ROASTED CABBAGE AND POTATOES IN THE CROCKPOT
This year I'm using this recipe to serve with corned beef. It's from ayearofslowcooking.com, and I'm adding a few carrots as well.

Steps:
- Wash vegetables.
- cut potatoes into 1 inch chunks.
- cut cabbage into wedges.
- throw veggies into the crockpot with the whole garlic cloves.
- add olive oil, salt, pepper, and balsamic vinegar.
- toss with hands to coat thoroughly.
- DO NOT ADD WATER.
- cook on high for 3 hours or low for 4-6 hours.
- The vegetables are done when the potatoes reach desired tenderness.
- The cabbage will get a little carmelized and crispy around the edges where they touch the crock walls. That's okay--it tastes good!

SLOW-COOKER CABBAGE, POTATOES AND BACON
You don't have to be Irish to enjoy cabbage with potatoes, and while this is a great dish for St. Patrick's Day, you can also enjoy it year-round. One of the best ways to appreciate cabbage and potatoes is straight from the slow cooker, after they've had a long simmer with bacon and Irish beer, of course. During the cooking process, the smoky, salty and umami bacon flavors melt into the cabbage and potatoes, and everything comes out perfectly cooked.

- Spray a large slow-cooker crock with nonstick cooking spray. Place the cabbage in the bottom, then add the onion and toss gently. Add the potatoes, caraway seeds, 3/4 teaspoon salt and 1/2 teaspoon pepper. Sprinkle the potatoes with bacon and pour the beer over the potatoes and bacon.
- Cook until the potatoes are tender, 3 hours on the high setting or 6 to 7 hours on the low setting. Stir gently before serving.

SLOW COOKER RED CABBAGE
Dig out your slow cooker for this delicious red cabbage. Braised cabbage makes the perfect side dish for a festive lunch or roast dinner

- Heat your slow cooker to Low. Peel the outer leaves from the cabbage and discard. Quarter the cabbage, removing the tough stem, then thinly slice. Arrange a layer of the cabbage on the bottom of your slow cooker, then top with some of the onions, apples, zest, mixed spice, sugar and some seasoning. Continue to create layers until you have used up these ingredients. Season.
- Pour over the vinegar and cider and dot the butter on top. Cover with a lid and cook for 4-5 hrs until tender. Will keep in the fridge, covered, for up to three days or in the freezer for up to two months. Reheat in a pan or in the microwave.

SLOW COOKER CORNED BEEF, CABBAGE, AND POTATOES

- Place potatoes in the bottom of a large slow cooker and cover with water. Rub corned beef with onion flakes, pickling spice, peppercorns, and caraway seeds. Add to the slow cooker. Add cabbage and juniper berries on top; do not worry if the liquid does not cover the cabbage, it will steam and more liquid will come out of the meat to add to the broth.
- Cover and cook on Low until tender, 8 to 12 hours. Serve.

SMASHED RED POTATOES WITH CABBAGE
I set out to make a traditional Irish colcannon here, a mixture of mashed potatoes with cabbage and scallions. But I decided to go with a lighter carbohydrate load, using red boiling potatoes rather than starchier Idaho potatoes. Instead of making a purée of them, after cooking the potatoes in their skins I quarter them and, skin and all, smash them in a hot pan with a potato masher or the back of a spoon.

- Cover the potatoes with water in a saucepan, add about 1/2 teaspoon of salt and bring to a boil. Reduce the heat to medium, cover partially and cook until tender all the way through when pierced with a knife, about 30 minutes. Do not drain the water, but using a skimmer or a slotted spoon, transfer the potatoes from the pot to a bowl. Cover tightly and allow to sit for five to 10 minutes. Then, using a towel to hold the potatoes steady (because they're still hot), cut them into quarters.
- Meanwhile, bring the water back to a boil, add more salt if desired and add the cabbage. Cook uncovered until tender, five to six minutes. Drain.
- Heat the butter or oil over medium heat in a large, heavy nonstick skillet, and add the scallions. Cook, stirring, until they soften, about three minutes. Add the potatoes. Smash the potatoes to a coarse mash in the pan with a potato masher or the back of your spoon. Stir in the hot milk, and mix together well until the potatoes have absorbed all the milk. Stir in the cabbage, and season generously with salt and pepper. Add the chives, stir together until heated through and serve.

SLOW COOKER PORK AND RED CABBAGE

Steps:
- Season pork with 1/4 tsp of the salt and pepper.
- Add the cabbage to a 6 qt slow cooker.
- Top with potatoes; spread apple cubes on top in an even layer.
- Add pork.
- In a small bowl, whisk vinegar, wine, sugar, caraway seeds and allspice.
- Pour around meat.
- Cover and cook on hight heat for 4 1/2 hours or on low heat for 7 hours.
- Uncover cooker and transfer pork to a cutting board.
- Cover loosely with foil and let rest 5 minutes.
- Season cabbage mixture with remaining 1/2 tsp salt.
- Transfer potatoes and cabbage mixture to a platter. Cut pork into thick slices; spread on top of cabbage.
- Serve warm, drizzle with cooking liquid.
