CHICKEN AND SQUASH WILD RICE CASSEROLE

This Chicken and Squash Wild Rice Casserole is the perfect blend of seasonal flavors you need on your table this fall and winter!

1 cup dry unseasoned wild rice blend
2 ½ tablespoons olive oil (divided)
1 ½ lbs boneless skinless chicken breasts (chopped into bite-size pieces)
1 medium onion (diced)
1 large rib of celery (diced)
20 oz peeled and cubed butternut squash (cut into ½" cubes)
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
½ teaspoon dried marjoram
2/3 cup fresh cranberries
¼ cup reduced sodium fat free chicken broth
2 oz freshly finely shredded parmesan cheese (divided)

Steps:

  • Cook the rice in water or broth according to package instructions (I used a rice cooker) and set aside.
  • Pre-heat the oven to 350 degrees. Lightly mist a 9x13 baking dish with cooking spray and set aside.
  • Drizzle 1 ½ teaspoons of olive oil in a large saute pan or deep skillet and bring over medium-high heat. When hot, add the chopped chicken and sprinkle with a bit of salt and pepper. Stir to coat and cook, stirring occasionally, until the chicken pieces are cooked through. Use a slotted spoon to remove the chicken to a side plate and set aside.
  • Add the remaining tablespoon of olive oil to the pan and reduce the heat to medium. When the oil is hot, add the onions, celery, butternut squash, salt and pepper and stir together. Cook, stirring occasionally, for a few minutes until the onions begin to soften. Cover the pan and continue to cook for around 8 minutes, stirring occasionally, until the squash is mostly tender.
  • Uncover the pan and stir in the cooked rice, reserved chicken, thyme, marjoram, cranberries, broth and half of the shredded parmesan until combined. Transfer the mixture to a baking dish and spread out evenly. Sprinkle the remaining parmesan cheese over the top and bake for 25 minutes.

1 cup wild and brown rice blend (uncooked )
1 ½ pounds boneless, skinless chicken thighs (trimmed of excess fat )
4 tablespoons olive oil (divided )
½ teaspoon kosher salt (divided )
½ teaspoon ground black pepper (divided )
1 small butternut squash ((about 1 ½ pounds) )
1 medium yellow onion (cut into ¼" dice (about 1 ½ cups) )
1 tablespoon fresh thyme (chopped, plus additional for garnish )
¾ cup dried cranberries
½ cup parmesan cheese (shredded, divided )
½ cup pecans or walnuts (roughly chopped )

Steps:

  • Place a rack in the center of your oven and preheat oven to 425°F.
  • Cook the rice according to the package instructions. Drain off any excess cooking liquid and set aside (you should have about 3 cooked cups).
  • Lay a large piece of aluminum foil or parchment paper in the bottom of a 9×13 baking dish. Arrange chicken thighs in a single layer on top, tucking the loose side portion of each thigh underneath. Drizzle with 2 tablespoons of the oil. Sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper.
  • Bake until the chicken thighs reach 165°F, about 20 minutes. Immediately transfer from the dish to a plate and cover. Let rest 10 minutes. Reduce the oven temperature to 350°F. Discard the foil or parchment and keep the pan handy.
  • While the chicken cooks, peel the butternut squash and trim off the top and bottom ends. Cut the neck away from the round base, then stand the base up on its flat end and cut it in half from top to bottom. Scoop out the seeds and discard. Cut the squash (both base and neck) into ½" cubes (you should have about 4 cups cubes).
  • In a large, deep skillet with a tight-fitting lid, heat the remaining 2 tablespoons oil over medium heat. Add squash, onion, and remaining ¼ teaspoon salt and ¼ teaspoon pepper. Sauté until the onion begins to soften, about 2 minutes. Cover and cook, stirring occasionally, until the squash is tender but still retains some chew, 6 to 8 minutes.
  • Once the chicken has rested, cut it into bite-sized pieces. Add it to the pan with the squash, then add thyme, cranberries, ¼ cup of the Parmesan, and rice. Stir to combine.
  • Lightly coat with nonstick spray the same 9×13 dish you used to bake the chicken (no need to wash it in between). With a large spoon, scoop the squash and rice mixture into the dish, spreading it into an even layer.
  • Bake for 15 minutes, then remove the casserole from the oven and sprinkle nuts and remaining ¼ cup Parmesan on top. Bake 8 to 10 additional minutes, until cheese is melted and nuts are toasted and crisp. Sprinkle with additional chopped fresh thyme and serve warm.

