- In a medium bowl, combine hash browns and 1 egg and season with salt and pepper. Mix until combined.
- Spray a large nonstick skillet over medium heat and place down three mason jar lids. Add hash brown mixture to two and press in lid to form a patty. Crack an egg in the third and season with salt and pepper. Cook until hash browns are golden and crispy, 3 minutes per side and egg is set, 3 minutes. Repeat with remaining hash browns and egg.
- Make burgers: In a large bowl, combine ground beef and season generously with salt and pepper. Form into patties (about the size of mason jar lid) and cook until medium, 5 minutes per side. Top with cheddar and cover skillet with lid to let melt, 2 minutes.
- Assemble burgers: Place hash brown bun on plate and drizzle with ketchup. Top with burger, fried egg, bacon, and avocado and sandwich with hash brown bun.

- For the dressing: Stir the mayonnaise, mustard and horseradish together in a small bowl and set aside.
- For the burgers: Gently mix together the ground beef, sausage and 1/4 teaspoon each salt and pepper. Divide the meat into 4 pieces and form each into a 4-inch patty.
- Melt the butter in a 12-inch nonstick skillet over medium-high heat and add the patties. Cook until well browned, about 3 minutes, and then flip. Top with some of the cheese and continue to cook until the cheese is melted and the burger is just cooked through, 2 to 3 minutes.
- Spread the toasted muffins with some of the mustard dressing and top with a slice of tomato and a burger patty.
- Crack the eggs into the skillet with the sausage drippings and cook to your preference.
- Place an egg on each burger and finish with some baby arugula on the top of the English muffin.
AVOCADO BACON BREAKFAST BURGER
Steps:
- Gather the ingredients.
- Add the tomatoes, sugar, lemon juice, ginger, cumin, cinnamon, curry powder, and salt to a stainless steel pot and turn the heat to medium-high.
- Once the mixture begins to boil, reduce the heat to medium-low and continue to simmer, stirring often, until the mixture reduces and thickens into a jam-like consistency; about 1 hour.
- While this is reducing, make the sausage-infused patties.
- Gather the ingredients.
- Meanwhile, add your beef and sausage in a bowl and gently mix together, being sure not to overwork the meat and form into a patty shape and season with salt and pepper.
- Set aside and heat up your grill or cast iron to medium-high heat.
- Spray the surface of whatever you're using to cook the patty and add the meat, allowing it to cook for a few minutes on each side until it's cooked all the way through.
- Turn the heat off and add the gouda on top.
- Then prep the remaining ingredients for assembling the burger.
- Gather the ingredients.
- Toast the everything bagel until crispy on the outside and smear both sides with the homemade tomato jam.
- Add the cooked cheeseburger sausage patty, then top with egg, bacon, and avocado.

- Combine ground beef, Worcestershire sauce, steak seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties. - Put the onion, ketchup and oyster sauce in a food processor, then blend to a coarse paste, scraping down the sides of the processor if you need to. Put the sausagemeat into a mixing bowl, beat in the onion mix, egg yolk and 25ml water (and I mean really beat; if you have a tabletop mixer, do it in that), then add the parsley. Separate the mix into 8, roll into large balls, then flatten into patties. Chill on a plate for 1 hr.
- To cook the burgers, heat a griddle or large frying pan without adding any extra fat. Fry for 3 mins on one side until golden, turn down the heat for 5 mins, then flip and repeat on the other side.
- While the burgers cook, fry the bacon and, if you are game, some eggs as well. Heat the grill, then lightly toast the insides of the ciabatta buns.
- Place the cooked burgers on a baking sheet, put a slice of cheese on each, then pop under the grill to melt. Sit the burgers on their buns, then place the bacon on top. If you feel like them, slide fried eggs on top of the bacon. Serve with a napkin.

- Put a cast-iron skillet over medium-low heat. Butter the cut sides of the bagels. Lay the bagel halves in the skillet butter-side down and toast until golden, 2 to 3 minutes. Set aside.
- In the same skillet, throw in the sliced onions and 1 tablespoon of the butter and cook slowly, stirring occasionally, until the onions are soft and golden, about 20 minutes. Remove to a plate.
- Meanwhile, in a small bowl, mix together the mayonnaise, mustard, some hot sauce and 1 teaspoon each salt and pepper. Set aside.
- Mix together the hot and maple sausage in a medium bowl. Form the mixture into six 1/2-inch-thick patties, slightly bigger than the diameter of the bagels (since the burgers will shrink during cooking).
- Put the same skillet over medium heat, add the sausage patties and fry on both sides until cooked through, 5 to 7 minutes. Top each patty with 2 slices of Cheddar and cover the skillet with a lid to facilitate melting, 1 to 2 minutes.
- In a separate nonstick skillet over medium-low heat, fry the eggs in 1 tablespoon of butter and sprinkle with salt and pepper. Cook until set on one side, then flip and cook the second side to desired doneness.
- Build the sandwiches by spreading the mayo/mustard mix on the bottom half of each bagel, then top with a sausage patty, some caramelized onions and a fried egg. Spread more of the mayo/mustard mix on the top half of the bagels and place on top of the eggs to finish. Serve warm or wrap in foil to transport.

- For the sausage: Mix the sausage, syrup, sage, salt, fennel seeds, garlic, onion and red pepper together in a large bowl.
- For the burgers: Form the pork sausage into 4 patties, about 3 inches in diameter. Sprinkle both sides of each patty liberally with salt and pepper.
- Heat a grill, grill pan or cast-iron skillet over high heat, adding 2 tablespoons canola oil if applicable. Cook the patties for approximately 3 minutes, then flip and top with 1 slice of cheese (cover to melt). Continue cooking for an additional 3 minutes for medium, or continue cooking to your desired doneness. Remove and tent with foil.
- In either the same skillet that you used to cook the pork patties or a clean skillet with the remaining 1 tablespoon canola oil, bring to medium heat. Crack the eggs into the skillet and sprinkle with salt and pepper. Cook the eggs just until the whites have set before carefully flipping; avoid breaking the yolk.
- Build the burgers by placing each cooked patty on the English muffin bottoms. Top with the crisped bacon and fried eggs. Smear the tops of the English muffins with the Spicy Ketchup and place on top of the other ingredients. Serve immediately.
- Whisk together the ketchup, lemon juice, chili powder, Worcestershire sauce and hot sauce together until combined.

- Form the bulk hot pork sausage into 5 patties. Heat a large skillet, and fry the patties over medium high heat. Remove the sausage from the skillet and drain on paper towels.

- MaKe the Shoestring Fries: Heat oil to 375 degrees F. Slice the potatoes lengthwise into 1/8-inch slices. Then cut each slice into 1/8-inch long strips. Add the strips in batches, separating them when they hit the oil. Fry until golden brown, remove and drain on paper towels and season with salt.
- Make the Burgers: Divide the meat into four equal portions (6-ounces each). Form each portion into loosely into a 3/4 -inch burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
- Cook the burger until slightly charred on both sides and cooked to desired doneness. Add the American cheese, during the last minute of cooking. Remove the burgers to a plate and loosely tent.
- Reduce the heat of the pan/griddle to medium heat. Crack the eggs onto the cooking surface you used for the burgers and season the tops with salt and pepper. Let the eggs cook until the white just sets up, about 45 seconds. Gently flip the eggs over (trying not to break the yellow) and cook for 10 seconds. Place the eggs on top of the cheese on the burger. Place the burgers on a bun and top with the bacon and some of the shoestring fries. Drizzle fries with chipotle ketchup.
