Bow Ties with Artichoke Pesto image

1 pound box bow tie pasta
2 (6.5-ounce) jars marinated artichoke hearts, drained (recommended: Mezzetta)
1 teaspoon lemon juice (recommended: ReaLemon)
2 tablespoons grated Parmesan, plus more for serving
1/4 cup chopped walnuts
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • In large pot of boiling, salted water, cook bow ties per package directions.
  • In a food processor, combine artichoke hearts, lemon juice, Parmesan, and walnuts, and process for 30 seconds. Slowly drizzle in olive oil until mixture becomes a thick paste. Transfer pesto to a large bowl. Season, to taste, with salt and pepper.
  • Drain pasta and add to pesto in bowl. Toss to coat. Serve hot with grated Parmesan.

3 tablespoons butter
1 onion, diced
10 ounces (2 cups) frozen peas
1 cup half-and-half
1/2 pound cooked ham
Grated Parmesan cheese, for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Drain pasta; return to pot.
  • Meanwhile, heat butter in a saucepan over medium heat. Add onion; cook, stirring, until soft, 3 to 4 minutes. Add peas and half-and-half; season with salt and pepper. Simmer until thickened, 3 to 4 minutes.
  • Cut ham into strips. Add to sauce; cook until heated through, 1 to 2 minutes. Toss sauce with pasta. Serve with grated Parmesan.

1 cup frozen peas or 2 cups cooked broccoli florets
2 tablespoons flour
1 cup milk
1 tablespoon butter
3 garlic cloves, chopped
4 ounces cream cheese
1/4 cup grated parmesan cheese
3/4 teaspoon salt (seems like alot but isn't salty)
1/4 teaspoon black pepper
1/4 lb sliced lean ham, cut into slivers

Steps:

  • Bring large of lightly salted water to boiling.
  • Add pasta; cook 12 minutes or until firm but tender.
  • Add peas for last 3 minutes of cooking.
  • Reserve 1/2 cup of pasta cooking water; drain water.
  • Meanwhile, shake together flour and milk in jar with tight-fitting lid until blended.
  • Heat butter in saucepan over medium heat.
  • Add garlic, saute 1 minute.
  • Whisk in milk mixture.
  • Simmer 3 minutes.
  • Whisk in cream cheese, 2 tablespoons parmesan, salt and pepper.
  • Simmer, whisking, 2 minutes.
  • Remove from heat.
  • Toss together pasta, peas or broccoli, sauce and ham in large bowl.
  • Add 1/4 to 1/2 cup of reserved pasta water, tossing to make creamy sauce.
  • Top with remaining parmesan.
  • Serve hot.

2 tablespoons olive oil
1 small red onion, chopped
1 tablespoon minced garlic
1 cup mixed olives, pitted and roughly chopped
Juice of 1 lemon
4 ripe tomatoes, cored and cut into thick wedges
Black pepper
1/4 cup bulgur
8 ounces whole wheat bow-tie or other cut pasta
3 cups torn arugula leaves
1/2 cup chopped almonds

Steps:

  • Bring a large pot of water to a boil and salt it. Put oil in a large, deep skillet over medium heat. When hot, add onion and garlic and cook, stirring until softens, about 5 minutes. Stir in olives, then add lemon juice and tomatoes. Sprinkle with salt and pepper and cook until tomatoes are just heated through. Turn off heat.
  • When water comes to a boil, add bulgur. Let water return to a boil, then add pasta. Cook bow ties until tender but not mushy (start tasting after 5 minutes). Reserve some cooking water, then drain in a strainer to trap grains with pasta.
  • Toss pasta and bulgur with tomato mixture, adding some cooking water if needed. Stir in arugula and almonds, taste and adjust seasoning. Let rest for up to 15 minutes. Stir again and serve.

2 tablespoons olive oil
1 pound sweet Italian sausage, casings removed and crumbled
½ teaspoon red pepper flakes
½ cup diced onion

1 (28 ounce) can Italian-style plum tomatoes, drained and coarsely chopped
1 ½ cups heavy cream
½ teaspoon salt
3 tablespoons minced fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.

Steps:

  • Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.

1 small head cauliflower, cut into florets

1 pound bow tie pasta
3/4 cup panko

Steps:

  • Preheat the broiler. Melt 3 tablespoons butter in the microwave, then toss with the cauliflower on a baking sheet; season with salt and pepper. Broil until charred and just tender, 6 to 8 minutes; set aside.
  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup cooking water, then drain.

