medium heat. Toast until lightly golden brown. Place in a small bowl. Stir in the crema and season with salt and pepper. Place in a squeeze bottle for serving.

VEGETABLE MEATLOAF WITH BALSAMIC GLAZE

1 small zucchini, finely diced
1 red bell pepper, finely diced
1 yellow bell pepper, finely diced
5 cloves garlic, smashed to a paste with coarse salt
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1 large egg, lightly beaten
1 tablespoon finely chopped fresh thyme
1/4 cup chopped fresh parsley
1 1/2 pounds ground turkey (90 percent lean)
1 cup panko (coarse Japanese breadcrumbs)
1/2 cup freshly grated Romano or Parmesan cheese
3/4 cup ketchup
1/4 cup plus 2 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 425 degrees. Heat the oil in a large saute pan over high heat. Add the zucchini, bell peppers, garlic paste and 1/4 teaspoon red pepper flakes. Season with salt and pepper and cook until the vegetables are almost soft, about 5 minutes. Set aside to cool.
  • Whisk the egg and fresh herbs in a large bowl. Add the turkey, panko, grated cheese, 1/2 cup ketchup, 2 tablespoons balsamic vinegar and the cooled vegetables; mix until just combined.
  • Gently press the mixture into a 9-by-5-inch loaf pan. Whisk the remaining 1/4 cup ketchup, 1/4 cup balsamic vinegar and 1/4 teaspoon red pepper flakes in a small bowl; brush the mixture over the entire loaf. Bake for 1 to 1 1/4 hours. Let rest for 10 minutes before slicing.

THE BOBBY FLAY BURGER

Back in 2003, before he was a fast-food impresario, Bobby Flay gave this recipe for a Cubano-style burger to Jonathan Reynolds of The Times. "The best burgers are made on an iron surface and cooked medium, so they're not too soft and you can get a crust," he said at the time. "If you press your burger bun like a Cubano, you get crisp on the outside, soft on the inside." He adorned the patty with two slices of Swiss, smoked ham and pickles, then slipped the package into the bun and pressed it hard on the grill. "We are not ready for micro greens on our national dish," he said. The result continues to amaze.

Beef and Black Bean Chili With Toasted Cumin Crema (Bobby Flay) image

I posting this recipe to save it. My husband got this recipe out of Maxim Magazine. We made it to the best of our ability but we had to make substitutions because we just couldn't find some of the chili powders. We ended up just using 5 Tbs. of commercial chili powders in place of the 3 Tbs. of ancho chili powder, 1 Tbs. pasilla chili powder, and 1 Tbs. ground cumin. It was still very good. We also substituted ground buffalo for about 1/2 of the beef. Then we made it extra fancy pants... we topped it with the cumin crema, sliced avocado and apple smoked Gruyere.

2 1/2 lbs chuck roast, cut into 1/2 inch cubes

1 red onion

1 jalapeno, finely diced
3 tablespoons dried ancho chile powder
1 tablespoon ground pasilla chile powder
1 tablespoon ground cumin
12 ounces dark beer
5 cups chicken stock
1 (16 ounce) can chopped tomatoes, drained
1 tablespoon chipotle chile in adobo
2 tablespoons honey
12 ounces black beans, drained, rinsed, and drained again
2 tablespoons fresh lime juice
1 cup creme fraiche or 1 cup sour cream
1 1/2 tablespoons ground cumin
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Heat two tablespoon of oil in a large pot with a lid over hight heat. Salt and pepper the beef and layer half in the pot.
  • Brown on all sides. Remove to a plate and repeat with the remaining oil and meat.
  • Remove all but two tablespoons of fat from the pot.
  • Cook onions until soft.
  • Add garlic and jalapeno, cook for one minute.
  • Add ancho powder, pasilla powder, and cumin; cook two minutes.
  • Add beer and cook until reduced by half.
  • Return beef to pot, add rest of ingredients except beans and lime juice.
  • Bring to a boil. Reduce heat to medium, cover, and simmer for 45 minutes.
  • For the Toasted Cumin Crema: Whisk together creme fraiche (or sour cream), cumin, kosher salt and black pepper. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • While Crema is chilling, add beans to chili pot and continue cooking till the meat is fork-tender, 20 to 30 minutes.
  • Remove from heat; add lime juice and salt and pepper.
  • Serve with a spoonful of Toasted Cumin Crema.

Be careful though, the way that this is written it's very spicy. (Well at least to me anyway :)). I let this simmer for about 30 minutes for a better flavor.
