My coconut bars are an American version of a Filipino coconut cake called bibingka. These are a crispier, sweeter take on the Christmas tradition I grew up with. —Denise Nyland, Panama City, Florida

2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

A friend of mine got this recipe from her classes cake bake sale. These bars are super fast to make and the whole family will love 'em.

Number Of Ingredients 9

1 box yellow cake mix
1/2 cup butter (softened)
1 egg (beaten)
1 (8 ounce) package cream cheese (softened)
2 eggs
1 teaspoon vanilla
1 (1 lb) box powdered sugar
1/2 cup coconut
1/2 cup pecans (chopped)

Steps:

  • Combine box cake in a bowl with butter and egg and mix until crumbly.
  • Press mixture into a 13" x 9" glass baking pan.
  • Whisk together cream cheese, eggs, vanilla and powdered sugar.
  • Pour over cake mixture.
  • Sprinkle top with coconut and pecans.
  • Preheat oven to 350 degrees; bake for 35 minutes or until just brown on top.
  • Refridgerate before cutting into bars.

2 cups graham cracker crumbs (about 32 squares)
1/2 cup sugar
1/2 cup butter, melted
1 package (14 ounces) sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1 tablespoon peanut butter

Steps:

  • In a large bowl, combine the cracker crumbs, sugar and butter; press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 10 minutes. Combine coconut and milk; spread over crust. Bake 15 minutes longer. , In a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over top. Cool completely on a wire rack before cutting.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

  • In a bowl with an electric mixer cream the butter with the sugar and beat the mixture until it is light and fluffy. Add the peanut butter, beat the mixture until it is combined well, and beat in the egg, the vanilla, and the salt. Add the flour, beat the mixture until it is just combined, and stir in the coconut. Spread the mixture evenly in a buttered jelly-roll pan, 15 1/2 by 10 1/2 by 1 inches, sprinkle the peanuts over it, pressing them into the mixture lightly, and bake the mixture in the middle of a preheated 350°F. oven for 20 to 25 minutes, or until a tester comes out clean.
