2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 medium overripe bananas, (mashed with a fork (about 1 cup))
2 large eggs
1 cup buttermilk
1/2 cup canola oil (or your preferred cooking oil)
1 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350°F. Spray a 9 by 5 inch loaf pan with cooking spray and set aside.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt
  • In a large bowl, whisk together the mashed banana and the eggs. Add the buttermilk, oil, sugar, and vanilla and mix well.
  • Stir the dry ingredients into the wet ingredients until just combined. Do not over mix. Pour the batter into the prepared baking pan.
  • Bake for 1 hour to 1 hour and 10 minutes. When a toothpick is inserted into the center of the bread, it should come out with moist crumbs but with no raw batter on it.
  • Let the bread cool in the pan for 10 minutes. Remove the bread from the pan and place on a cooling rack to cool completely before slicing. Store covered in the refrigerator*.

1 1/3 cups sugar
1/2 cup butter, softened
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon baking powder
2 cups all-purpose flour
1 teaspoon vanilla
1 1/4 cups mashed ripe bananas
3/4 cup broken pecans

Steps:

  • Cream sugar and butter.
  • Add eggs, one at a time, mixing well after each addition - use a mixer.
  • Stir baking soda into buttermilk and add to mixture.
  • Sift baking powder with flour and blend into creamed mixture.
  • Add vanilla and banana and mix.
  • Stir in pecans.
  • Pour into greased and floured 9"x5" loaf pan. (May also use 4 mini loaf pans.).
  • Bake at 300 degrees F for about 1 1/2 hours or until loaf tests done with a toothpick. (Bake for 50-60 minutes for mini loaves.).
  • Cool for 20-30 minutes before removing from pan.

3 very ripe bananas (about 1 1/2 c. mashed)
1/4 c. buttermilk
1 1/2 c. all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/8 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/2 c. (1 stick) butter, softened
3/4 c. light brown sugar
2 eggs
1/2 tsp. vanilla extract
1 c. chopped pecans

Steps:

  • In a small bowl, mash bananas with a fork. Mash in buttermilk; set aside.
  • Place softened butter in a large bowl. With an electric mixer, beat butter until smooth. Add brown sugar and beat until light and fluffy.
  • Add eggs, one at a time, beating briefly after each addition. Mix in vanilla.
  • In a separate bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Alternately add the flour mixture and mashed banana to the butter-brown sugar mixture, beating after each addition just until incorporated.
  • Fold in chopped pecans.
  • Lightly grease a loaf pan. Pour batter into prepared pan. Bake at 350 degrees for 1 hour, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes. Remove loaf from pan and cool completely before slicing.
  • Substitute chopped walnuts or other nuts, if you'd prefer. Or omit nuts altogether if you're not a fan.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Steps:

  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
  • Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
