CRISPY SKIN SALMON

Crispy Skin Salmon image

Provided by Claire Robinson

Time 37m

Yield 2 servings

Number Of Ingredients 7

2 (6-ounce) pieces center-cut salmon fillet with skin, about1-inch thick
Kosher salt and freshly cracked black pepper
3 tablespoons unsalted butter, softened and divided
1 teaspoon finely grated lemon zest
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 tablespoon whole tarragon leaves

Steps:

  • Sprinkle the salmon with salt and pepper. Place skin side up and rub 1 1/2 tablespoons softened butter all over the skin of the salmon. Transfer the salmon, buttered side up, to a sheet pan. Chill in the fridge to firm the butter, about 20 minutes.
  • Preheat the broiler to high.
  • Place the salmon about 5 inches from the heat source and cook until the skin is crispy and the fish is cooked through, 7 to 8 minutes.
  • In a small saucepan over moderate heat, whisk together the remaining 1 1/2 tablespoons butter, lemon zest, lemon juice, mustard and tarragon leaves. Divide the sauce between 2 plates and place 1 piece of salmon on top of each pool of sauce.
  • What Makes This Recipe Really Sing: This is the coolest way to get crispy skin on fish ever and the crispy skin is like a naturally salted and big flavored chip, so it's the best part!

CRISPY PAN SEARED SALMON

Crispy Pan Seared Salmon image

This 15-minute crispy pan seared salmon will quickly become a go-to dinner! Prepared Mediterranean-style and served with a simple arugula salad. Be sure to read all the tips in the post above.

Provided by Suzy Karadsheh

Categories     Entree

Number Of Ingredients 8

1 lb boneless salmon fillet (4 fillets about 4 oz each, skin on)
Kosher salt and pepper
1 ½ tbsp dry oregano
1 tbsp garlic powder
¾ tsp paprika
Extra virgin olive oil
Zest of 1 lemon + Juice of 1 ½ lemon
5 oz baby arugula to serve along

Steps:

  • Pat salmon dry on both sides and sprinkle with kosher salt and black pepper.
  • Make seasoning mix & season salmon. In small bowl, mix together the dry oregano, garlic powder and paprika. Season the flesh side of the fish with this spice mixture.
  • Sear the Salmon. In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium-high heat until shimmering but not smoking. Reduce the heat to medium-low and add one salmon fillet, skin-side down, and press the top with the back of a fish spatula for about 10 seconds (this prevents the skin from curling up.) Add the remaining salmon fillets, one at a time, pressing each with the spatula for 10 seconds. Cook for about 4 minutes. If skin resists lifting (or if it's sticking to the pan), allow the fish to cook for a little bit longer until you are able to lift up easily (no more than 6 minutes in total). Using the spatula and a fork to assist in flipping, flip the fish to the flesh side to cook for about 15 seconds or so. ( Salmon is ready when it registers 110°F (43°C) in the very center for rare, 120°F (49°C) for medium-rare, or 130°F (54°C) for medium, 5 to 7 minutes total.)
  • Remove salmon from heat and immediately add lemon juice and lemon zest.
  • Make arugula salad. In a bowl, add the baby arugula. Season with salt and add juice of ½ lemon and extra virgin olive oil. Toss to combine.
  • Serve salmon with arugula salad (or any of the sides or salads suggested in the post). Enjoy!

CRISPY SALMON FILLETS

Crispy Salmon Fillets image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 8 to 10 servings

Number Of Ingredients 11

One 1.5-kilogram/3.3-pound salmon side
1/4 cup unsalted butter (56 grams)
4 cups panko breadcrumbs
2 teaspoons garlic powder
2 teaspoons dried herbs (such as Herbs de Provence or Italian seasoning)
Kosher salt
Freshly ground black pepper
3 eggs
3/4 cup mayonnaise
2 tablespoons Dijon mustard
Nonstick cooking spray

