1 cup water
2 thin slices lemon
1/2 pound boneless, skinless chicken breasts
2 1/4 teaspoons salt
Freshly ground pepper to taste
1/2 pound Japanese buckwheat noodles
3 scallions, thinly sliced
4 cups chicken broth

Steps:

  • Place the water and lemon slices in a small saucepan and bring to a simmer. Add the chicken breasts, cover and simmer until cooked through, about 8 minutes. Remove the chicken from the liquid and cut into thin strips. Season with 1/4 teaspoon of the salt and pepper to taste.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add the noodles and cook until al dente, about 5 minutes. Drain the noodles, rinse and drain again.
  • Place the chicken broth in a saucepan and bring to a simmer. Season with the remaining 2 teaspoons salt. Mound the noodles in the center of 4 soup plates. Top with the chicken and sprinkle with scallions. Ladle the broth around the noodles and serve immediately.

2 tablespoons EVOO
2 carrots, peeled, quartered lengthwise, cut into 1/2-inch thick pieces
3 to 4 ribs celery with leafy tops, spilt lengthwise, cut into 1/2-inch thick pieces
1 large onion, chopped 1/2-inch dice
1 fresh bay leaf
1 small to medium zucchini, quartered lengthwise and cut into 1/2-inch thick pieces
Salt and pepper
2 cloves garlic, sliced
2 leeks, halved lengthwise, cut into 1/2-inch half moons
2 tablespoons tomato paste
2 large tomatoes, grated on large side of box grater
1 to 1 1/2 pounds diced Poached Chicken, recipe follows
2 quarts chicken stock/poaching liquids from Poached Chicken
8 ounces extra-wide egg noodles
2 tablespoons butter
1/4 cup finely chopped parsley or parsley and dill combined
1/4 cup finely chopped parsley or parsley and dill combined
A little lemon zest, for garnish
1 whole chicken (4 to 5 pounds)
1 teaspoon whole black peppercorns
2 ribs celery, coarsely chopped
2 cloves garlic, crushed
1 large fresh bay leaf
1 carrot, peeled and coarsely chopped

1 onion, peeled and quartered

Steps:

  • Heat a soup pot with the EVOO over medium-high heat. Add the carrots, celery and onions. Cook, partially covered, 3 to 4 minutes. Add the bay leaf, zucchini and some salt and pepper. Partially cover and cook 5 minutes more. Then add the garlic and leeks. Stir 1 to 2 minutes. Add the tomato paste, and stir for 1 minute. Add the grated tomatoes, chicken and stock. Bring to a low boil, adjust the salt and pepper to taste, cool and store. Reheat over medium heat.
  • To serve, heat a medium pot of salted water to boil. Cook the noodles to al dente, 5 minutes or so. Drain and toss the noodles with the butter, herbs and some salt and pepper.
  • Stir a little lemon zest into the soup. Place a small mound of noodles in each bowl and ladle chunky chicken and vegetable soup over top.
  • Place the chicken in a large stockpot. Add the peppercorns, celery, garlic, bay leaf, carrot, lemon, onions and the herb bundle tied with string, sprinkle with salt. Cover the chicken with water and bring to a boil. Reduce the heat to low, a rolling simmer. Simmer 1 hour to 1 hour 15 minutes, then cool the chicken in the stock. Strain the stock, discarding the vegetables. Remove the chicken in large pieces from skin and bones. Cut half of the meat into bite-size chunks for the soup. Thinly slice or pull the remaining meat, and reserve for another use.

1 pound small skinless, boneless chicken thighs
6 cups low-sodium chicken broth
6 slices fresh ginger, lightly smashed, plus 1 tablespoon finely grated
2 scallions, whites cut into 2-inch pieces and greens thinly sliced
Kosher salt and freshly ground pepper
1 cup sugar snap peas
3 carrots
1 9.5-ounce package soba noodles
4 ounces sliced shiitake mushrooms
1/4 cup low-sodium soy sauce
2 tablespoons fresh lemon juice
Shichimi togarashi (Japanese seasoning) or Asian chili sauce, for topping

Steps:

  • Bring a large pot of water to a boil. Meanwhile, combine the chicken thighs, chicken broth, sliced ginger, scallion whites, 3/4 teaspoon salt and a few grinds pepper in a large saucepan. Cover and bring to a simmer over medium-high heat, about 8 minutes. Uncover and gently simmer until the chicken is cooked through, 5 to 10 more minutes.
  • While the chicken cooks, trim the snap peas and thinly slice. Peel the carrots and halve lengthwise, then thinly slice.
  • Add the soba noodles to the boiling water and cook as the label directs. Drain and rinse under warm water, then vigorously shake off the water. Divide among bowls.
  • Using tongs, remove the chicken to a plate. Discard the ginger and scallions from the broth and skim off any foam. Shred the chicken and return to the broth. Add the shiitakes and carrots, return to a simmer and cook until the vegetables are tender, about 3 minutes. Stir in the soy sauce and lemon juice; season with salt and pepper. Stir in the snap peas.
  • Ladle the soup over the noodles. Top with the scallion greens and grated ginger; sprinkle with shichimi togarashi.

