Easy to make French bread rolls. Dough can be made in mixer, bread maker, or by hand. Loaves or rolls can be brushed before baking with a glaze of 1 beaten egg white mixed with 1 tablespoon water if desired.

1 ½ cups warm water (110 degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar
2 tablespoons vegetable oil
1 teaspoon salt
4 cups bread flour

Steps:

  • In a large bowl, stir together warm water, yeast, and sugar. Let stand until creamy, about 10 minutes.
  • To the yeast mixture, add the oil, salt, and 2 cups flour. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour.
  • Deflate the dough, and turn it out onto a lightly floured surface. Divide the dough into 16 equal pieces, and form into round balls. Place on lightly greased baking sheets at least 2 inches apart. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake for 18 to 20 minutes in the preheated oven, or until golden brown.

I've tried many, many bread recipes, and this is the best roll recipe I've come across. It's super fast, super easy, and you'd have to try hard to mess it up. The easiest way to get the perfect temperature water for your yeast is to do 1 part boiling water to 2 parts cold. Perfect every time!

2 (1/4 ounce) packages yeast
3 1/2-4 1/2 cups white bread flour
3 tablespoons sugar
1 teaspoon salt
1 cup milk
1/2 cup boiling water
1/4 cup butter, room temperature

Steps:

  • In a small bowl, mix milk with water. Add sugar, yeast, and butter. Stir until yeast is dissolved and set aside for 10 minutes or until yeast has foamed up a bit.
  • In a large bowl, mix flour and salt. Use the lower amount of flour to start with and add more only if the dough is really too sticky.
  • Add yeast mixture to flour and mix.
  • Knead until smooth and elastic. (I use a hand mixer with a kneading attachment.).
  • Place in greased bowl, cover tightly with plastic wrap, and let rise in a warm place for 15 minutes.
  • Oil your hands and shape the dough into rolls and place in a well-greased pan. I use 2 round non-stick cake pans.
  • Cover loosely with plastic wrap and let rise another 15 minutes.
  • Bake at 400 for about 10 minutes or until golden brown.
  • Let these cool down before you remove them from the pan or they will likely tear.

1 1/2 cup whole milk (warmed to 110F)
4 Tbsp unsalted butter (melted)
1 Tbsp active dry yeast
1/3 cup granulated sugar
1 1/4 tsp salt ((we used fine sea salt))
4 cups all-purpose flour
1 Tbsp unsalted butter (melted to brush the tops of dinner rolls)
1/2 tsp kosher salt (to sprinkle finished rolls)

Steps:

  • In the bowl of your mixer, whisk together warm milk (about 110F) and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 minute. Whisk together and let it sit for about 5 minutes until yeast looks foamy. Add 4 Tbsp melted butter, remaining sugar and salt.
  • Add flour half a cup at a time until the dough whisking to incorporate. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2 (you can also continue mixing by hand with a stiff spatula). Add about 4 cups of flour, adding the last 1 to 3 Tbsp of flour only if needed. The dough should feel sticky and tacky but should not stick to clean/dry finger tips.
  • Knead the dough with the dough hook in a stand mixer for 2 minutes or knead by hand (10 min), then place dough in an oiled bowl. Cover it with plastic wrap and let it rise about 2 hours in a warm place or until doubled in size.
  • Once the dough rises, turn it out onto a lightly floured surface and cut it into 15-24 even pieces depending on the shape of your baking dish. Roll each piece of dough into a ball and place them onto an oiled 9x13 casserole dish or baking sheet.
  • Cover the dinner rolls with plastic wrap and let them rise another 30-60 minutes in a warm place or until puffed (do not over-proof). Bake at 375F for about 23-25 minutes or until the tops are golden brown.
  • Immediately brush tops of dinner rolls with melted butter and set aside to cool to room temperature before serving.

