BBQ ROAST PORK

Steps:
- Preheat the oven to 325 degrees F.
- Mix together all of the dry rub ingredients in a small bowl. Rub the pork with canola oil and generously sprinkle the rib all over the pork. Put in a bowl, cover and refrigerate overnight.
- BBQ sauce: Add the oil to a medium-sized saucepan over medium heat. Once hot, add the onion, garlic, and jalapeno. Saute until soft and season with salt and pepper, to taste. Add the strawberries and sugar and cook until the strawberries begin to break down and the sugar dissolves. Add the ketchup, water, strawberry nectar, jam, mustard, Worcestershire, salt and pepper. Simmer for 30 minutes.
- Put the pork in a roasting pan and roast until an instant-read thermometer registers 145 degrees F, about 1 hour and 15 minutes. Brush with BBQ sauce the last 10 minutes of cooking.
- Remove the pork from the oven and let rest for 10 minutes before slicing.

- In a Dutch oven, melt butter over medium heat. Stir in flour until smooth. Add ketchup, water, vinegar, Worcestershire sauce, onion, garlic and seasonings; bring to a boil. Add roast. Reduce heat; simmer, covered, 3 hours or until meat is very tender., Remove roast; shred with two forks. Skim fat from cooking juices; return meat to pan and heat through. Using a slotted spoon, place mixture on buns.

BONELESS PORK ON THE BARBIE
I like this recipe because it's quick, easy, and delicious. My family loves it, and I can even put everything in the food processer, and make wonderful baby food for my little one.

Steps:
- Rinse the pork w/ water, place in tupperwear or other container.
- Pour italian dressing over pork, and seal the lid.
- Leave in the refrigerator for at least 1 hour.
- For more great flavor leave it in longer.
- Place on barbecue.
- Cook about 8-10 minutes on both sides- or until no longer pink in the middle.
- Use your own discretion- the thicker the cut the more cooking time.
- Add a nice salad, and baked potato, and you've got a great meal.