2-1/2 pounds bone-in chicken thighs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
1 large onion, chopped
1 garlic clove, minced
10 cups chicken broth
4 celery ribs, chopped
4 medium carrots, chopped
2 bay leaves
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
3 cups uncooked kluski or other egg noodles (about 8 ounces)
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice
Optional: Additional salt and pepper

Steps:

  • Pat chicken dry with paper towels; sprinkle with salt and pepper. In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken in batches, skin side down; cook until dark golden brown, 3-4 minutes. Remove chicken from pan; remove and discard skin. Discard drippings, reserving 2 tablespoons., Add onion to drippings; cook and stir over medium-high heat until tender, 4-5 minutes. Add garlic; cook 1 minute longer. 2 cloves garlic, chopped

This stir-fried vegetables and chicken with buckwheat noodles makes two servings-you can share with a friend, keep one portion for the next day, or halve the recipe.

1 packet of buckwheat noodles (to make about 2 cups when cooked)
1 teaspoon salt
1 teaspoon sesame oil
2 cloves garlic
1/4 cup sliced ginger
2 carrots, sliced thinly on an angle
1 cup broccoli florets
1 cup baby bok choy, sliced lengthwise
1 cup sliced zucchini, cut on an angle
3 scallions, sliced into 2-inch pieces on the bias
1 tablespoon nama shoyu or wheat-free tamari
1 cup snap peas
2 chicken breasts, grilled and sliced
Fresh cilantro, for garnish

Steps:

  • In a large pot, boil 6 cups of water; add the salt.
  • Add the noodles, reduce heat slightly, and boil for about 3 minutes or until tender.
  • Place noodles in a colander and rinse thoroughly in cold water.
  • Drain water completely, toss lightly in the sesame oil, and set aside.
  • For the stir-fry, heat a heavy skillet and add oil.
  • Keep on a high heat and add garlic and ginger for one minute, stir with a wooden spoon.
  • Add the rest of the vegetables a little at a time to keep heat up, except the snap peas.
  • Toss, flip, or just use a wooden spoon to coat vegetables and prevent scorching.
  • Add the nama shoyu (or tamari) and 2 tablespoons water.
  • Finally, add the snap peas for 1 minute.
  • Toss in a bowl with the noodles and serve.
  • Garnish with fresh cilantro, and serve chicken breasts on the side.

This dough is very easy to work with and is easily managed by hand rolling and cutting on a well dusted (*with buckwheat flour) board. 2 cups buckwheat flour
1 1/2 cups white flour
1 cup water, approximately
1 tablespoon vegetable oil
2 garlic cloves, finely chopped
1/4 cup onion, sliced
6 mushrooms, thinly sliced
6 cups beef stock or 6 cups vegetable stock
4 tablespoons soy sauce
2 tablespoons wasabi
1 tablespoon honey
1 tablespoon balsamic vinegar
1/4 cup yellow zucchini or 1/4 cup green zucchini, 1/2 inch cubes, unpeeled
1/4 cup green peppers (or both) or 1/4 cup red pepper, thinly sliced (or both)
1/4 cup frozen peas or 1/4 cup fresh peas
salt & pepper

Steps:

  • Noodles.
  • Mix the buckwheat & white flour in a large bowl.
  • Using one hand and pouring approximately 3/4 of the water into the flour, swirl the flour around mixing it with the water.
  • This step should be done quickly.
  • Set the remaining water aside.
  • Using both hands, pick up chunks of dough, squeeze and drop it back into the bowl.
  • Keep doing this until the water and flour are well mixed.
  • Your dough should be pliable but not sticky.
  • Add remaining water if necessary.
  • If you have a mixer, transfer the dough to it and knead for at least 10 minutes or until the dough forms a ball and has a shiny look.
  • If you do not have a mixer knead by hand as you would bread dough.
  • This may take you 15 minutes or more until the dough forms a ball and has a shiny look.
  • Dust a board or surface generously with buckwheat flour -- divide your dough in three and roll each piece out until it is approximately 1/8-inch thick.
  • Using a sharp knife cut into 1/4-inch noodles, separate them and hang on a pasta rack or spread out on paper towels.
  • Continue doing this until you have cut up all the dough.
  • Meanwhile have a large pot of water boiling on the stove, Have the water in a rolling boil and drop in the noodles, cook for 3-5 minutes and immediately drain & rinse with cold water, rinse well & drain.
  • Place noodles in a bowl.
  • Soup.
  • Heat saucepan, add oil, saute the garlic, onions and mushrooms approximately 4 minutes.
  • Add stock, soy, wasabi, honey & balsamic vinegar.
  • Bring to a boil, add zucchini, peas & peppers.
  • Simmer for not more than 5 minutes -- you want the vegetables to remain crisp.
  • To serve, place approximately 3/4 cup of noodles (they will be cold) in the bottom of each individual soup bowl and ladle in the soup distributing the vegetables evenly and enjoy.
  • For Vegetarian use only the Vegetable broth.