2 tbsp rapid rise, instant yeast

Steps:

  • Combine 3 cups of flour, yeast, sugar, salt, warm milk, butter, and egg in the bowl of a stand mixer.
  • Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary.
  • Increase speed to medium and beat for 2 minutes.
  • Add 1/2 cup flour and blend with the dough hook until incorporated. And another 1/2 cup flour and repeat, mixing at medium speed for another 2 minutes until a ball of dough is formed.
  • Add additional flour as necessary. The dough should be slightly sticky and soft and pulling away from the edge of the bowl.
  • Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise for 30 minutes at room temperature.
  • Remove the towel or plastic wrap and deflate the dough by punching down lightly.
  • Pinch off pieces of the dough and form 24 rolls. You can weigh them to keep the rolls close to the same size. Mine were about 2 ounces each but this will vary depending on how much flour you added.
  • Transfer the rolls to a lightly greased quarter baking sheet or 9 x 13 baking dish. Cover with a towel or plastic wrap and let rise for an additional 30 minutes at room temperature.
  • Preheat oven to 375 degrees. Bake the rolls for 12 to 15 minutes or until golden brown and cooked through. If the rolls are getting too brown, just tent the rolls with foil.
  • Remove rolls and brush hot rolls with the melted butter. Serve immediately or store cooled rolls in a plastic bag for up to 3 days.

1/2 c milk
1/2 c sugar
1 1/2 tsp salt (can use less)
1/4 c butter, melted
1/2 c warm water (105-115 degrees)
2 pkg Fleischmann's active dry yeast
2 large eggs, beaten
4 1/2 c all-purpose flour, may need a bit more or less, see directions
additional butter for coating bowls used and brushing on tops of baked rolls

Steps:

  • 1. Scald milk (bring just to a boil and remove from heat immediately).
  • 2. Stir in sugar, salt, and butter. Set aside and allow to cool to lukewarm.
  • 3. In a large bowl mix warm water and yeast. Stir until dissolved.
  • 4. Stir in lukewarm milk mixture.
  • 5. Add beaten eggs.
  • 6. Stir in half the flour. Beat until smooth. Add remaining flour gradually, mixing as you go. You may need a bit more or less than the total 4 1/2 cups called for in the recipe, depending on the humidity and other factors.
  • 7. Your dough should be elastic and slightly stiff but not dry.
  • 8. Turn dough out onto a floured board and knead until smooth and very elastic. This usually takes 8-10 minutes.
  • 9. Butter the inside of a large mixing bowl. Put dough in bowl and turn dough over a couple of times to coat it all with the butter.
  • 10. Cover bowl and place in a warm place so it can rise.
  • 11. It will take about 1 hour to double in bulk.
  • 12. At that time punch dough down and turn out onto a lightly floured board to shape.
  • 13. At this point, you can shape and fill as desired. To make dinner rolls, pinch off about 2-3 tablespoons of dough and shape into a ball. Place each one in a buttered muffin tin or baking pan, barely touching each other, do not crowd rolls.
  • 14. Cover prepared rolls and allow to rise in a warm place until doubled in bulk, again about 1 hour.
  • 15. Rolls should now touch each other. (A little more rising will occur during baking.)
  • 16. Preheat oven to 350 degrees when rolls are about 10 minutes from being ready for baking. When ready to bake place rolls in the oven and bake for 20-25 minutes. They should be browned nicely and smell so good and yeasty!
  • 17. Brush tops of rolls with melted butter immediately when removed from the oven.
  • 18. Allow rolls to sit for at least 10-15 minutes before eating.

Steps:

  • Put the milk (95-115 degrees Fahrenheit) and the butter in the bowl of a stand mixer. Sprinkle the yeast over the milk. (If the yeast is not instant yeast, let it sit for 5 minutes to activate.)
  • Add the sugar, eggs, salt, and flour. With a paddle attachment for your stand mixer, mix for a few seconds until just combined. Let this mixture sit for about 5 minutes.
  • Switch the attachment to the dough hook and knead on medium speed for 10 minutes.
  • Cover the dough and let it rise in a warm place for 30 minutes or until doubled.
  • Divide and roll dough into 15 balls. You may have more or less depending on the size you make the rolls.
  • Place in a greased 9x13 pan. Cover and rise for 15-20 minutes.
  • Bake at 375 for 13 to 16 minutes or until lightly browned.
  • Serve warm.

