- Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
- Cut broccoli into bite size pieces and put in 9x13 baking dish.
- Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
- Pour over broccoli.
- Top with crushed Ritz Crackers.
- Dot with butter.
- Bake at 350 degrees for 40 minutes uncovered.

- Preheat the oven to 350 degrees. Prepare a 9X13 baking dish by spraying the bottom and sides with non-stick spray. Set aside.
- Boil the broccoli florets in salted water for 3 minutes, drain them, and put them into a large mixing bowl.
- Season the broccoli with salt, pepper, garlic and onion powder. Stir the Velveeta Cheese into the broccoli until fully incorporated and all the cheese is melted.
- Pour the broccoli cheese mixture into the casserole dish and distribute evenly. Sprinkle the shredded cheddar evenly on top of the broccoli.
- Mix the crushed ritz crackers with the melted butter then sprinkle on the top of the casserole. Bake for 25-30 minutes until the cheeses are bubbly. Remove from oven and serve immediately.

- Preheat oven to 350 degrees F. Use a 9x11 or 2 quart baking pan/dish and coat with PAM cooking spray. Mix broccoli, corn and creamed corn in dish baking dish. Add salt, pepper and garlic to taste, mix in. Mix melted butter and crushed Ritz crackers together in small bowl. Spread cracker mixture over top of casserole. Add more salt and pepper if desired. This recipe won first place in 1978 at the county fair. I make it over the holidays and everyone raves about it. There are some similar recipes on Recipe Zaar, but this recipe is different enough in my opinion to make it slightly better. You can use fresh or frozen broccoli, although the recipe calls for 2 packages, frozen chopped broccoli.

RITZ CORN CASSEROLE
My ex's family makes a corn casserole as a holiday side dish that I have been trying to recreate for a few years. I obviously can't call to ask for the recipe and so this is the closest I've been able to get.

Steps:
- Crush the Ritz crackers close to a powder consistency.
- Add the melted butter to crackers and mix with hands until crumbly.
- Spread half of cracker mixture on bottom of a square casserole dish, pressing down with fingers to make a crust.
- Heat creamed corn on stove until warm throughout.
- Add eggs and stir until combined.
- Mix flour with just enough milk to make a thick paste.
- Add flour paste to corn mixture.
- Stir well and heat throughout.
- Pour into casserole dish.
- Bake 30 minutes at 400 or until firm.
- Add remaining crackers to form a top crust and bake additional 10 minutes.
