Steps:
- Preheat oven to 325 degrees. Butter two 5-by-9-inch loaf pans. Combine all-purpose flour and salt in a bowl.
- Cream butter and sugar with a mixer on high speed until pale and fluffy, for 8 minutes. Scrape down sides of bowl. Reduce speed to medium, and add vanilla extract.
- Lightly beat eggs, and add to mixer bowl in 4 additions, mixing thoroughly after each and scraping down sides. Reduce speed to low, and add flour mixture in 4 additions, mixing until just incorporated. Divide batter between pans. Tap on counter to distribute; smooth tops.
- Bake until a tester inserted into center of each cake comes out clean, about 65 minutes. Let cool in pans on a wire rack for 30 minutes. Remove from pans, and let cool completely on wire rack.
CLASSIC POUND CAKE
A very tender, simple version of this old classic. Serve it plain, with a dusting of powdered sugar, berries and icecream. Just about anything goes! Once you get the hang of it double this recipe and bake it in a bundt pan. (same cooking temp/time)

Steps:
- Set oven rack to center position and preheat to 325 degrees f.
- Grease a standard 9x5x3 metal loaf pan with crisco or softened butter-- dust with flour.
- Sift flour and salt into a medium bowl and set aside.
- Place butter in your mixing bowl and beat until smooth, creamy and light colored-- 30 seconds on a stand mixer, 60 seconds by hand.
- Gradually add sugar and beat until butter is very white and fluffy.
- About 3 minutes on your stand mixer, 5 mins by hand.
- It's critical that everything is at room temperature at this point, feel the outside of the mixing bowl-- if it's too cool then allow it to sit until it reaches room temperature.
- Add the whole eggs, one at a time and beat for 20 seconds after each addition.
- The mixture should be dull and smooth at this point.
- If it appears grainy and/or curdled then the temperature is probably too cold for the eggs to combine properly with the butter.
- Allow it to warm then rebeat for a few seconds.
- This is critical for this cake as there is no chemical levener and having the eggs and butter properly mixed is the only thing that will give this cake structure and allow it to rise.
- DO NOT OVERBEAT, It will make the cake tough.
- Add vanilla extract and beat for a few more seconds.
- Sift the flour in three equal parts into the butter/sugar/egg mixture, folding gently into the after each addition until all the flour has been incorporated and the batter is well mixed.
- Be sure to scrape up from the bottom of the bowl frequently.
- Pour batter into prepared pan and bake for 70 minutes, rotating 180 degrees halfway thru the baking process.
- In 70 minutes test the cake with a wooden toothpick.
- If it's not done continue to bake and check every 5 minutes.
- Cool on rack for 5 minutes before removing from pan.

Steps:
- Preheat the oven to 350°F and set an oven rack in the middle position. Lightly grease an 8-in x 4-in x 2½-inch loaf pan with butter or nonstick cooking spray. Dust with flour, shaking off any excess. (Alternatively, use a nonstick cooking spray with flour in it, such as Baker's Joy or Pam Baking Spray with Flour.)
- In a medium bowl, whisk together the milk, eggs, and vanilla until just combined.
- In the bowl of an electric mixer fitted with the paddle attachment (or with a hand mixer), place the flour, sugar, baking powder, and salt. Mix on low speed for about 30 seconds or until blended. Add the butter and half of the egg mixture. Mix on low speed until the dry ingredients are moistened. Increase the mixer speed to medium (high speed if using a hand mixer) and beat for one minute. Scrape down the sides of the bowl. Add the remaining egg mixture, in 2 separate additions, beating about 30 seconds after each addition to combine. Do not over-mix. (The batter may have a slightly curdled or grainy appearance -- that's okay.)
- Scrape the batter into the prepared pan and smooth the top with an offset spatula or the back of a spoon. Bake for 50 to 55 minutes, or until the cake is golden brown and a thin wooden skewer or toothpick inserted into the center of the cake comes out clean.
- Place the cake on a wire rack to cool for about 10 minutes. Then remove the cake from the pan and cool completely on a wire rack. Wrap the cooled cake in plastic wrap or store in a large sealable plastic bag.
- The wrapped pound cake will keep for several days at room temperature, for one week when refrigerated.
- Freezer-Friendly Instructions: The cake can be frozen for up to 3 months. After it is completely cooled, double-wrap it securely with aluminum foil or plastic freezer wrap, or place it in a heavy-duty freezer bag. Thaw overnight on the countertop before serving.

STRAWBERRY CHEESECAKE-STUFFED POUND CAKE RECIPE BY TASTY
Here's what you need: pound cake, cream cheese, powdered sugar, lemon zest, strawberry

Steps:
- Cut the center out of the pound cake, leaving a half-inch border on the bottom and along each side.
- In a medium bowl, use a hand mixer to beat together the cream cheese, powdered sugar, and lemon zest until the mixture is smooth.
- Add the strawberries and beat until the mixture has turned a light pink color but there are still nice strawberry chunks.
- Pour the cream cheese mixture into the hollowed-out pound cake shell.
- Using the removed pieces of pound cake, crumble bits of cake on top of the cheesecake mixture to form a thick layer of crumbs. Refrigerate for at least 8 hours.
- Be careful when filling the pound cake and when transferring to the refrigerator. Cutting the border too thin may cause the sides to spread too far once the cheesecake mixture is added. You can simply place the pound cake on a plate or tray before filling to make the transfer to the refrigerator easier. Use something to prop up the sides in case they've bowed out too much, to prevent breaking. Once the filling has set in the fridge, it will hold its shape.
- Slice into 10 half-inch (1 cm) slices and serve.
- Enjoy!

- Cut out the middle of the pound cake. Make sure to leave at least half an inch at the bottom and on each side. (Crumble up the extract part of the cheesecake, and set aside about a half cup of crumble)
- Mix cream cheese, icing sugar, vanilla extract, and lemon zest until a smooth batter is formed. Gently fold in the raspberries – if you’re not delicate, you’ll end up juicing them and turning your batter pink (which you may actually, I don’t know. You do you, bestie!).
- Place the centre-less pound cake, in a baking tin to support its sides while you pour in the raspberry cheesecake batter. (If you don’t have something to support the pound cake’s sides, just be extra careful.)

- Use a paring knife to cut a rectangle in top of pound cake, leaving a 3/4-inch border; scoop out the center of pound cake down to about 1 inch from the bottom. Reserve 2 tablespoons of the center cake crumbs for the topping, and remainder for snacking.
- Chop 10 of the cookies into 1/4- to 1/2-inch pieces; set aside. Finely crush remaining 2 cookies, and stir together with reserved cake crumbs for topping.
- Beat together cream cheese, butter, and salt with an electric mixer until smooth and fluffy, about 3 minutes. Gradually beat in powdered sugar. Fold in chopped cookies (don’t overmix so the cream cheese mixture doesn’t get too dark). Fill cut-out center with cream cheese mixture; sprinkle with crushed cookie and crumb topping. Chill 2 to 4 hours. Slice and serve.