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Prepare the side of salmon by cutting away the thinner belly fat and picking out any pin bones.
  • To remove the skin, cut the meat away from the skin with a long knife starting at the tail end. Firmly hold the skin in one hand, hold the knife at a low angle, and continue slicing between the skin and meat until you reach the end. Cut the salmon into 8 to 10 equal portions and set aside in the fridge.
  • Melt the butter in a large skillet over medium heat and add in the panko, garlic powder and herbs. Season with salt and pepper and cook, stirring frequently, until the panko is golden brown. Transfer the panko into a shallow dish and allow to cool to room temperature.
  • Meanwhile, in a separate shallow dish, whisk together the eggs, mayonnaise and Dijon with 1/2 teaspoon each of salt and pepper. Retrieve the salmon from the fridge and, using a paper towel, dry off the outside of each fillet. Dip the salmon into the egg mixture, being sure to coat the entire surface, then press into the panko to coat and transfer to the prepared baking sheet.
  • At this point, you can cook the salmon or cover lightly with plastic and place the full baking sheet in the freezer. Once the salmon is frozen, transfer to a heavy-duty freezer bag and store in the freezer for up to 3 months.
  • To cook the fillets, either fresh or frozen, preheat your oven to 425 degrees F (220 degrees C) and lightly grease a baking sheet with nonstick cooking spray or line with parchment paper. Arrange the fillets on the prepared pan, leaving a few inches of space between each and bake the fresh fillets for 15 to 18 minutes, or the frozen for 22 to 25 minutes, or until cooked through and the fish flakes easily with a fork.

EASY, CRISPY BRIOCHE-CRUSTED SALMON

Easy, Crispy Brioche-Crusted Salmon image

For easy, crispy salmon on a weeknight, take a page out of chef Adrienne Cheatham's book and top your fish with a slice of brioche.

Provided by Adrienne Cheatham

Time 25m

Yield Makes 4

Number Of Ingredients 7

4 skinless salmon fillets (8 oz. each)
1½ tsp. kosher salt
1 loaf brioche, unsliced
2 Tbsp. vegetable oil
4 Tbsp. (½ stick) unsalted butter
1 garlic clove, crushed
2 or 3 sprigs of thyme

Steps:

  • Preheat the oven to 350°F with a rack in the center position.
  • Season the salmon fillets with the salt and set aside.
  • Using a serrated knife, trim away the crust from the sides of the brioche loaf, then make four long lengthwise slices that are about ⅛ to ¼ inch thick. Lay a slice of brioche on a cutting board and place a salmon fillet lengthwise in the center; it should fall within the border of the crust. Use your knife to trim away the bread around the salmon. It's best to hold the knife flat against the edges of the salmon and press straight down (using the same motion as with a cookie cutter) to get an even cutout around the fish. Repeat with the remaining fillets and brioche slices, setting the finished fillets brioche-side down on a plate or tray.
  • Heat a large oven-safe skillet over medium heat. Put in the oil and butter; when the butter begins to bubble and foam, gently place the salmon, brioche-side down, in the pan. Work in batches if you can't fit all the fillets in the pan at once. Shake the pan a little to make sure the brioche is not sticking, then scatter the garlic and thyme sprigs around the fish. Cook, swirling the pan occasionally and basting the oil-butter mixture over the fish with a spoon until the bread is golden brown, about 1 minute.
  • Flip the fillets brioche-side up, transfer the pan to the center oven rack, and bake for 3 to 4 minutes, or until the salmon is cooked through but still has a touch of dark pink inside (about 145°F). Keep in mind, it will continue cooking a little even after you remove it from the oven!
  • Blot the fish with a paper towel and transfer to plates, brioche-side up. Serve immediately.

GOURMET SALMON DINNER RECIPE BY TASTY

Gourmet Salmon Dinner Recipe by Tasty image

Here's what you need: butter, shallots, garlic, whole milk, white pepper, salt, yellow potato, olive oil, porcini mushroom, asparagus, salt, pepper, skin-on salmon fillets, salt, pepper, fresh thyme, olive oil, butter, garlic

Provided by Pierce Abernathy

Categories     Dinner

Yield 2 servings

Number Of Ingredients 19

4 tablespoons butter, divided
2 shallots, thinly sliced
2 cloves garlic, minced
½ cup whole milk
1 ½ teaspoons white pepper
1 teaspoon salt
2 lb yellow potato, peeled, quartered, and boiled until tender
olive oil, to taste
1 cup porcini mushroom, trimmed and quartered
1 bunch asparagus, ends trimmed
salt, to taste
pepper, to taste
2 skin-on salmon fillets
salt, to taste
pepper, to taste
fresh thyme, to taste
olive oil, to taste
2 tablespoons butter, cubed
3 cloves garlic, crushed

