At first I was skeptical of 'dessert' hummus. Then I tried some. I was hooked. It is awesome on apples, strawberries, pretzels and lots of other things.

1 (15 ounce) can chickpeas (garbanzo beans), rinsed and drained
½ cup unsweetened dark cocoa powder
½ cup white sugar
3 tablespoons olive oil
3 tablespoons creamy natural peanut butter
1 teaspoon vanilla extract
½ teaspoon salt
3 tablespoons water, or more if needed

Steps:

  • Combine chickpeas, cocoa powder, sugar, olive oil, peanut butter, vanilla extract, and salt in a food processor; blend, scraping down sides as needed, until smooth. Begin adding water while processor is running and blend until desired consistency is reached.

Adding chocolate dessert hummus, which takes like brownie batter, to my muffin recipe changed it for the better.

1 cup all-purpose or whole-wheat flour
1 teaspoon baking soda
1 teaspoon baking power
2 tablespoon cocoa powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1/2 cup chocolate chips or chunks
1/2 cup chocolate hummus
2 eggs
3 very ripe bananas, mashed
1/2 teaspoon vanilla extract
2-4 tablespoon sugar, depending on taste

Steps:

  • Preheat the oven to 425°F and prep a 12-cup muffin tray by lining each cup with a cupcake liner and spraying each cup generously with non-stick spray. In a medium-size bowl, combine flour, baking powder, baking soda, cocoa powder, salt, and cinnamon together using a sift to ensure there are no clumps in the flour mixture. Set aside. In a large bowl, combine eggs, sugar, chocolate hummus, mashed bananas, and vanilla extract until all of the ingredients are fully incorporated. Set 2 tablespoons of the flour mixture to the side and add the remaining amount of flour mix to the wet ingredients in small batches, making sure to stir completely between each batch until the mixture is well-combined until it has reached the consistency of brownie batter. Toss the chocolate chunks or chips in the 2 tablespoons of flour mix that was set aside until the chocolate is fully coated, then add the chips and any remaining flour mix to the batter and gently fold them in until all ingredients are fully combined. Using a small ice cream scoop or a tablespoon, fill each cupcake liner three-quarters of the way full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Enjoy them warm or store them in the fridge or freezer for a delicious snack on the go!

½ cup butter
4 eggs
1 dash vanilla extract
3 ripe bananas, or more to taste
1 cup all purpose flour
1 cup white sugar
1 tablespoon unsweetened cocoa powder
1 tablespoon baking powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a deep baking pan.
  • Melt chocolate and butter in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Mix eggs and vanilla extract together in a large bowl; mash bananas into egg mixture until well mixed.
  • Combine flour, sugar, cocoa powder, and baking powder in a separate bowl.
  • Mix chocolate mixture into the banana mixture; add flour mixture and stir until smooth. Pour mixture into the greased baking pan.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 60 minutes.
