Brazilian-Style Beans image

A delicious dish to be served with long-grain white rice or brown rice if you prefer. Soaking the beans overnight will reduce the cooking time. Another dish from my "James McNair's Favorites" cookbook.

2 cups dried black beans
8 ounces bacon, chopped
1 cup yellow onion, finely chopped
1 teaspoon garlic, minced
1 teaspoon ground cumin
2 bay leaves
1 tablespoon brown sugar
1/2 cup canned tomato puree
salt
fresh ground black pepper
3 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice (or to taste)

Steps:

  • Pick over and rinse the beans; set aside.
  • In a large, heavy pot, cook the bacon over medium-high heat until fat is rendered. Add the onion and cook, stirring frequently, until soft but not browned, about 5 minutes. Add the beans, garlic, cumin, bay leaves, brown sugar and enough water to cover by about 2 inches. Cook until the beans are tender. .
  • Add the tomato puree and salt and pepper to taste and simmer until the flavors are well blended, about 20 minutes. Just before serving, stir in the cilantro and lime juice.

4 cups refried black beans, quite soupy
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons dende oil
1/3 cup Crema (recipe below)
2 tablespoons finely chopped cilantro
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • In a medium saucepan, heat the beans, adding a little more water if necessary to make a nice soupy consistency. When the beans are very hot, add the salt and pepper and taste for seasoning. Remove from the heat and serve in large shallow bowls, drizzling each portion with a little dende oil, a little Crema, and scattering some cilantro around the edges of the plate.
  • Whisk the cream and buttermilk together. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator as long as a week.

Steps:

  • Pick over and rinse:
  • 2 cups black beans
  • Drain the beans and transfer to a soup pot.
  • Add:
  • 4 cups water
  • Bring to a boil, reduce the heat, and simmer, partially covered, stirring occasionally, for 1 1/2 hours. Meanwhile, bring a medium saucepan of water to a boil. Pierce in several places with a fork:
  • 8 ounces hot Italian sausage (optional)
  • Add to the pot and boil until an instant-read thermometer inserted in the center of a sausage registers 160°F, about 45 minutes. Drain, rinse with cold water, and slice into 1/4-inch thick rounds. Set aside. Heat in a medium skillet over medium-low heat:
  • 1/4 cup olive oil
  • Add:
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • Cook until the vegetables are tender but not brown, 7 to 10 minutes.
  • Add:
  • 1 teaspoon ground cumin
  • 3/4 teaspoon red pepper flakes
  • 3/4 teaspoon ground cardamom
  • Stir and cook for 1 minute, remove from the heat, and add to the beans after they have cooked for 1 1/2 hours. Cook until the beans are very tender, about 30 minutes more.
  • Add:
  • 3/4 cup orange juice
  • 1/4 cup dry sherry
  • 1 to 2 teaspoons salt, or to taste
  • Cook for 15 minutes more, or longer if desired.
  • Garnish with:
  • Sour cream

1 tablespoon canola oil
¼ pound chorizo sausage, chopped
⅓ pound cooked ham, chopped
1 medium onion, chopped
2 cloves garlic, minced
2 (1 pound) sweet potatoes, peeled and diced
1 large red bell pepper, diced
2 (14.5 ounce) cans diced tomatoes with juice
1 small hot green chile pepper, diced
1 ½ cups water
2 (16 ounce) cans black beans, rinsed and drained
1 mango - peeled, seeded and diced
¼ cup chopped fresh cilantro
¼ teaspoon salt

Steps:

  • Heat the oil in a large pot over medium heat, and cook the chorizo and ham 2 to 3 minutes. Place the onion in the pot, and cook until tender. Stir in garlic, and cook until tender, then mix in the sweet potatoes, bell pepper, tomatoes with juice, chile pepper, and water. Bring to a boil, reduce heat to low, cover, and simmer 15 minutes, until sweet potatoes are tender.
  • Stir the beans into the pot, and cook uncovered until heated through. Mix in the mango and cilantro, and season with salt.