1 cup uncooked wild rice blend (3 cups cooked)
4 tablespoons olive oil (divided)
1 1/4 pounds boneless skinless chicken thighs (cut into bite-sized pieces)
1 medium yellow onion (diced)
1 small butternut squash (about 1 1/2 pounds, peeled and cut into 1/2-inch pieces (about 5 cups cubes))
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh thyme (plus additional for garnish)
3/4 cup dried cranberries
1/2 cup freshly grated Parmesan cheese (divided (about 2 ounces))

Steps:

  • Cook the rice according to package directions. Drain off any excess cooking liquid and set aside.
  • Preheat your oven to 350 degrees F. Lightly coat a 9x13-inch baking dish with cooking spray and set aside.
  • In a large, deep skillet, heat 2 tablespoons olive oil over medium heat. Add the diced chicken and sauté until the chicken is cooked through and no longer pink on the inside, about 6 minutes. Remove to a paper towel-lined plate and set aside.
  • With a paper towel, carefully wipe the skillet clean. Heat the remaining 2 tablespoons olive oil over medium. Add the diced squash, onions, salt, and pepper. Sauté until the onion begins to soften, about 2 minutes. Cover and cook, stirring occasionally, until the squash is tender but still retains some chew, about 6-8 minutes. Stir in the thyme, cranberries, reserved chicken, rice, and 1/4 cup Parmesan.
  • Transfer the mixture to the prepared baking dish. Bake in the oven for 20 minutes, then remove from the oven and sprinkle with the remaining 1/4 cup Parmesan cheese. Bake 5 additional minutes, until the cheese melts. Sprinkle with additional chopped fresh thyme and serve warm.

1 butternut squash
3 cups chicken broth
1 cup water
1 tablespoon chopped fresh sage or 1 teaspoon dried rubbed sage
2 teaspoons olive oil, divided
1 lb mild sausage, crumbled or sliced (I prefer Aidell's brand chicken and apple sausage)
1 cup diced onion
1 small sweet apple, diced (gala, pink lady, or golden delicious, for example)
2 garlic cloves, minced
1 cup uncooked arborio rice or 1 cup other short-grain rice
1/4 cup dry white wine
1 teaspoon chopped fresh thyme
cooking spray
1/2 cup grated fresh parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place squash on a baking sheet and bake for 30 minutes or until tender. After allowing squash to cool, cut it in half lengthwise, seed, quarter and peel it. Then cut it into 1/2-inch cubes and set aside.
  • Increase oven temperature to 400 degrees.
  • In a medium saucepan over low heat, bring broth, water, and sage to a simmer without allowing it to come to a boil.
  • In a large nonstick skillet or wok, heat 1 teaspoon of the olive oil over medium-high heat and brown the sausage; set aside.
  • In the same skillet, saute onion in remaining olive oil over medium-high heat until tender.
  • Add the apple and garlic, and saute for two minutes.
  • Add the rice, and saute for an additional minute.
  • Stir in the sausage, squash, broth mixture, wine, chopped thyme, salt, and pepper, and cook for 5 minutes, stirring occasionally.
  • Place the casserole mixture in a 13 x 9-inch baking dish coated with cooking spray.
  • Bake at 400 degrees for 30 minutes.
  • Remove casserole from oven, stir mixture gently, and sprinkle with cheese.
  • Return to oven and bake for an additional five minutes, or until cheese is melted and bubbly.
  • Allow to cool for ten minutes before serving.