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

1.5 tablespoons fresh yeast
1/2 cup warm water
2 tablespoons granulated sugar
3 tablespoons vegetable oil
1 egg (room temperature)
2-3 tablespoons melted butter
1 teaspoon fine salt
2 1/2-3 cups flour (sifted)

Steps:

  • Begin by mixing fresh yeast with warm water until the yeast is completely dissolved. Make sure the water is not hot as this will kill the yeast.
  • Add sugar and mix well until the sugar is dissolved. Allow the yeast to "feed" on sugar for a few minutes before moving to the next step.
  • Place the rest of the dry ingredients in a large bowl and mix using a whisk.
  • Make a hollow in the dry ingredients and add the wet ingredients, mixing with a spoon until about half the dry ingredients are incorporated into the wet ingredients.
  • Start kneading with your hands until the dry ingredients are incorporated.
  • If needed, add more room temperature water, a little at a time until you're happy with the dough texture and tackiness.
  • Move the dough to a table and knead until the dough is smooth and just a little elastic and tacky but not too sticky; if it sticks to your hands and you can't get it off easily that's considered too sticky. If you have a bread machine, using it for kneading is your best option.
  • Place the dough in a bowl, cover with wrap and let rise in a warm place until it doubles in size, about an hour. See my tip above for speeding up the rising process.
  • Remove the wrap and gently punch the dough to eliminate air bubbles.
  • Start forming rolls with your hands and place them in a baking dish, lined with baking paper.
  • Cover with plastic wrap and let the rolls rise in a warm place until double in size.
  • While the rolls are rising, pre heat the oven at 350 F - 180 C
  • Remove the wrap and place the baking dish in the middle of the oven.
  • Bake for about 15 minutes or until the crust is golden.

1 cup (240ml) whole milk, warmed to about 110°F
2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
2 Tablespoons granulated sugar, divided
1 large egg
1/4 cup (60g) unsalted butter, softened to room temperature and cut into 4 pieces
1 teaspoon salt
3 cups (390g) all-purpose flour or bread flour*
optional topping: 2 Tablespoons melted unsalted butter mixed with 1 Tablespoon honey

Steps:

  • Whisk the warm milk, yeast, and 1 Tablespoon of sugar together in the bowl of your stand mixer. Cover and allow to sit for 5 minutes. *If you do not own a stand mixer, you can do this in a large mixing bowl and in the next step, mix the dough together with a large wooden spoon/rubber spatula. It will take a bit of arm muscle. A hand mixer works, but the sticky dough repeatedly gets stuck in the beaters. Mixing by hand with a wooden spoon or rubber spatula is a better choice.*
  • Add the remaining sugar, egg, butter, salt, and 1 cup flour. With a dough hook or paddle attachment, mix/beat on low speed for 30 seconds, scrape down the sides of the bowl with a rubber spatula, then add the remaining flour. Beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If the dough seems too wet to a point where kneading (next step) would be impossible, beat in more flour 1 Tablespoon at a time until you have a workable dough, similar to the photos and video above. Dough should be soft and a little sticky, but still manageable to knead with lightly floured hands.
  • Keep the dough in the mixer and beat for an additional 3 full minutes or knead by hand on a lightly floured surface for 3 full minutes. (See video tutorial above if you need a visual of kneading dough by hand.)
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1-2 hours or until double in size. (I always let it rise on the counter. Takes about 2 hours. For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
  • Grease a 9×13 inch baking pan or two 9-inch square or round baking pans. You can also bake the rolls in a cast iron skillet or on a lined baking sheet.*
  • When the dough is ready, punch it down to release the air. Divide the dough into 14-16 equal pieces. (Just eyeball it- doesn't need to be perfect!) Shape each piece into a smooth ball. I do this entirely in my hands and you can watch in the video tutorial above. Arrange in prepared baking pan.
  • Cover shaped rolls with aluminum foil, plastic wrap, or a clean kitchen towel. Allow to rise until puffy, about 1 hour.
  • Adjust oven rack to a lower position and preheat oven to 350°F (177°C). (It's best to bake the rolls towards the bottom of the oven so the tops don't burn.)
  • Bake for 20-25 minutes or until golden brown on top, rotating the pan halfway through. If you notice the tops browning too quickly, loosely tent the pan with aluminum foil. Remove from the oven, brush with optional honey butter topping, and allow rolls to cool for a few minutes before serving.
  • Cover leftover rolls tightly and store at room temperature for 2-3 days or in the refrigerator for up to 1 week.

  • In a large bowl, mix the shortening, sugar, and hot water. Allow to cool until lukewarm, and mix in the yeast until dissolved. Mix in the egg, salt, and flour. Allow the dough to rise until doubled in size.
  • Grease 8 muffin cups. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Bake for 10 minutes in the preheated oven, or until a knife inserted in the center of a muffin comes out clean.