All-purpose flour, for dusting
1/2 recipe Danish Dough
1 cup Pastry Cream for Apricot Bow Ties
1 (15-ounce) can apricot halves, drained
1 large egg, lightly beaten
Sugar, for sprinkling

Steps:

  • Line two large baking sheets with parchment paper; set aside. On a lightly floured work surface, roll out the dough to just over a 13-inch square, a little over a 1/4-inch thick. Using a ruler and a pizza wheel or pastry cutter, trim the edges of the dough to form a 12-inch rectangle, then cut the dough into nine 4-inch squares.
  • Place pastry cream in a pastry bag fitted with a 1/2-inch plain tip (such as an Ateco #806). Pipe a dollop of cream into the center of each square. (Alternatively, scoop the filling with a tablespoon.) Arrange two apricot halves over the cream, overlapping them slightly, one in the upper left corner and the other in the lower right.
  • To form the bow ties, fold the upper right corner over the apricot filling, about two-thirds of the way toward the opposite corner; press down firmly to seal. Bring the lower left corner up and over first fold, pressing down to adhere. (Be careful not to fold too tightly, or you may force out some of the filling.) Repeat with the remaining squares. Place the bow ties on the prepared baking sheets. Cover with plastic wrap, and let rest in a warm place until dough is doubled in bulk, about 45 minutes.
  • Preheat the oven to 375 degrees. Brush dough with the beaten egg; sprinkle with sugar. Bake, rotating sheets halfway through, until pastries are evenly browned, 20 to 25 minutes. Transfer to a wire rack to cool. Serve at room temperature. Bow ties are best eaten the same day they are made.

1 small onion, finely chopped

1 pound farfalle
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • 1 With a large knife, trim off the top 1 inch of the artichokes. Rinse them well under cold water. Bend back and snap off the small leaves around the base. With scissors, trim the pointed tops off the remaining leaves. Peel off the tough outer skin of the stems and around the base. Cut the artichokes in half. Use a small knife with a rounded tip to scrape out the fuzzy leaves in the center. Thinly slice the artichokes. 2 Pour the olive oil into a skillet large enough to hold the cooked pasta. Add the onion and garlic and cook, stirring occasionally, over medium heat 10 minutes. Add the artichokes and 2 tablespoons water. Add salt and pepper to taste. Cook 10 minutes or until the artichokes are tender. 3 Stir in the peas. Cook 5 minutes or until the peas are tender. Remove from the heat and stir in the basil. 4 Bring at least 4 quarts of water to a boil. Add 2 tablespoons of salt, then the pasta. Stir well. Cook, stirring often, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 5 Toss the pasta with the artichoke sauce and a little of the cooking water if needed. Add a drizzle of extra-virgin olive oil and toss again.   • In a deep skillet cook the bacon over moderate heat, stirring, until it is crisp and transfer it with a slotted spoon to a bowl. Pour off all but 1 tablespoon of fat from the skillet, add the oil, and in the fat cook the onion over moderate heat, stirring, until it is golden brown. In a kettle of salted boiling water cook the pasta until it is al dente. While the pasta is cooking, stir the tomato into the onion mixture with the 1/4 cup water, the red pepper flakes, and salt to taste, simmer the sauce, stirring, for 5 minutes, and stir in the parsley and the bacon. Drain the pasta well, add it to the sauce, and toss it well. Add the Parmesan and toss the pasta well.

This family-friendly pasta dish made with bow-tie pasta, chicken sausage, mozzarella cheese, and Parmesan is absolutely batty. It comes together it under one hour, so you can get dinner on the table in a flash before trick-or-treating begins.

1/2 pound bow-tie pasta
1 teaspoon olive oil
1 clove garlic, minced
1 can (28 ounces) whole peeled tomatoes, in puree
1/4 teaspoon dried oregano
1/8 teaspoon sugar
Coarse salt
2 precooked chicken sausages, about 3 ounces each, cut crosswise into 1/4-inch-thick rounds
8 ounces mozzarella cheese, cut into small cubes (1 3/4 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Cook pasta according to package instructions. Drain; set aside.
  • Meanwhile, in a large saucepan, heat oil over medium. Add garlic; cook until fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to a boil, reduce to a simmer; cook, stirring and breaking up tomatoes until slightly thickened, 5 to 8 minutes. Season with salt.
  • Add pasta, sausage, and half the mozzarella; toss to combine. Transfer to a 2-quart baking dish. Top with remaining mozzarella and Parmesan. Bake until bubbly and top is lightly browned, 10 to 15 minutes.

1 pound farfalle pasta
1 stick unsalted butter, melted
12 to 16 amaretti cookies, crushed (about 1/2 cup crumbs)
1/3 cup golden raisins
1 cup grated Parmigiano-Reggiano

Steps:

  • 1 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. Set aside some of the cooking water. Drain the pasta. 2 Place the butter in a large warm serving bowl. Add the pasta and toss it with the cookie crumbs and raisins. Add the cheese and toss again.