This is my version of a traditional Brazilian black bean stew that maintains the rich smoky, flavors famous in Brazil. Additional meats, including sausage, may be added if desired. This is excellent served over brown rice.

1 (12 ounce) package dry black beans, soaked overnight
1 ½ cups chopped onion, divided
½ cup green onions, chopped
1 clove garlic, chopped
2 smoked ham hocks
8 ounces diced ham
½ pound thickly sliced bacon, diced
1 tablespoon olive oil
2 bay leaves, crushed
⅛ teaspoon ground coriander
salt and pepper to taste
½ cup chopped fresh cilantro
¼ cup chopped fresh parsley

Steps:

  • Heat the oil in a large pot or Dutch oven. Add 3/4 cup of chopped onion, green onions, and garlic; cook and stir until softened, about 4 minutes. Pour in the soaked beans and fill with enough water to cover beans by 3 inches. Bring to a boil, then reduce heat to medium-low, and simmer uncovered for 2 hours, or until tender.
  • While beans are cooking, place ham hocks in smaller pot with 1/4 cup of the chopped onion. Cover with water and simmer, until meat pulls off of the bone easily, about 1 hour. Drain and add to the beans.
  • Preheat oven to 375 degrees F (190 degrees C). Place ham, bacon, and remaining onion in a baking dish. Bake 15 minutes or until mixture is crispy.
  • Drain the bacon and ham mixture, and add to the beans. Season with bay leaves, coriander, salt and pepper. Simmer uncovered 30 minutes more. Stir in chopped cilantro and parsley just before serving.

My friend lived in Brazil for a few years and ate these tasty crock pot beans all the time. They are quite easy as the crock pot does most the work! Great served with rice and chicken.

3 cups uncooked pinto beans
6 cups water
1 large onion
3 -4 garlic cloves, minced
1/2 lb bacon
2 bay leaves
3 teaspoons salt (to taste)

Steps:

  • You want to soak the beans overnight, so measure out the 3 cups and go through the beans to take out any bad ones (really shriveled or discolored). It's an extra step, but worth it because bad beans are nasty if left inches Put beans in a bowl and cover with water. Next day, dump water and you are ready to go.
  • Cut up bacon and fry to a crisp. Chop up into small pieces. Use some of the bacon grease and sauté onions and garlic. Put beans, fresh water, onion/garlic, and bacon into a crock pot. Add salt until the water tastes pretty salty, like you would want it to taste when done cooking. Add bay leaves and cook on high for 6 hours.
  • Something else that makes it really good (and really Brazilian) is to eat it with a salad made with just lettuce, tomato and dressed with lime juice, olive oil, and salt (I actually put the salt right on the lettuce then add the dressing and toss). My favorite thing to do is have a bite of rice, beans, and salad all together.

3 medium beets, scrubbed and trimmed
1 bag (1 pound) dried black beans, rinsed
Coarse salt and ground pepper
2 garlic cloves, peeled
2 tablespoons vegetable oil
1 scallion, thinly sliced, plus more for serving
1/2 cup chopped fresh cilantro
Cooked rice, for serving
Lime wedges and shredded cheddar, for serving

Steps:

  • In a 6-quart Dutch oven or other heavy pot, combine beets, beans, and enough water to cover; season with salt and pepper. Bring to a boil; reduce to a simmer, and cook until beets are tender, 45 minutes to 1 hour (add more water to cover, if needed).
  • Transfer beets to a bowl; when cool enough to handle, peel and dice. Continue to cook beans until tender, about 1 hour more; pour off any excess liquid.
  • Finely chop garlic, and sprinkle with salt. Using a chefs knife, press a flat side of blade back and forth across garlic to make a paste. In a small skillet, heat oil over medium; add garlic paste, scallion, and cilantro. Cook, stirring frequently, until scallion has softened, 2 to 4 minutes.
  • Stir scallion mixture into beans; cook over medium until flavors have blended, about 5 minutes. Serve beans and beets over rice, topped with scallion and cheddar, with lime wedges alongside.