Steps:

  • Make the creamy shallot potato puree: Melt 3 tablespoons of butter in a medium pan over medium-high heat. Add the shallots and cook for 3-4 minutes, until softened.
  • Add the garlic and another tablespoon of butter and continue to cook for another 3-4 minutes, stirring frequently, until the shallots are browned.
  • Add the milk, white pepper, and salt and stir to incorporate.
  • Transfer the shallot mixture to a food processor and process until smooth.
  • Mash potatoes in a large bowl. Add the shallot puree and continue to mash until fully incorporated. Set aside.
  • Make the sautéed vegetables: Heat a drizzle of olive oil in a large pan over medium heat. Add the mushrooms and cook for 5 minutes, stirring occasionally, until starting to soften.
  • Push the mushrooms to one side of the pan and add a bit more oil. Add the asparagus and season everything with salt and pepper. Cook for 5 minutes, until the vegetables are tender. Remove from the heat and set aside.
  • Make the salmon: On a cutting board, cut 4 slits in the salmon skin, roughly ¼-inch (6 mm) apart and ½-inch (12 mm) into the salmon flesh. Season with salt, pepper, and thyme leaves.
  • Heat a drizzle of olive oil in a medium pan over medium-high heat. Add the salmon, skin-side down. Cook for 3-4 minutes, or until a lighter pink color has reached ⅓-½ of the way up the side of the salmon.
  • Flip the salmon and immediately add the butter, garlic, and a few sprigs of thyme. Stir the garlic and thyme around the pan to infuse the flavors and spoon the butter over the salmon for 2 minutes more, until the salmon is cooked through. Remove the salmon from the pan.
  • Add the potato puree to plates and top with the sautéed vegetables and salmon.
  • Enjoy!

BRIGHT AND CRUNCHY SALMON

Bright and Crunchy Salmon image

Melt-in-your-mouth salmon is the foundation for this Thai-inspired entrée for two. Mint, cilantro, and basil lend delicate yet dynamic flavor to balance the rich fish; cucumbers, watermelon radish, fried shallots, and roasted peanuts bring intrigue and crunch. This recipe is featured in the cookbook Salad Freak: Recipes to Feed a Healthy Obsession ($26.99, amazon.com).

Provided by Jess Damuck

Number Of Ingredients 13

1 orange, such as Cara Cara or blood
1 lime
12 ounces wild-salmon fillet, cut into 2 portions
Kosher salt
1 tablespoon Lacto-Fermented Fresno Chiles or 1 thinly sliced fresh jalapeño or serrano chile
1 recipe Frizzled Shallots, plus 1 1/2 cups reserved shallot oil
1 watermelon radish (or 3 smaller radishes)
3 Persian cucumbers
1 tablespoon rice vinegar
1 tablespoon fish sauce
1 big handful combined fresh mint leaves, cilantro leaves, and Thai-basil leaves
1/2 cup roasted and salted skin-on peanuts, for serving
1/2 cup crispy rice cereal, for serving

Steps:

  • Preheat oven to 325°F. Cut 1/2 orange and 1/2 lime into thin slices and put in a 9-inch square baking dish, a small rimmed baking sheet, or a heatproof skillet. Place salmon on top and sprinkle with salt and chiles. Pour all but 2 tablespoons of reserved shallot oil over salmon. Bake until salmon is opaque throughout, about 25 minutes. Remove from oil and, once cool enough to touch, break into bite-size pieces.
  • Use a mandoline to thinly slice watermelon radish; set in a bowl of ice water until slices are extra-crunchy. Slice cucumbers and put in a large bowl.
  • Into a small bowl or measuring cup, juice remaining 1/2 orange and 1/2 lime; add rice vinegar, fish sauce, and remaining 2 tablespoons shallot oil. Taste for seasoning.
  • Drain and pat dry radish; add to bowl with cucumbers. Add flaked salmon and herbs, drizzle with just a few tablespoons of dressing (being careful not to overdress), and toss. Serve the rest of dressing on the side to preserve crunchiness of ingredients. Put on serving plates or a platter and top with frizzled shallots, peanuts, and rice cereal.
