FINGER-LICKIN' COUNTRY STYLE BONELESS BEEF (OR PORK) RIBS
These are some great tasting, finger-lickin' ribs! Boil 'em and then grill 'em (or you may finish them in the oven, if you prefer), then serve 'em with extra Q sauce for dipping. Simple and easy recipe, with NO heating up of the kitchen from a hot oven, which is an added bonus especially in the hot summertime. Recipe is from my Southern born and raised sis-in-law, Patricia Ellen. Thought I'd share with y'all, I hope you enjoy. Serve with some corn bread or buttered rolls, beans and slaw.

Steps:
- Place the ribs in an 8-quart stockpot. Add enough water to cover ribs. Mix in about 1 cup barbecue sauce to the water.
- Cover, and bring to a boil.
- Reduce heat. Simmer covered for 2 hours, until ribs are tender.
- Preheat grill to medium.
- Remove ribs from water and place in a large bowl. Drench the ribs in additional barbecue sauce.
- Transfer ribs to preheated grill. Close grill lid. Grill for 10 to 20 minutes, basting generously with barbecue sauce & turning often (every 2 minutes). (Note: be careful not to overcook the ribs, as they will dry out).
- Note: if you prefer, you may finish the ribs in a 350F oven, instead of the grill.
- Serve with additional sauce, if desired. Good with corn bread or buttered rolls, beans and slaw.

BBQ BONELESS COUNTRY RIBS

- Preheat oven to 425°F. Coat bottom of baking dish with 1 tablespoon of olive oil. Place ribs in dish, separating them slightly. Drizzle remaining 1 tablespoon olive oil over top of ribs and rub to coat. Sprinkle seasoned salt lightly over all. Place sliced onions on top of ribs. Roast ribs at 425°F for 30 minutes.
- Meanwhile, in medium saucepan over medium heat, combine water, ketchup, Worcestershire sauce, chili powder and red pepper sauce. Bring to boil. Reduce heat to low and continue to simmer sauce until it is reduced and thickened a bit.
- After 30 minutes of roasting, pour BBQ sauce over ribs, reserving about 1 cup for later. Reduce oven temperature to 350°F and bake ribs another 60 minutes (or longer, depending on thickness of ribs), basting with sauce every 15 minutes. Ribs are done when meat is tender and cooked through, and the internal temperature reaches a minimum of 145°F. You can cover the pan loosely with foil for the final 30 minutes of baking if the ribs appear to be drying out. Be sure to keep basting the meat frequently to keep it moist and flavorful.
- Transfer ribs to a plate and pour BBQ sauce over all. Serve immediately.

- Preheat oven to 500°F.
- Combine all the ingredients except the pork ribs in a saucepan. Cover and simmer for 10 minutes.
- Place ribs in bottom of a roasting pan or 9X13 baking pan.
- Pour sauce over the meat.
- Cover the pan with foil and bake at 500 degrees for 10 minutes.
- Reduce heat to 325 degrees and bake for an additional 1 to 1 ½ hours. Check them at the 45-minute mark and turn them in the sauce.
- When the ribs are tender, remove the foil and cook for 15 minutes without the foil, just enough to slightly reduce and thicken the sauce.
- Ribs are done when the meat is tender and pulls apart easily.
- Remove the BBQ ribs from the sauce to serve. The sauce can be put in a small bowl to serve on the side.

- Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
- Preheat oven to 325 degrees F (165 degrees C).

- Preheat oven to 300°
- Remove pork ribs from package and pat dry. Place into a baking dish or foil lined baking tray. Gently rub the dry rub on all sides of the ribs. Making sure all edges are covered.
- Cover in foil. Place in the oven for 2-2 1/2 hours until you cut into them and they are easily pulled apart with your fork. (fork tender)
- Remove from the oven paying special attention to not burn yourself when the steam comes rushing out. Drain away the juices/fat that has come out during cooking.
- Brush with BBQ sauce. Place back in the oven, uncovered, bake for 30-45 minutes or until the ribs basically disintegrate when you use your fork to cut them and the sauce is bubbly and hot.
- Serve. If you make them ahead, you can store them in an airtight container and then rewarm them in the oven until hot.

- In a large mixing bowl, combine the marinade ingredients; pour the prepared marinade into a heavy-duty gallon bag that has been placed into a large bowl. Add the pork ribs to the marinade and seal well; let the ribs marinate in the fridge for at least 8 hours.
- Preheat the oven to 250 degree F. Wrap two large rimmed baking sheets with heavy-duty foil.Remove the ribs from the marinade, patting each one dry; place the ribs onto one of the foil-lined baking sheets; cover with foil. **Reserve the marinade for use as a sauce later! Bake the ribs, covered, for 1 1/2 hours or until they are starting to become fork-tender. Remove the cooked ribs from the baking sheet (it will be full of grease after cooking the ribs) to the second foil-lined baking sheet.
- Meanwhile, place the reserved marinade into a sauce pan over medium heat; bring to a boil, simmering the marinade until reduced, about 4-5 minutes. When the sauce is nicely reduced and thickened, remove it from the heat.
- Slather the ribs with the sauce; continue to bake, uncovered this time, for an additional 30 minutes or until the ribs are very fork-tender, bubbly, and caramelized. Garnish with scallions and sesame seeds, if using. Serve the ribs with warm sauce on the side, if desired.

Bake ribs at 450°F, uncovered, until ribs are very tender and sauce has become sticky and slightly glazed on ribs, about 20 minutes. Serve ribs with reserved sauce.
